Today's Special: Paneer

Paneer, or Indian cottage cheese, is pretty easy to make at home. It's also much cheaper than the packaged store-bought stuff. Al you need is full-fat milk and vinegar.

Cream makes the paneer thicker, but that's optional. And flavour it as you like – you can add spices like pepper, chilli flakes or garam masala, along with salt. Fresh herbs like coriander and parsley also work.

There's a mistake in the video with the plate that was used to weigh down the paneer (1:10) – the actual item used was a perforated metal tray. But a dining plate can also work; just place a few layers of kitchen paper under the paneer to soak up the moisture.
