This is my mom's recipe.

This is something that I grew up enjoying at home

and it's sustainable.

So let's do this.

Traditionally, this curry is being made using the beef,

but today we're going to make it a little more healthier.

We're going to use chicken.

We have some carrots, tomatoes, some sweet pepper,

onions, some coriander or cilantro that's locally sourced,

an array of spices, and then we have some eggplants.

So eggplants are really delicious

and at the end of the day, super nutritious.

I do come from a culture that men are probably

not supposed to be in the kitchen,

but my parents saw this thing in me

and they were like, they felt like I'm a little bit special

and I would probably be the person

that would break the barriers.

When I was little, my mom says that my biggest,

biggest playground would definitely be the kitchen.

And I went ahead and followed my dream

and followed my heart and I'm still following my dream.

I'm still trying to be the best that I can be.

So let's get cooking.

What I'm going to do,

you want to make sure that your pan is super hot.

Go in with some olive oil

because olive oil is basically the healthiest option.

So the Swahili way, what we normally do,

we like to saute the onions until nice and golden.

Then you can hear that sizzle happening in there.

The way I learned from my mom is that

you don't want to use any tomato paste.

You just want to use as much fresh ingredients as possible.

To make my stew, I'm going to use a muiko.

This is basically a locally sourced wooden muiko

and the muiko is basically a spatula.

So it's a spatula in Swahili.

I've used this for the last 10 years

and that makes it even more sustainable.

Now, at this point, you can go in with your eggplants

that you just cut into some chunks.

It's an Arabic term that means wasting.

So right now, we already have a veggie kind of masala

You just need to add some spice and make it fun.

So we have a couple of spices here.

Swahili cuisine is a combination of flavors.

We're talking about a little bit of some Indian influence,

a little bit of some Middle Eastern influence.

We're going to go in with our chicken

and this is basically probably 150 grams of the chicken.

And this is boneless chicken, locally sourced.

So once it's almost cooked, we're going to take an onion

and we're going to use a little bit of an onion peel

and then we'll smoke it.

And thereafter, we're going to use the same onion

that we used as the garnish over the stew.
