Learn how to make Black Pav Bhaji at home with Chef Varun Inamdar on Rajshri Food.

Black Pav Bhaji is a fancy version of the famous street food Pav Bhaji. What makes this difference is the colour and a slight change in taste which comes from the roasted coconut and flower stone. Do try it at home and share your feedback in the comments below.

Ingredients:
For Vegetable Mash
250 gms Potatoes, chopped
250 gms Tomatoes, chopped
50 gms Green Peas
Water
Salt

Black Masala
2 bay leaves
1 tsp Fennel seeds
1 Black Cardamom
1 tsp Black Peppercorns
1/2 tsp Cloves
Cinnamon stick
2 Stone Flowers
1 tbsp Coriander powder
1 tsp Cumin powder
1 tsp Amchur powder
1/2 Dry Coconut
50 gms Butter
1 tbsp Garlic, crushed
1/2 cup Onion, chopped
1 Capsicum, chopped
Black Masala
1 tbsp Coriander leaves

Method of preparation:
For Vegetable Mash
In a wok add potatoes, tomatoes, green peas, water and let it boil.
Once the vegetables are cooked, mash the vegetables and add black masala and water.
Add salt and cook it on high flame.
Once the mixture comes to a boil our Black Pav Bhaji is ready.

Black Masala
In a pan, roast all the spices on medium flame.
Transfer it to a bowl and let it cool.
Roast the dry coconut on high flame.
Allow the coconut to cool down, cut it into pieces and add it into the mixing jar with the spice mix.
Grind it into a fine powder.
In a pan, add butter, garlic, onion and saute it n high flame till the onions turn translucent.
Add capsicum, black masala, coriander leaves, mix well and our black masala is ready.

Assembling:
Pan sear the pav in butter, serve it with black bhaji, butter and coriander.
