This speculaas ice cream sandwiches are perfect for an irresistibly gourmet snack! The speculaas cookies are combined to a delicious whipped cream with mascarpone, all you have to do is put a small wooden stick in it, a few hours in the freezer and presto, a delicious ice cream! Ingredients:
- 24 Biscoff speculaas cookies
- 1 cup mascarpone (or cream cheese)
- 3/4 cup cream (30% fat)
- 2 Tbsp Biscoff speculaas spread

To decorate:
- 3.5 oz white chocolate
- 3.5 oz milk chocolate
- 2 crushed Biscoff speculaas cookies
- 2 Tbsp Biscoff speculaas spread
