I'm Jo and I am the Digital Engagement Manager at Visit Inverness Loch Ness.

Last night we had a dinner with ten amazing creators and we told them the story of the

local Larder, all of the amazing food and drink experiences that they can have in Inverness

and Loch Ness.

So today they are getting to meet all of those producers, suppliers and businesses that sell

those amazing products.

I am thrilled to be back home in Inverness at the Taster of Inverness event.

I've been absolutely blown away by the amount of local producers that are here, how many

of them really want to promote what they have and what amazing produce they have.

And I think it's really important for us as a community to shout about these businesses.

It helps to keep tourist pounds here in the Highlands and it's really exciting for a foodie

person like me to just see what's out there and what ingredients we can use.

It's been an absolutely great day.

It is very much based in landscape and place.

So for example Caroline from Bog Hole Farms, the pigs that they have and the cows that

they have are all native to this area and that part of it really makes it special, it

makes it local and I think that's what's really really important.

We're here today because we're huge supporters of food and food industries in the Highlands

and so we were asked to be involved.

We were really delighted.

There are so many amazing local producers here and we're just really delighted to be

in such great company.

I think supporting local producers is incredibly important, especially in these times.

I think the quality of the produce is great and so it's absolutely right and proper that

we support it.

I mean in baking it's quite difficult to do things and we don't have a local producer

of cocoa or chocolate here locally but we can do our bit.

We can use good eggs that are produced locally, we can highlight other people's products

so we might want to make a cake with ale from Black Cow Brewery or Cromartie Bakery or we

might want to support a jam producer or something so there's lots of ways to support our community

but also it's just amazing to work together with people, I just think that's incredibly

important.

Hi guys so we are Xoco, Xoco means bitter, we are a rich street and we do all the baking,

we do French patisserie, we do croissants, sourdough, breakfast, also we have brunch

and you can have a wee wine in the afternoons and I don't know, it's just exciting.

A lot of local products make community so also you feel more homely and it's nice, the

environment is very good for the environment.

I really love baking, not just baking, I love the kitchen stuff also.

I think for this you need to have a lot of passion because in both early hours, I start

normally at 2am in the morning so you need to have a good spirit to every morning wake

up and come to bake everything.
