00:00Hi, my name is Holly Alton and I'm a food and drink writer for National World.

00:04Today, I'm going to be sharing with you top tips to pull off Christmas dinner like a pro,

00:09courtesy of some incredible chefs dotted around the country.

00:13Now, I am hosting Christmas dinner in my new house this year for the very first time

00:17and I am a bag of nerves because I have no idea what to do.

00:21However, some chefs have got in touch and they are sharing some excellent, unique tips

00:26to make a perfect Christmas dinner.

00:29Now, the most important part of any Christmas dinner meal is the meat

00:34and most of us across the UK tend to opt for a turkey.

00:37Now, Elliot Day, co-founder of Field Goods, has shared that brining a turkey

00:42could be the best thing to do for it.

00:44Now, Elliot has shared what you need to make the perfect turkey brine,

00:48which includes water, sugar, beer, salt, smoked bacon, orange and cloves.

00:55And brining your turkey with this sort of ingredients will make it taste

01:00absolutely delicious and very juicy.

01:02And although the turkey may be the main star of the Christmas dinner,

01:05you also have to take into consideration sides and gravies.

01:09Benjamin Forever, Y. Castell, who is the head chef at Pavilion London,

01:13has shared what he does to make a really rich gravy

01:16and that is adding in a square or two of dark chocolate alongside red wine

01:21to give a real rich body flavour.

01:23And while on Christmas Day we may be looking forward to the Christmas dinner,

01:26you still want to enjoy the rest of the festivities of the day,

01:29playing games with your family, unwrapping presents,

01:32maybe listening to some exciting Christmas music,

01:34so you want as much time you can possibly have.

01:37And another head chef has shared a great time-saving tip.

01:41Theo Randall, chef patron at The Intercontinental,

01:44has suggested that you do as much prep as you can the day before Christmas Day

01:49so that when it comes to the actual day itself,

01:51you're able to just chuck it all in and have a lovely Christmas dinner.

01:55And Adam Bateman, executive chef at Strait's Kitchen,

01:58has suggested that you buy a meat probe and has described it as game-changing.

02:03And lastly, the leftovers.

02:05So we tend to buy a lot of ingredients to make sure we have enough

02:09to go around all of the family this Christmas,

02:11but we're usually left with quite a few leftovers.

02:14Pavel Baranov, head chef at UBA,

02:17has said try something a little bit different with your leftovers.

02:20Maybe making a nice, refreshing salad.

02:22After the Christmas period, we've consumed so much food,

02:25we want to get a little bit healthier once it has passed.

02:28So turning these leftovers into a nice sort of turkey salad

02:32could be a really great way to utilise those leftovers.
