00:36A Derbyshire baker has toasted the opposition to produce Britain's best loaf. Mio Ayatsu,

00:42who runs Artisan Kumusan Bakehouse in Matlock, spent an entire night perfecting her innovative

00:48lemon and earl grey loaf before leaving her Derbyshire home at 6am to attend the finals of

00:53the prestigious competition in Birmingham. However, the hard work paid off and judges praised Mio for

00:59the sensational combination of floral earl grey and refreshing lemon. Her brioche was not only

01:05crowned as the best loaf 2025, it also scooped first place in the innovation category. Mio,

01:12who baked 50 different versions of the bread before she was happy, said,

01:16lemon is acidic and the juice can make the dough hard. I wanted it to be as soft as a brioche.

01:22That's why I went through so many different versions, but it was worth it. The judges said it was the best loaf by far.

01:28Can you tell me a bit more about the loaf which won Britain's best loaf awards this year?

01:33This is lemon and earl grey loaf. So basically, this is a soft brioche dough and I mixed with

01:45earl grey tea and also italian peel, italian peel soaked in a lemon...

01:55Limoncello?

01:56Limoncello, so that smell fruity. And to make a little bit of an accent, I put some white chocolate inside too.

02:03And I flavoured this loaf with a lot of lemon juice and butter and sugar, so that's very stres and lemony.

02:16So combination of earl grey tea, the fragrance of earl grey tea and lemony flavour combined

02:23very good complement each other and make a lovely fragrant flavour.

02:29What was the hardest part of making this loaf?

02:32This most difficult bit is to make the dough softer, because I put a lot of lemon juice

02:38in this bread, meaning the dough becomes very, very harder and tight. That's why I make a lot

02:48of effort to make sure the dough is soft like a fluffy brioche loaf.

02:53We are at a Kumasan bakehouse today trying Britain's best loaf. So it's lemon and earl grey loaf,

03:02with some bits of sugar on top. So I'm just going to try some of this.

03:08Hope you like it.

03:10It is very fluffy as you can see.

03:12Yeah, that's a brioche, Japanese brioche.

03:16That's really lovely.

03:21You like it?

03:22Yeah, I love it. It's sort of very floral because of the earl grey.

03:26That's it.

03:27But it's also quite lemony and it's so soft, it basically melts in your mouth. It's amazing.

03:35That's Japanese technique, making the soft, fluffy bun.

03:40So it's sort of like infused with tea when you make it?

03:43Well, basically I put the tea leaves into the dough. That's why the fragrance is very

03:49strong and, you know, not overpulling but, you know, you can taste and smell of the fragrance

03:57of the tea.

03:58Yeah, it's really nice. I've never tried anything like this before but it's absolutely amazing.
