Baingan ka Achaar :

Ingredients:
Long eggplants ½ kg
Salt 1 tsp
Red chili 1 tsp
Mustard seeds 1 tsp
Turmeric ½ tsp
Green garlic 1 tbsp
Water 1 glass

Method:
Long eggplants boil 15 minutes .now cut the eggplants in between .then add ingredients mix and fill in the jar and leave for 2 to 3 day .

Machali Karahi:

Ingredients:
Fish ½ kg
Oil ½ cup
Coriander Leaves (finely chopped) 2 bunches
Lemons 2
Tomatoes (finely chopped) 3
Garlic 6 cloves
Green Chilies 8
Black Pepper (crushed) 1 tsp
Ginger (finely chopped) 2 tbsp
Salt 1 tsp
To wash Fish:
Lemon 1
Turmeric ½ tsp
White Vinegar 2 tbsp

Method:
Marinate chicken with 2 tbsp white vinegar and leave it aside for 10 mi. Now marinate again with lemon juice and ½ tsp turmeric and leave it for a while. Grind together finely chopped tomatoes, unpeeled garlic cloves and green chilies to form a chutney. Heat oil in a wok and fry the ground paste with lemon juice and salt. Now fry onion and then addfish fish fillets are tender enough, spread them in the wok on fired chutney. Now fry the fish again in a separate pan with ½ cup oil. Lastly add lemon juice, finely chopped ginger, crushed black pepper and serve hot

Panjeeri :

Ingredients

Almonds 250gm
Melon seeds 125gm
Fox nut 60gm
Edible gum 125gm
Poppy seeds 125gm
Cardamom 7
Semolina 250gm
Sugar 300gm
Clarified butter ½ kg

Method
Heat 1 cup clarified butter and fry almonds , now dishout , now fry fox nuts and set in bowl , now fry melon seeds and dish out , now fry edible gum and remove , now heat 1 cup clarified butter and fry semolina now add cardamom and add all fried ingredients , lastly add sugar and serve .
