Today's Special: No-Bake Coconut Ginger Meringue Pie

A dessert pie that doesn't need baking is an uncomplicated treat to throw together. For this recipe, the crust is made with ginger nuts or ginger snaps. If you're not into ginger, use coconut biscuits instead.

The filling does contain egg yolk but it's a cooked custard, not like other mousse-type pie fillings. If you're not into coconut, substitute the coconut milk with cream, and add melted chocolate for extra taste. Or turn it into a lime flavoured pie – coconut and citrus make a tasty combination.

Meanwhile, the meringue topping should be soft and billowy. It is essential that you use an electric mixer during the whisking. A hand whisk won't get the job done.

And in this version, Star2.com food channel curator Jane F. Ragavan used a kitchen blowtorch to toast the marshmallow meringue, but that's just an option. You can sprinkle it with toasted coconut, or leave it alone altogether. Either way, it's an impressive looking dessert pie.
