Soy sauce is a versatile ingredient. It can be used as a dip, a marinade, or poured directly over food. But making this simple condiment takes a lot of time and patience. We went to Yu Ding Shing, which has been making soy sauce by hand for three generations in Taiwan, to see how it’s made.
