00:00To those people that believe that plant-based cooking is boring, I will say they haven't tried my food.

00:17I'm using, instead of regular wheat pasta, an organic brown rice and quinoa fusilli,

00:22an eggplant from my garden. And I love the fact that it's imperfect. We're gonna stir it a little

00:28bit just so that they don't get stuck with each other. After a few minutes, the pasta is ready,

00:33it's nicely cooked. This sauce has so many amazing and delicious nutrients that come

00:40from fresh garden basil.

00:48Here I go. So I think that you just need to explore a little more in the kitchen

00:54to discover that plant-based food is not only not boring, but really delicious.
