Wash the pork and pat it dry with a paper towel. Use a fork or sharp knife to poke small holes all over the skin. Flip the pork over and make a few cuts on the meat side to help it absorb the seasoning.
Step 2: Marinate the pork
Mix five-spice powder, salt, sugar, pepper, and fish sauce and rub it onto the meat (avoid the skin). Apply a thin layer of baking powder or vinegar on the skin to help it crisp up. Let the pork dry in the refrigerator for 6-8 hours or overnight.
Step 3: Cooking
🔹 Oven-roasting method:
Preheat the oven to 200°C (392°F) and place the pork on a wire rack. Roast for 40-50 minutes until the skin becomes crispy and puffed.
🔹 Deep-frying method:
Heat oil in a pan and place the pork skin-side down first for about 10 minutes. Flip and continue frying until the meat is golden and crispy.
Step 4: Serving
Remove the pork from the oil, let it cool, and chop into bite-sized pieces. Serve with pickled vegetables, fresh herbs, and a side of fish sauce with garlic and chili.
