Nopal stew with cheese

Ingredients:
10 nopal pads
1 onion
2 poblano chili pepper
1 serrano chili pepper
2 epazote sprigs
300 gr panela cheese
Salt to taste
Black ground pepper to taste
Olive oil to taste

Preparation:
Slice the onion. Cut the cheese into bite size pieces, cut the nopal pads into strips. Slice the poblano chili pepper eliminating the white veins and serrano chili pepper removing veins and seeds. Chop the epazote leafs and the serrano chili pepper.
Heat the olive oil in a pan and when it is hot, fry the onion slices for 3 minutes. Add the nopal strips, poblano chili pepper and serrano chili pepper strips and chopped epazote sprigs, mix well, season with salt and pepper and continue cooking for 5 minutes or until soft.
Add the cubed cheese, verify if it needs more salt and continue cooking a couple of minutes.
Serve immediately.
