Ingredients for the chilaquiles
6 corn tortillas
Vegetable oil to taste
Ingredients for the sauce:
4 tomatillos
1 serrano chili pepper
¼ onion
Salt to taste
1 garlic clove
Vegetable oil to taste
Ingredients to serve:
1 beef steak
¼ cup flour
1 egg
½ cup bread crumbs
¼ onion
100 gr de cheese
½ cup Mexican cream
Salt to taste
Black ground pepper to taste Preparation: 30 minutes
Serves: 2 pax

Preparation:
To prepare the chilaquiles; cut the corn tortillas n triangles. Fry them in a pan with oil until they look golden brown. Set aside.
To prepare the sauce; boil the tomatillos with the serrano chili pepper, garlic clove and onion for 5 minutes until the tomatillos change color, it is very important not to boil too much so their skins burst because they become bitter. Blend the tomatillos with the serrano chili pepper, onion and garlic.
Fry the blended sauce with a little oil, season with salt to taste and set aside.
To prepare the breaded beef; Sprinkle the beef steaks with salt and pepper an all sides. Beat the eggs with salt and pepper to taste. Roll the beef steaks in the flour and shake excess, pass them through the beaten egg and roll in the bread crumbs. Heat oil in a pan and fry the breaded steaks a couple of minutes on each side. Remove from the pan and cut into bitesize pieces.
To serve; put half of the fried tortillas on each plate, cover with green sauce, sprinkle with chopped onions, cream and shredded cheese. Put pieces of breaded steak on top.
