Ingredients:- 2 cups Boiled rice 2 tbsp. Basmati rice ½ cup Urad dal split and polished ¼ cup Puffed rice (Poha) ½ tsp. Fenugreek seeds (Soak with Urad dal; optional) Salt as required
2 tbsp. Ghee
Method:- - Wash Urad Dal 3-4 times thoroughly and soak in warm water for a minimum of 6-8 hours. - Wash the Rice 3-4 times thoroughly and soak in warm water for a minimum of 6-8 hours. - Grind the soaked dal to a smooth paste with ½ a cup water. - Grind the rice in the same jar to a coarse paste with ½ a cup water. - Add puffed rice to this and grind again. - Transfer the ground rice and ground dal to a bowl and add a cup full of water and mix well. - Cover and place in a warm place overnight or 6-8 hours. - Once fermented add salt to the batter.
