00:10Kuya Kim, this is one of their main dishes.

00:13The ingredients and the process are simple, but there's something special about it.

00:17It's panucha.

00:18Oh, panucha.

00:19That's right.

00:21You should know my story.

00:23Oh!

00:28If you combine the sweetness of peanuts and the sweetness of sugar,

00:33you can make a panucha that will make the town of Batangas proud.

00:46In front of the nearby tables and hot towels,

00:49the workers in Taal Batangas are busy making their panucha.

00:55Bet, who is 75 years old, has been in the business for more than 30 years.

00:59In 1990, she and her husband, Leopoldo, started making panucha.

01:05At first, my husband was just a vendor.

01:10We couldn't rely on him as a vendor.

01:13We needed to earn a lot.

01:16When our customers started increasing,

01:20and I started seeing suppliers,

01:22we started making our own panucha.

01:25Bet is proud of their panucha

01:28because not only does the taste of their panucha change,

01:31their baskagan or molde is also made of wood

01:34that has different sizes.

01:36Even the small drumsticks that are used to spread the panucha are also made of wood.

01:41They buy these tools and they last for 10 years.

01:45We can't afford to buy gasol,

01:53In the book, which tells the story of the historian and professor Jaime Salvador Corpuz,

01:59it is said that the panucha of Taal Batangas is one of the versions of the panucha of Samani.

02:05Before the arrival of the Americans,

02:07the making of the panucha of Samani was simpler

02:09because they just combined the mani and the coconut milk.

02:13First, the Americans taught them how to add sugar

02:16and how to shape it into a circle.

02:19The panucha is one of the delicacies of the so-called El Pasubat of Taal Batangas.

02:25We have what we call El Pasubat.

02:28These are the specialty products of Taal.

02:31This is E for empanada,

02:34L for longganisa,

02:36P for panucha,

02:38S for suman,

02:40B for balisong, barong,

02:42and then T for tapa.

02:44In making the panucha,

02:46first, they will dissolve it in water and boil the red sugar.

02:49Then, they will pour the mani.

02:51They will boil the mani until it's cooked.

02:53After 30 minutes,

02:55they will set it aside before pouring it in a basin and spreading it.

02:59When the panucha has cooled and formed,

03:01they will remove it from the mold and wrap it.

03:05Depending on the quantity,

03:07the panucha can cost from P10 to P35.

03:14It's not too sweet.

03:16It's just right. It's balanced.

03:18It's delicious.

03:19It's just right in taste.

03:21And it has a lot of latinas.

03:24Even though Beth and her husband are old,
