I want to know everything about all of the foods.

What do we have right here?

So first of all here, we have the black bean soup.

Very traditional when we think about black beans.

Has been in the Mexican cuisine for a while now, right?

We add chipotle pepper, kind of like intensify the flavors,

and we serve it with pork cutlet.

Very traditional take on Mexican cuisine.

Before we move on to some of these other dishes,

I want to talk about kind of the theme.

I know Disney thinks of absolutely everything.

I mean, if you just took a look around,

you could see that Disney thinks of everything.

So we did a lot of research with the movie

and actually going and visiting places

and restaurants.

So we wanted to make sure that we continue telling the story,

but through our craft, through our artistry.

Of course.

You say, what's your favorite?

For me, it would be the shrimp diabla.

I take on the Veracruz side of Mexico.

Very coastal.

If you think about vibrant colors and freshness,

we use the shrimp sauteed with garlic.

We use a red chipotle mild sauce,

so you can taste the smokiness.

Fingerling potatoes, pickled red onions, and birotes,

a very traditional bread in Mexican cuisine.

Let's move on to what I see here as a scallop,

which is one of my top three favorite foods of all time.

What is this dish?

Of course, this is our sea bass seared with adobo.

Adobo, again, is a spice very common

in traditional Mexican cuisine.

We combine peppers, spices.

We serve it with Romanesco, carrots, peas,

and chimichurri sauce.

Okay, and what do we have here?

Here is the braised short rib.

We serve it with green beans, mashed potatoes,

poured wine, and crispy shallots.

All right, so here we have a chocolate spicy tart.

It has some cayenne pepper in it,

and the reason why we went with this dessert

is because the history of chocolate started in Mexico,

so we wanted to include that tradition in this pastry.

We have a margarita cheesecake,

which has a salted shortbread crust

and a raspberry agave sauce.

on that very favorite beverage.

No tequila, so it's friendly for everyone.

And then, of course, we had to have a tresleche.

So it's a traditional tresleche with coconut,

but we put a little spin on it and make it our own.

It's served warm with a dulce de leche ice cream.

Absolutely, part of my focus was bringing musicians together,

authentic mariachi performers,

to play the beautiful music of Mexico.

We went through a process of casting and auditioning

and preparing them and rehearsing them

to truly, truly portray our beautiful music of Mexico

with some very known numbers like Cielito Lindo,

Jalisco Noferrajes, El Sol de la Negra.

We also have a beautiful folkloric dancer from Mexico.

True authenticity in the musicianship,

in the music, in their artistry.

And we love having them be part of this

Can you tell me about how many shows you guys are doing?

So for instance, if someone's,

they're gonna plan their trip to go on the Disney Treasure,

how they can see the show and, you know, enjoy it.

So for our guests, this is a seven night cruising.

And so we have a rotational dining.
