We've got our executive chef, Ricardo Foster here. Last night, we got to sample some of the

amazing food at this incredible thing that you guys put on for us. But obviously, we've been

here for a few days. We've had the sushi at the Sand. We had the jerk chicken last night at the

jerk shack. It was absolutely incredible. Can you talk to me about the different dining options

As mentioned, the name is Chef Ricardo. Well, guess what? We are located in a unique location

where we have a lot of farming take place in this area. So we try to utilize as much as possible

the local farmers to create our cuisine or create the meal to support them, just to say.

We have a total of 13 different food outlets. We try to, even though it's Jamaica, we try to go

around the world to make sure that we can create something for every single person

that step on our resort to have something to eat at home and away from home.

That's incredible. Do you have one that stands out to you? I'm looking at Neptune's right now,

obviously. We've got Jasmine's right behind us. Do you have one that stands out for you that you

all the cuisine. Well, the amazing thing about Sandals, obviously, is that it's all included.

The great thing is and I tell people this all the time when I recommend going to Sandals or

my wife and I, and we ordered everything on the menu because you can. That's one of the things you

can do at Sandals if you want to, right? All you can eat. And guess what? I'm going to tell

cholesterol-free. I don't believe him for a second, but I'll believe it when I'm here at

Sandals. That's for sure. You talk about incorporating some of the local flair here.

The Jerkshack is especially that, obviously, here in Jamaica. Can you talk to me about the

Jerkshack and the theme there and the idea behind it? Well, as you know, Jamaica is known for its

jerk and no exception for chicken. We try to put all in it. It's a smoke, something like a barbecue.

It's smoke. It's all natural herbs and spices with a twist of... We try to tone down the spice a

little bit because we don't want person to burn their mouth. So we turned it down a little bit,

but to enhance that, we also have some sauce for it. It's a mild jerk sauce and a spicy jerk sauce.

We literally cook it on a smoke grill for approximately 45 minutes to make sure that

it's cooked to perfection, that you can taste the smoke flavor within the bone of the meat.

And that's our signature dish. And we have some vegetables, something like a bread. It's

famous in Jamaica. It's made from cornmeal flour, a little bit of sugar. And we deep-fat

fry that and enhance your jerk chicken or whatever jerk you have. It could be pork,

can be fish. We use that or we can use our sweet potatoes or yam. And we roast those and

just serve it with some nice melted butter. Yeah, it's absolutely delicious. We did have

it yesterday. It's probably one of my favorite things that I've had since I've been here.

We were a little nervous, a little apprehensive of the Hellfire sauce. I'm glad I did it,

because it was absolutely delicious. We did, we asked, we're like, wait a minute,

what's going to happen to me if I try this? They're like, what, do you like spice? We do

like spice. So it's very good. It's hot, but it's hot with a lot of flavor. So even though it's hot,

in the back, you're tasting nice herbs and spice in the back. And it's all natural

ingredients that we use to utilize. There's nothing additive, no preservative, nothing

at all. It's just all blended naturally, just to blend with the smoke jerk chicken that you're
