Inexpensive Steak Cuts: Inside Skirt

The inside skirt steak is a cut found in the "plate" part of the animal, and is most commonly found in cuisines in Latin countries. Its definitely a bit tougher and has a coarse grain to it, but it has a fantastic beef flavor and works great with a marinade. This is a cut that you can definitely throw on the barbecue, but you're going to want to cook it to a higher doneness than most steaks. Medium doneness should complement this cut perfectly.
