00:00Have you read of supersaturated solutions?

00:02If you take water and start adding sugar to it,

00:05the sugar fills up the intermolecular spaces in the water.

00:10That's where the sugar goes.

00:12And the intermolecular spaces are limited.

00:14So after a point, no more sugar will dissolve in the water.

00:18That is called saturation.

00:19You start boiling the water.

00:21You start boiling the sugar solution.

00:23And when you boil the water, what happens?

00:25The intermolecular spaces increase.

00:27Now the water can accommodate more sugar.

00:30You add more sugar.

00:31Now you let the whole thing cool down.

00:33What would you expect?

00:34You would expect that now that the solution has cooled down,

00:38so the intermolecular spaces have reduced.

00:40So there would be no space for the sugar.

00:42And therefore, sugar crystals should appear.

00:46Sugar should now move out from the dissolved state to the undissolved state.

00:52And you should be able to see crystals.

00:53That does not happen.

00:55This is called supersaturation.

00:56This is supersaturation.

00:58Something that should have happened has not happened.

01:01Even though all the right conditions are there.

01:04But the thing is not happening.

01:05Now, you have the supersaturated solution in front of you.

01:08Go close to it and just jerk it a little like this.

01:12And immediately, the whole thing crystallizes.

01:17Immediately.

01:18You see beautiful crystals appearing.

01:20After you have done everything that you can,

01:23grace just comes to provide a little bit of junk.

01:26Grace actually does nothing.

01:28You do everything.

01:29But grace is needed to enable you to have the final push.
