00:12We've got our executive chef, Ricardo Foster here. Last night, we got to sample some of the

00:17amazing food at this incredible thing that you guys put on for us. But obviously, we've been

00:21here for a few days. We've had the sushi at the Sand. We had the jerk chicken last night at the

00:27jerk shack. It was absolutely incredible. Can you talk to me about the different dining options

00:31you have here at Sandals South Coast? Well, good morning and good morning to all your listeners.

00:36As mentioned, the name is Chef Ricardo. Well, guess what? We are located in a unique location

00:43where we have a lot of farming take place in this area. So we try to utilize as much as possible

00:49the local farmers to create our cuisine or create the meal to support them, just to say.

00:57We have a total of 13 different food outlets. We try to, even though it's Jamaica, we try to go

01:03around the world to make sure that we can create something for every single person

01:09that step on our resort to have something to eat at home and away from home.

01:14That's incredible. Do you have one that stands out to you? I'm looking at Neptune's right now,

01:19obviously. We've got Jasmine's right behind us. Do you have one that stands out for you that you

01:22like? As the executive chef, all of them. They're all your babies, right?

01:26All of them are my babies. So if I pick one, I'll be cheating myself out of allowing you to enjoy

01:33all the cuisine. Well, the amazing thing about Sandals, obviously, is that it's all included.

01:38The great thing is and I tell people this all the time when I recommend going to Sandals or

01:42when you win your trip at BigNuttyAtOne.com is indulge yourself. We went to sushi one time,

01:48my wife and I, and we ordered everything on the menu because you can. That's one of the things you

01:52can do at Sandals if you want to, right? All you can eat. And guess what? I'm going to tell

01:56you a secret. I hope none of your listeners are listening to me, but everything is fat-free,

01:59cholesterol-free. I don't believe him for a second, but I'll believe it when I'm here at

02:04Sandals. That's for sure. You talk about incorporating some of the local flair here.

02:10The Jerkshack is especially that, obviously, here in Jamaica. Can you talk to me about the

02:14Jerkshack and the theme there and the idea behind it? Well, as you know, Jamaica is known for its

02:21jerk and no exception for chicken. We try to put all in it. It's a smoke, something like a barbecue.

02:30It's smoke. It's all natural herbs and spices with a twist of... We try to tone down the spice a

02:37little bit because we don't want person to burn their mouth. So we turned it down a little bit,

02:42but to enhance that, we also have some sauce for it. It's a mild jerk sauce and a spicy jerk sauce.

02:49We literally cook it on a smoke grill for approximately 45 minutes to make sure that

02:57it's cooked to perfection, that you can taste the smoke flavor within the bone of the meat.

03:03And that's our signature dish. And we have some vegetables, something like a bread. It's

03:09famous in Jamaica. It's made from cornmeal flour, a little bit of sugar. And we deep-fat

03:14fry that and enhance your jerk chicken or whatever jerk you have. It could be pork,

03:19can be fish. We use that or we can use our sweet potatoes or yam. And we roast those and

03:27just serve it with some nice melted butter. Yeah, it's absolutely delicious. We did have

03:33it yesterday. It's probably one of my favorite things that I've had since I've been here.

03:35We were a little nervous, a little apprehensive of the Hellfire sauce. I'm glad I did it,

03:39because it was absolutely delicious. We did, we asked, we're like, wait a minute,

03:42what's going to happen to me if I try this? They're like, what, do you like spice? We do

03:45like spice. So it's very good. It's hot, but it's hot with a lot of flavor. So even though it's hot,

03:52in the back, you're tasting nice herbs and spice in the back. And it's all natural

03:57ingredients that we use to utilize. There's nothing additive, no preservative, nothing

04:02at all. It's just all blended naturally, just to blend with the smoke jerk chicken that you're

04:08having. Everything you have here at Sandals, obviously, it's all included. It's all delicious
