Quinoa Khichdi Hotchpotch - One Pot Meal

Quinoa Vegetable Hotchpotch / Khichdi is a hearty meal.
INGREDIENTS:
1/2 cup Quinoa
1/2 cup Split Mong (Green moong Dal)
1/4 cup Peas & carrots
1/4 cup Diced potato
1/8 cup Chopped onions
1 teaspoon Ginger garlic paste (optional)
1/2 teaspoon Turmeric powder
1 teaspoon Chili Powder
1/2 teaspoon Cumin seeds
1 tablespoon oil
Salt to taste
1 Cinnamon stick, Bay leaf, 3- Cloves , 4 Pepper Corn

PREPARATION:
1. Wash Dal. In a pot, heat oil & add Cumin seeds, Bay leaf,
Cinnamon stick, Cloves & Black pepper corn.
2. As soon as Cumin seeds start spluttering, add onions, ginger garlic
paste (optional), potatoes & stir.
3. Then add Peas & carrots, turmeric, chilly powder, salt & water.
4. As soon as it starts boiling, add dal & rice & Boil for about 10-15
minutes or when dal, rice & vegetables are cooked. Serve!
