Mango Malai _ one must try making these fascinating Mangolicious dessert :)

If there is one fruit that I can’t wait for to come in season, then it would be mango. Now that it is end of June and mangoes are at their peak in my neck of woods, sharing a dessert with you made sense. Mango ‘malai’ was one of many typical summer desserts for me and my siblings while growing up. It was quick, easy and the taste? Oh so heavenly!!!
Nothing made me happier than having ‘malai’ with parathas. Most people would not think of eating malai on a daily basis, since it is very fattening. But I did until my youth.

So, what is MALAI?
Malai translates to milk fat in Hindi language. The milk sold in India is mostly from buffaloes and is not pasteurized. As a result, a very thick and rich layer of skin is formed when the milk cools after being heated on boiling point. This layer of fat is what we fondly call “malai or top of the milk cream. It is skimmed off, collected and used as the same way, we use whipping cream here.This dessert is creamy, mildly sweet, mangolicious and pretty much irresistible, a high calorie though. You can limit the portion size but it is almost impossible to do that. It is SO GOOD that my Son & my daughter, licked the bowl clean

This is a simple yet fancy dessert recipe that can be made ahead of time for a casual party or get together.
