Ingredients:- For Chole:- Chickpeas (soaked overnight) Ghee Cumin Seeds Coriander Seeds Chopped Onions Sliced Green Chilli Ginger-Garlic Paste (2 parts ginger-1 part garlic) Cumin Powder Coriander Powder Red Chilli Powder Turmeric Powder Salt to taste Garam Masala (Roasted and Ground Bay Leaf, Cinammon, Cumin Seeds, Coriander Seeds, Cloves, Red Chilli) Chopped Tomatoes Water Tea Tamarind Paste
For Bhature:- Plain Flour Yoghurt Sugar Salt
For Garnish:- Coriander Leaves Onion Rings A Lemon Wedge
Method:- Chole:- Pressure cook chickpeas until 4-5 whistles are blown. In a pan add ghee, cumin, coriander seeds, chopped onions, green chillies, ginger-garlic paste, cumin powder, coriander powder, red chilli powder, turmeric powder, salt, garam masala, tomatoes and water and let it all cook. Then add tea, tamarind paste and let it cook. Now add the chick peas to the masala with the water and cook on high heat till water is reduced.
Bhature:- In a bowl, mix plain flower, yoghurt, sugar, salt, baking powder, milk and knead a dough. Cover the bowl with a damp cloth and keep overnight. Roll out the dough with a rolling pin and deep fry the bhatures.
Garnish the Chole Masala with coriander, onion and lemon.
