A Parsi mutton curry or Salli Boti is a celebratory fusion dish in which Salli means potato sticks and Boti is the chunks of meat. This dinner recipe is made with boneless chicken and a melange of Indian spices and is often served on a wedding. You can also prepare this delicious recipe on festivals & special vacations.
This well-known celebratory dish from the Parsi community in the west of India, this fragrant curry is often served at weddings and special occasions. Lamb on the bone is cooked in a lightly spiced sauce with cloves, ginger, and garlic, then simmered with apricots and jaggery (Indian cane sugar) for an extra touch of sweetness.

Ingredients:
4-5 tbsp Oil
1 Bay Leaf
½ inch Cinnamon Stick
7-8 Pepper Corns
4-5 Cloves
3 Green Cardamoms
4 Onions (chopped)
1 tbsp Ginger Paste
1 tbsp Garlic Paste
1 cup Tomato Puree
½ tsp Turmeric Powder
1 tbsp Red Chilli Powder
1 tsp Cumin Seed Powder
1 tsp Coriander Seed Powder
1 tsp Garam Masala Powder
1 kg Mutton
1 tbsp Malt Vinegar
1 tsp Jaggery
3-4 Apricots
2 cups Water
Salt
Potato Salli

Method: Let’s start with heating up the Oil in the Pressure Cooker then once the Oil is Hot add Bay Leaf, Cinnamon Stick, Pepper Corns, Cloves, Green Cardamoms, Onions (chopped). Next, sauté for few moments then add Ginger Paste, Garlic Paste now sautés for a minute. Next, add Tomato Puree and again sauté for 3-4 minutes. After 4 minutes add Turmeric Powder, Red Chilli Powder, Cumin Seed Powder, Coriander Seed Powder sauté for few seconds then add Garam Masala Powder with Mutton. Next, mix it all together properly then add Malt Vinegar, Jaggery, Apricots mix it again together. Now add Water, Salt and pressure cook the dish for 3-4 whistles then lower the flame and let it cook for 5 minutes. Next, wait for the cooker to cool down then take it out in the serving bowl and then add Potato Salli on the top. Now your Salli Boti is ready to serve.
