00:51pictures I don't even know how we found it but like people say I don't have to grind an hour and a
00:56half traffic rain to get here and there it is that is what I drove for in Chicago which is hard to find
01:02like a good looking pizza now the owner's not here I just met his wife along with the guy I don't even
01:10know that guy's name we met the most eclectic interesting human you're ever gonna find
01:15I'm a copy roasting company okay I rose copy in here and uh ghost is my technique I have very first
01:25spray paint technique you know so uh yeah I got like leftover jerseys you know that I'm selling if you
01:35need to uh DJ DJ set up I make sure bring one of my turntables uh home to fix it I'm very passionate
01:43about this coffee coffee roasting I work with small producers like micro lots you know this is like
01:54like the best coffee this is comes from Colombia vacuum seal and 10 kilos yeah I'm sure you got
02:03custom to that no I don't that's a rumor people said I was a coke head for years I'm not yeah
02:10legos legos what there's a little everything in here okay yeah so we do cars and coffee like a big
02:23huge event we get like close to 500 people they run through like four hours so like there's like drag
02:28race cars too drag race cars yeah yeah this place in here it's a coffee shop it's a memorabilia store
02:36it's a graffiti store it's a DJ parlor it's everything and this guy said he goes when you're
02:43in here you're in my brain not too many places like this that I've been in very unusual it is
02:48neglected in a good way yes you know so I always tell people you're kind of like inside my head you
02:53know because that's kind of I believe that's a hell of a trip and you are literally in his brain
02:58I root for guys like that quit his CVS job and like just built this place out my little story I used to
03:06work for Walgreens for 17 years you know whole corporate thing you become a number we can have
03:11pallet heads yeah yeah yeah I told my boss off one time you know and then three days later after 17
03:16years you know like I can so I tried to do something on my own and coffee roasting more was more like a
03:22hobby to me yep started doesn't it start fixing with that so everything you see here where you see
03:28these white cuts or walls here everywhere so I start cutting this place apart fixing everything and then you
03:35you know like around 2020 when COVID happened you know we had to shut down I was the only employee
03:40so I had to like control anybody I used that time so I worked literally 18 months straight
03:4912 to 18 hours every single day to transform this place I believe it by hand then found the pizza guy
03:56and I think we may have good pizza here look at that undercarriage
04:00one bite everyone knows the rules I don't even know where we are do you uh Lennox sale or new Lennox

04:15I was getting worried the 90 minute drive wouldn't be worth it this is very good great Chicago pizza

04:47honestly it's up there and this isn't you can't really say this downtown Chicago
04:51Zaza's is probably my favorite in Chicago downtown they do pizza fest
04:56pizza amici which we recently did that's tavern style um bungalow tavern style frank and vinnie's
05:04tavern style but non-tavern this I would be putting probably
05:14seven nine real close to an eight one for Chicago mid eight like for Chicago style for me
05:22this is a mid eight this would be bar none one of the best pizzas in the city the overall experience
05:31outer space like I'm not going to give it like I would I love this guy I love the place I love the
05:38story of the pizza guy quitting his corporate job a must hit and this is definitely an eight Chicago pizza
05:44no doubt about it um so yeah worth the trip I I assume it's already well known in these parts but
05:53definitely worth it uh all the way around buy it buy a Carlton Fisk White Sox jersey and get some
05:59great pizza while you're at it and have great coffee while you're at it you'll
06:02shit yourself but still worth it there you go that's our view
06:07I don't know if that was an eight one what was it it's very good
06:13it's also like you can't find pizza like this downtown Chicago really not at all
06:21there's one place I'm aware of that has pizza that's like similar style that's good uh
06:25Zaza's but other than that that's why we drove an hour and a half nice it's worth it yeah very very
06:31good this yeah this doesn't exist in downtown oh wow it is he's gonna he's the only pizza we'll eat
06:39yeah yes very good well hopefully great business place is great passion you know from him uh there's a
06:46story behind how he named his pizza uh so pizza di tarpala which is a butterfly so it's gonna be nice
06:57story is his mom she passed away uh and she always told him that she's gonna come back as a butterfly
07:05so he actually renamed his pizza when he opened up after her because she taught him how to
07:12cook and make pizza you know great really good i was like shaky so you can't find this downtown
07:22yeah the new york side you got where you guys from Chicago suburbs so how'd you make this type of
07:28no one makes this type of pizza no he does this so that's the thing like he's done this
07:34forever okay we've been together 20 years he just likes to cook you know it started off in our garage
07:39where we would do like a pop-up and we would kind of do both coffee you know parts of coffee as a
07:43pop-up people liked it and for like a year and a half he was working full time and then like
07:49friday night up till 2 a.m prepping for saturday service yep how long would he was cooking
07:56oh god like a whole one pizza yeah yeah so then it got to the point where we're like it's really good
08:05he loves it it kind of made it so the way he wanted to make it and i'm like we have to make
08:09a decision like are we going to continue to make this like a lucrative hobby or are we going to do
08:14this for real and he's like i think i really want to do it and our kids were little at the time and i'm
08:19like well let's just do it i love that i'm a nurse i carry the health insurance and that was like my
08:27blue thing yeah yeah like we don't have to like realistically worry about that yeah like let's just do it
08:31i'm like you think we like the kids won't feel affected by it and he's like we're going to make
08:35it work and you know so far so good two years later so hopefully this is great and it's it's even
08:43better because you can't get it like it really is a hard pizza to get around here yeah and i don't like
08:49i chicago is not my favorite pizza city i've ever been in this is far more like what i like what most
08:54people like i actually yeah yeah i'm not the time the taverns there's a couple decent ones but this is
09:01and that's what he always says he doesn't try to like classify himself into one specific style
09:06he's like i just make what i like to eat yeah so i like it it's great good yeah score seven nine
09:16so it's right on a seven nine eight one scale any critiques what'd you think
09:21no i mean seven nine is a high score so yeah it's right it there's really no critiques
09:28i mean i like the way it was cooked i i don't have much to say on it like i said it's a chicago
09:34eight but i'm judging it versus like my favorite pieces of all time so seven nine is the highest score
09:39this is yeah this has been like such a life-changing thing for us i have no idea how we found out about
09:45i still we still don't know because we have the best the small community sorry i'm a little emotional
09:51like he literally we started from nothing he left we left everything and he just decided to do this
09:58because he's passionate about it so that is so huge i'm so proud of them um the small you're you're
10:04going to be the one your your reactions can get people in the store more than more than the actual
10:09pizza because people love it like shaking it take it's a huge risk in general yeah like the passion
10:15behind it like he's the best person he's the best dad he's good at what he does and it's like for
10:22for you to even come here regardless of what the score is for him is just it's life-changing
10:28well and it makes it all worth it you know what i mean i'm glad to hear it we were i was worried
10:32because it took us 90 minutes to get here i hope this place doesn't suck but even meeting you the
10:38whole story unbelievable but small business community the support around here dan like we
10:44found great staff it's like everything is just lined up for us and has worked out you know so good

12:33i love directly from them so anybody comes in here buys coffee supporting this small business they're
