Well, for sure, you will be amazed by the recipe of Tuna Kinilaw

that's the Halloween that really makes you go crazy but also makes a lot of people happy.

One of the perfect dish for this kind of celebration is Kinilaw,

a famous dish in the Philippines that is full of flavor and story

and it is also made from raw or fresh fish.

And to teach us how to make a special but simple recipe,

we will have Chef Jonas Nang here at Sarap Pinoy.

So, we always start with the fresh Sashimi Grade Gensan Tuna

because as most people know, our seafood in the Philippines is very delicious

and Gensan has some of the best tuna.

So, we start with chopped Sashimi Grade Tuna

and the aromatics that we will use are shallots or red onion that is also chopped to make it easier to eat.

A little bit of ginger.

It is also finely chopped because it is hard to bite a big piece of ginger.

A little bit of spring onion.

You can use chili or if you don't want it to be spicy, it is not necessary.

I just like it to be a little bit spicy.

Now, we will cook the tuna using a little bit of vinegar

and a little bit of acid from Dayap or calamansi if you don't have Dayap.

And our flavoring here is sea salt.

And for the umami, flavor, and aroma, we use fish sauce.

And just to round everything off, we will add a little bit of coconut milk.

It is not very traditional, but the Bisayans that I know use coconut milk in their raw fish.

And I just like the sweetness that the coconut milk offers and the balance.

Mix it well and you can now cook the raw fish.

Now, you can use other types of fish or seafood.

And this is our Tuna Kilawin or Kinilaw.
