Alphonso Mango Kaju Katli _ Kaju Katli with Jaggery and Mango _ Mango Flavoured Cashew Sweet

Friends, Mangoes are in season now. So I tried this yummy Mango Kaju Katli sweet. Its very healthy sweet as it does not contain sugar. Please watch this video completely and do try this recipe. Ingredients:
1. Cashew Powder - 1 cup
2. Jaggery -1 cup
3. Alphonso Mango Pulp - 1/4th cup
4. Ghee - 1 tsp
5. Cardamom 1/2 tsp

Procedure:
- Add 1tsp ghee in a heavy bottomed pan.
- Spread the ghee evenly.
- Add 1 cup jaggery.
- Add 1/4th cup mango pulp (use Alphonso mango to enhance taste)
- Keep stirring till jaggery and mango syrup forms together.
- Keep stirring till it starts forming bubbles.
- Check for 1 string consistency.
- Add 1/2 tsp cardamom powder and mix it well.
- Add 1 cup cashew powder and mix it well.
- Keep stirring mixture till it thickens.
- Apply ghee to rolling plate and rolling pin.
- Place the stiff dough on the rolling place and make it smooth.
- Start rolling dough untill it is warm enough.
- Spread some pistachios and gently roll once again.
- Cut into diamonds.
- Mango kaju katli is ready to serve.

Tips:
1.Make sure to follow the measurements, especially the mango pulp and jaggery.
2.The taste and colour purely depends on the mango variety. I have used alphonso.
3.Kneading helps in making the mango kaju katli smooth.
4.Give enough time to cool down before tasting.
