Niki’s High Protein Superfood Cookies Recipe
Makes about 26 Prep 5 mins CookingTime 15 mins
Ingredients
1 cup 180 Nutrition Chocolate Protein Powder
2 tbs wholemeal Self Raising Flour
1/2 cup finely chopped natural almonds
1/2 cup finely chopped natural walnuts
1 cup mashed bananas
1 cup fresh dates, pitted and finely chopped
2 tsp vanilla essence
Bakeware
2 oven trays, lined with baking paper
Method
Preheat oven 180°C, 350° F or Gas 4. In a large bowl combine the protein powder, flour, almonds and walnuts. Next add the bananas, dates and vanilla essence and mix well till the mixture is moist and sticky. Now fill a tablespoon measure with the mixture, then roll it into balls. Keep a bowl with a little water handy to dip your fingers into, this will help you roll the cookies. Roll the cookies into balls and flatten slightly, placing them onto your lined baking trays. Bake for about 15 minutes, cool on a wire rack and enjoy.
Tips
You can also try the Coconut flavored 180 Nutrition Protein Powder instead of the chocolate flavor. These cookies are softer than regular cookies and are best kept in an airtight container and in warmer weather in the refrigerator (if they last that long).
