Named after Queen Victoria, this quintessentially British bake Victoria Sponge Cake is simplicity at it’s best; sweet strawberry jam and pillowy soft cream, sandwiched between two light sponge cakes and a dusting of icing sugar.
A Victoria Sponge was the favorite sponge cake of Queen Victoria and has since become a tried-and-true recipe for tea-time sponge cakes.

Ingredients:
For Sponge Base
200 gms All Purpose Flour
150 gms Caster Sugar
40 gms Corn Flour
1 tsp Baking Powder
200 ml Milk
3 tbsp Yogurt
50 gms Butter (melted)
1/2 Lemon Juice
1/2 tsp Baking Soda

For Strawberry Jam
200 gms Strawberry (frozen)
50-70 gms Sugar
1/2 Lemon Juice

Whipped Cake
Icing Sugar

Method: Let's start with making the Sponge Base for which add All Purpose Flour in the bowl with Caster Sugar, Corn Flour, Baking Powder. Next, mix it all together properly then add Milk, Yogurt, Butter (melted), Lemon Juice, Baking Soda again mix the batter nicely.
Next, take out the batter into two 6inch round (as shown in the video) equally then bake this 180-degree Celsius for about 25 minutes. Now in the meantime let's make Strawberry Jam for which add Strawberry (frozen), Sugar (sprinkle it on top of it) then switch on the flame and cook them nicely. Next, switch off the flame and add Lemon Juice then let the Jam cool down completely.
Next, as the Cake is baked properly unmold the cake and trim the top using a serrated knife (as shown in the video) and put the cake on a cake stand.
Next, let's assemble the Victoria Sponge Cake by placing 2 tbsp Jam on the Cake and spread it across the cake then add Whipped Cake using the Pipping Bag with round nozzle doing the (as shown in the video).
Now, take the Sponge and place it upside down, then sprinkle Icing Sugar
