Flap meat or flap steak is a lesser known cut of beef that comes from the bottom sirloin. A very thin cut, it's often mistaken for hanger steak due to its similar appearance and texture. It's grown in popularity significantly in recent years as chefs from Latin American, Asian, and French cuisine experiment with this tougher, chewier, but also incredibly flavorful cut of beef.
