00:00Pretty girls are cooking in an ugly way.
00:08I named my restaurant Pretty Girls Cook.
00:11Oh, dear.
00:11I'm so sorry.
00:12Oh, man.
00:13Smell that.
00:14Disgusting blood.
00:15You have lost your way.
00:17How could I allow this to happen to my own business?
00:19You didn't take them.
00:20I'm blaming you for this one.
00:22I've seen you arguing.
00:23That needs to go.
00:30I'm on my way into the center of Philadelphia
00:36to visit a restaurant called Pretty Girls Cook,
00:39run by a lady called Dominique.
00:40And my insider told me when this place opened,
00:42it was a huge hit in the community.
00:44Now, sadly, she's lost her way.
00:46The restaurant is failing, and I need to understand why.
00:49So I'm going to sneak in to really understand
00:52how this place functions.
00:54Here we are.
01:00Let's go.
01:03Quickly, let's go.
01:09Oh, look at the mess.
01:12Bloody hell.
01:13Even the rats are dead.
01:15That's not a good sign.
01:17Look at the state of this place.
01:20Now, my insider said they left a key.
01:23It's somewhere.
01:24Yes.
01:27I've got the key.
01:28Let's close that door.
01:34Man, there's an unhealthy smell in here.
01:36It absolutely stinks.
01:39Surely this is not their main fridge.
01:43Oh, my goodness.
01:44Look at the mess in here.
01:46What is that?
01:49Oh, man.
01:51That chicken's gone green.
01:53Look.
01:53It's just swimming in blood.
01:55This is so dangerous.
01:56That chicken's gone.
01:58Appalling.
01:59This is the open kitchen.
02:01When you have an open kitchen, you should be immaculate,
02:04because customers are literally a meter away from me.
02:08Oh, my goodness.
02:09Look at that.
02:10Oh, man.
02:12That is disgusting.
02:13Where's my scraper?
02:14When was the last time this stuff was cleaned?
02:21That's in front of your customers.
02:24What's in here?
02:25That's the fridge, isn't it?
02:27Oh, ****.
02:28It smells in here.
02:30When a muscle is that far open, it confirms it's dead.
02:33Sometimes, if you flick it, it closes.
02:35That's dead.
02:39It's absolutely gone.
02:40And it's just sat there.
02:41I mean, multiple muscles in here are dead.
02:44And that's one of the most dangerous things you can ever do.
02:47That will send you to hospital.
02:50Oh, man.
02:51What is in there?
02:53Oh, my goodness me.
02:54What are they?
02:55Look at the state of that.
02:57Are they lamb chops?
02:58They're over 10 days old.
03:00Looks like the dog's been at them.
03:01Wow.
03:04That lamb works, Nick.
03:06Is it on the menu?
03:07Ah, there it is there.
03:08Look.
03:09That's $47 for a 10-day-old lamb.
03:13Right, the dining room.
03:14Is that a one-arm chair?
03:20If you want to sit...
03:21No.
03:23No.
03:24Do you think that's what these one-arm chairs are for?
03:26Big-ass guys like myself?
03:29Wow.
03:29It's called Pretty Girl's Cook.
03:33This restaurant was somebody's dream.
03:35But something's happened.
03:37Someone's lost their way.
03:39There are so many bad practices in this restaurant.
03:42Let's get the hell out of here.
03:43What's the hell for those bloody rats?
03:45The hell?
03:48My insider told me that the owner started this business with passion.
03:54Sadly for me, the owner seems to have given up.
03:57All good.
04:01All good.
04:15All good.
04:17Now, all the staff here are under the impression that they're on a show called Restaurant Refresh.
04:24Hi, I'm Dominique, and welcome to Restaurant Refresh.
04:26So, they have no idea I'm watching.
04:30So, it gives me a 360-degree view of everything that's going on.
04:38Zoom in.
04:41Yeah, here I come.
04:42Give me a second.
04:42I'm finishing up the gaming.
04:44That's Dom.
04:45That's the boss.
04:46She's the owner and founder.
04:47All right, I'm done with this too, Chuck.
04:49My name is Dominique, and I am the owner of Pretty Girl's Cook.
04:52Who moves all these chairs like this?
04:54As a kid, I was always interested in cooking.
04:56My grandma was the first person that really kind of like hands-on taught me how to cook.
05:00So, I would be with her peeling potatoes, peeling yams.
05:04It was a good learning experience.
05:06Everybody want to drive me crazy today, I see.
05:08Cooking is a woman's thing, right?
05:10But for some strange reason, when it comes to culinary arts, this is a man's world.
05:14I do like to have women on the line.
05:16I think they like that too because they feel accepted.
05:18They feel heard.
05:19You know, I'm very sparkles, glitters, diamonds, girl-a-girl.
05:22But like, believe me, I could burn.
05:24Like, don't worry about it.
05:25So, I named my restaurant Pretty Girl's Cook because pretty girls do be cooking.
05:31We opened in 2018.
05:34We hit the ground running.
05:35It's my grand opening.
05:36We sold out of everything.
05:37My grandmother is Jamaican.
05:38So, my menu was basic dishes for my culture, just on a little elevated level.
05:43This restaurant feels like my grandma's kitchen.
05:462019 was my golden year.
05:48And then, you know, the world changed.
05:51It took us down bad.
05:52I just wanted to cook.
05:53I felt overwhelmed.
05:55I feel like somebody's playing a trick on me.
05:57I made a lot of bad decisions financially for my business.
06:01And then, I took out some hard money loans that kind of put me in a bad space because those things are treacherous.
06:07I'm drowning.
06:08All the mistakes that I made as a business owner affected my creative love for cooking.
06:14It turned into a job, not a passion.
06:16And now, I don't even want to cook in this kitchen.
06:19I'm not the same anymore.
06:21The queen is here.
06:22Now, that's not an announcement.
06:24That's Mina.
06:25I am the best chef and pretty girl's cook.
06:29Everyone loves me.
06:30The queen has arrived.
06:31Come on, ladies.
06:33Dom scouted me from my other job.
06:35I was working at my family's bar, and I was the executive chef there.
06:38And Dom just came in there one day, and she was like, you, I need you in my restaurant.
06:42Who broke the burger press?
06:45Brace my pot, now the burger press.
06:46We can't have nothing in here.
06:48I don't want to hear it.
06:48I don't want to hear it.
06:49Dom, she treats us like we're kids.
06:51She's always everybody's go-to.
06:53Wow, what's wrong?
06:54It's going to get done.
06:55It'll be times that I'll actually be paid early, and she'll come out of her own pocket and just give it to me.
07:00Like, everything about her is just, like, a genuine person.
07:03And when it comes to cooking, she's a really creative person.
07:06It's stressing me out.
07:07But now she hates being on the line.
07:09It's, like, kind of starting to turn into, like, a hate for cooking.
07:15Hello, how you doing?
07:16Table for three.
07:17Right, pretty girls cook.
07:19The rest of it is live.
07:20It's open.
07:20Okay, so I'm going to be right with you guys.
07:22The big question for me is, can they cook?
07:24Can I have the selfie shrimp, can I be?
07:26Yeah, absolutely.
07:27All right, guys.
07:28Let's get me at the bottle.
07:29And, man, they're getting stacked.
07:30They're getting busy.
07:31Where's Dom?
07:32She should be front and center right now.
07:34Do you have green beans over there?
07:35No.
07:36When we, like, are swamped, and, like, we need that extra hand, she just basically expects
07:41us to just deal with it.
07:43I need muscle.
07:44I can't do it.
07:46Oh, my God.
07:47When I don't get help, I get frustrated.
07:49We're supposed to work together.
07:51Both brussels have bacon, ma'am?
07:53Both, yes.
07:55Is that better?
07:56Okay, that's Ronnie there, camera seven.
07:59Hi, my name's Ronnie.
08:01I'm a pretty gross cook.
08:02I'm one of the head cooks behind the line.
08:04Don't piss me off.
08:06I joined the military when I was in college.
08:09I went to culinary school there, graduated top of my class, did my eight years, and landed
08:14here.
08:14The last ticket is the takeout.
08:17Okay.
08:17No, it ain't.
08:19Yes, it is.
08:20No, it ain't.
08:21Y'all gotta be me.
08:22Me and Mina believe that both of us are the HBIC, so.
08:26What is HBIC?
08:27The head bitch in charge.
08:28Fry's basically demanding it.
08:31Why y'all look so angry?
08:32He said, I don't like the way she talking to me.
08:33He said, I don't like the way she talking to me.
08:35He said it was Fry's?
08:36No, the way you said it.
08:37Wow.
08:38Now, my insider told me that Mina and Ronnie do not work together at all.
08:43There is no synergy there.
08:44Does Dom know that?
08:44I do not listen to anything Ronnie tells me to do at all.
08:53The bread takes longer than the muscles.
08:54That's not how that works.
08:55We argue a lie on the line.
08:58Ronnie is not my boss.
09:01Could there be more?
09:02Okay.
09:03Come on.
09:06The heck of it?
09:07You know I do that.
09:08They forget.
09:09They're in front of paying customers.
09:12I mean, honestly, there's no leader.
09:14The breakdown of communication starts with Dom.
09:18Not good.
09:20Oh, my goodness me.
09:21Look at the filth on the floor.
09:23Look at the mess.
09:25Oh, come on.
09:26I mean, all those fries on the floor like that.
09:28You know, you need to be extra clean.
09:31Rodent's running amok.
09:32The fact that I clapped eyes on that dead one outside the back door tells you a lot.
09:37Work in a mess, produce a mess.
09:39Work nice and tidy, produce tidy food.
09:41That's it.
09:42All right, guys.
09:44How are you making now?
09:45That's diamonds.
09:46I serve them.
09:47All right.
09:47What can I get you today?
09:49What is this work atmosphere like?
09:51Laissez-faire, I'll say.
09:53We're almost out of plates, Dom.
09:54All right.
09:55There are a ton of things that we could be just doing better.
09:59We got two forks in this whole building right now.
10:01Anytime it gets a little bit busy in here, we run out of forks.
10:03We're going to have to switch to plastic utensils.
10:05We're out of forks.
10:06Already?
10:07Already.
10:07I don't even know where the forks are.
10:09Oh, my God.
10:11They've got $35, $40 entrees on, and you're eating with plastic knife and forks?
10:17Come on.
10:20Ronnie, are we good for muscles right now?
10:22No.
10:23No?
10:23What y'all don't have?
10:24Muscles.
10:25Yes, we do.
10:25Yes.
10:26I got it.
10:27Okay.
10:28Oh, my goodness.
10:29Why would you say no when there's a whole bag back there?
10:32All right.
10:32I'm glad.
10:33That's not what you want to see with staff in front of customers.
10:37Come on.
10:38Zoom in, camera 7, please.
10:39Inside that fridge, the muscles, yes.
10:42They're there again.
10:43Last night, I found dead muscles.
10:47Oh, my goodness me.
10:49If they go to serve those muscles, I am in.
10:52There is no way on earth I'm going to stand there and watch them eat those.
10:56People can die from this.
10:59Oh, my God.
11:00What happened?
11:02The lamb is on fire.
11:04Oh, f***.
11:08Watching Dom, it's almost like she's invisible in her own restaurant.
11:11Dom should be eyes and ears everywhere, but she shut down and switched off.
11:16Did you take that dirty to table one?
11:19Yes.
11:19That wasn't table one dirty.
11:21That was bar five six.
11:24Oh.
11:25Dom is overall just an amazing person, but I kind of feel like she's giving up.
11:30She's here physically, but mentally she's not.
11:32Y'all f*** me up.
11:34Dom can go behind there and do a bit of cooking.
11:36She's not leading the team right now.
11:38It's no wonder the troops are fighting.
11:39And I feel like you're going to go.
11:41You're not sitting over here.
11:42F*** right here, man.
11:43Oh, well, I f*** that up.
11:45Wow.
11:46Call me if y'all need me.
11:52No, I do.
11:54They're stressing me out.
11:55Dom should be on the line, leaving the team out of the weeds.
11:58She's refusing to cook, and the whole restaurant's suffering.
12:01There's nothing pretty about that.
12:03Damn.
12:04All right, my eyes run.
12:19Right, and we are full.
12:21So the fryer is in overdrive.
12:26The grill is choc-a-balk.
12:29Am I missing something?
12:31Where's Dom in all this?
12:32You know, it's a tiny restaurant, right?
12:34Dom should be eyes and ears everywhere.
12:36I...
12:37F***.
12:39I think I messed up.
12:41Is that Dom back in camera nine?
12:43Dear, oh, dear.
12:46Come on, Dom.
12:47We are running a restaurant, not a hairdressing salon.
12:49Let's go.
12:50Come on.
12:51It's a little disheartening to watch somebody who was so passionate when I got here to feel
12:57that a love isn't there anymore.
12:58They no longer have that passion.
13:00Can I get fries?
13:01Can I get something fries?
13:02Like, I feel like that was everything.
13:04I don't like the way you talking to me.
13:07Just zoom in on how they stack these sandwiches, please.
13:10Horrible.
13:11Take a look at the color of that stove.
13:13The stove is filthy dirty.
13:15This is the thing that pains me.
13:16There are so many women in this kitchen with so much experience.
13:21How can so many bad practices slip through the cracks?
13:25Come on.
13:26It just looks like slop.
13:27Look at that oil.
13:29Oh, my goodness me.
13:31Pretty girls are cooking in an ugly way.
13:35Everything okay?
13:37The sandwich?
13:39Like, it's really good.
13:40Gotcha.
13:41That is appalling.
13:42You said it was oily.
13:44All right, take it off.
13:45Take it off the boo.
13:47Oh, no.
13:49Okay.
13:51How much sauce are they putting on that brisket?
13:54They're caking it in there.
13:56When you cook brisket, and then you get a store-bought barbecue sauce, and you macerate it in there, it could be any protein.
14:04It won't taste of brisket.
14:05Dear, oh dear.
14:06It's Dom opening this place with love and passion.
14:09I don't give a .
14:09Well, that has left the building, let me tell you.
14:14My insider has given me vast amounts of knowledge, but to understand more about the customer experience, I'm calling on my trusted secret diner, Rock Harper.
14:23And joining him, another former Hell's Kitchen champion, Alex Ballou.
14:37Just the two?
14:38Yes, please.
14:39You have a seat right here.
14:41Okay.
14:41Just the two.
14:42Not even a welcome.
14:43Good to see you.
14:44That's weird.
14:45Only one arm.
14:47Easy in and out.
14:48Damn, Rock's having a hard time getting to that chair.
14:53Hey, gentlemen, I'll be right over.
14:54Okay, thank you.
14:55Those chairs look so uncomfortable.
14:57This is super awkward.
14:59You have an earpiece?
15:00Can you hit me?
15:01Yeah.
15:01How uncomfortable are those chairs, by the way?
15:02I started to get my fat ass in there last night.
15:05Good.
15:05It's got a good length to it.
15:06Just one arm.
15:08This is weird.
15:11Dear, oh dear.
15:12Did you want a minute to cruise the menu?
15:14Let me do the lamb with the sweet potato and the mac and cheese.
15:21And the mac and cheese?
15:21Yes.
15:21Is that everything for you guys?
15:22How did you want that lamb cooked?
15:24Medium is cool.
15:25Medium?
15:25No problem.
15:27When you walk into a restaurant and it's called Pretty Girls Cook, you expect some fun.
15:32That nice chip in the bowl, plastic silverware.
15:36I can tell you now, there's not a lot of joy.
15:38Not a lot of joy anywhere in this restaurant.
15:41Look at Ronnie's face.
15:42Oh my goodness me.
15:44Nobody seems very happy.
15:50So this is the 11-day-old lamb lollipops that I saw last night.
15:55My lamb chops looks like the dog to be down there.
15:58I'm amazed that the chefs behind the line are sending through like that.
16:03Rock, Alex, please do not eat that lamb.
16:07How's everything else on that plate?
16:08The mac, et cetera?
16:10Mac and cheese seems super stringy.
16:12Let's try.
16:14All the cheese is basically curdled.
16:16There is nothing pretty about this performance, let me tell you.
16:19That muscle's probably done, Lou.
16:22Oh.
16:23Zoom in.
16:23Camera seven.
16:25No.
16:25They're not serving those muscles on my watch.
16:27Nope.
16:29Nope.
16:30Nope, nope, nope, nope, nope, nope.
16:33This is dangerous stuff.
16:36Is this from my table?
16:39Is it wide or left?
16:40Let's try it across.
16:41These smell so good.
16:42All right, ladies.
16:43I'll leave this right here for you, okay?
16:45Oh, dear.
16:54I'm so sorry.
16:56Thanks for a good idea.
16:57Is that Gordon Ramsay?
16:58I'm so sorry.
16:59Oh, yeah.
16:59No, I'm not necessarily.
17:00He took the food.
17:01He took my muscles.
17:02I'm so sorry.
17:12Don't eat the muscles.
17:13Is that Gordon Ramsay?
17:14Oh, dear.
17:15Oh, I'm so sorry.
17:16Hello.
17:17No, I'm not, Mr.
17:18Is it okay?
17:19Is that Gordon Ramsay on my trip in?
17:21He took the food.
17:22He took my muscles.
17:23You can turn everything off.
17:24Ronnie, Mina, you can turn everything off.
17:27Ladies and gentlemen, would you mind putting your knife and force down, please?
17:30Right now.
17:32Would you mind leaving?
17:33No to-go boxes.
17:35Nothing to be taken out of this restaurant.
17:37Ladies, you can come around, please.
17:38I'm so sorry.
17:40Thank you so much.
17:43My whole body is shaking.
17:46First of all, this is not a laughing matter.
17:49This is real.
17:49I'm nervous to have Gordon in here.
17:51He's known to be a hard ass and to lay those hard truths on people, so I can't even imagine
17:56what he's going to say.
17:57There's something you all should know.
17:59I'm going to be honest with you.
18:01You all think you're taking part on a restaurant refresh show.
18:04But I've been watching you for a long time.
18:09Every corner of this restaurant, I've been studying your each and every move undercover.
18:15And above that, I have an insider that's given me privileged information.
18:22And trust me, they've told me what's really going on.
18:26I'm surprised.
18:28You know, I communicate with these girls.
18:30We talk every day.
18:32It's like, y'all be doing stuff like this?
18:35I've watched you work.
18:37I've gone through everything.
18:39And there's a tray of muscles under that grill, in the low boy.
18:44And half of them are open.
18:45What does it mean when a muscle is open?
18:50Say it.
18:50That's right.
18:51And what does that do to a customer?
18:54Sick.
18:55Possibly food poisoning.
18:57Nausea.
18:59Diarrhea.
19:01Convulsions.
19:02And severe, severe food poisoning.
19:06This was millimeters away from a customer's mouth.
19:12It's disgusting.
19:14It's embarrassing.
19:14It's supposed to be a nice restaurant.
19:17I am not around.
19:21Stay there two seconds.
19:24He came in and just let loose.
19:26He's not wrong.
19:28There are places where we cut corners that we shouldn't have.
19:30I was in here last night.
19:34Just smell that.
19:37Yes, that.
19:38Ladies, when chicken sits in all that disgusting blood,
19:44and it's gone green and slimy, you know that's gone.
19:51Yes.
19:51You know that is gone.
19:52Ronnie, studying the resumes, means experience, your experience in the military, that's you
19:59at your best?
20:01No.
20:02And then watching the behavior, what does it say with an open-pan kitchen?
20:08Tables are literally inches away from you.
20:11They can see me?
20:13They're watching everything.
20:15The way you guys go at each other, in a tiny 25-seater, which should be lines outside the door, we've given up.
20:26Is it all four of you?
20:29Is it just you dumb?
20:30Who is it?
20:31Help me.
20:31I mean, I can speak for them.
20:35I feel like they're just all here.
20:36It's a job.
20:37Just coming in here, punching the clock for a check.
20:39This is just kind of what it is now.
20:41Earlier, there was french fries you knocked over behind that line, and then we could just
20:46continue working in it.
20:47And there's rats everywhere.
20:49We have to be tidy.
20:50Right.
20:50We've got to stay clean.
20:52I agree.
20:53This restaurant is in desperate need of a turnaround.
21:00You have lost your way, given up, and most importantly, accepting mediocrity.
21:08Oh.
21:10We've lost our touch, ladies.
21:13Can I have a word with the owner on her own?
21:15Can you guys go and get some fresh air?
21:17Please, sit down.
21:19Don't.
21:21Zero, dear.
21:23I got a spit.
21:25Guys, I want you out.
21:27Leave me, please.
21:28Put your cameras down.
21:29Out.
21:30All of you.
21:31You've got to do a TV now.
21:35Someone contacted?
21:37They contacted him, yeah.
21:39I wonder, it couldn't have been like a random customer, right?
21:41It was probably someone you know.
21:42We don't know.
21:43The insider wanted us to get help, though.
21:46Take me back to the beginning.
21:46Who came up with the name?
21:48Me.
21:49It's a great name.
21:50But there's nothing pretty about our performance.
21:53You know, I'll get on them about, you know, the same thing like you said.
21:56The cleanliness of the kitchen.
21:58I'll be like, on top of them.
21:59It's like, if I'm paying y'all and I'm not getting paid.
22:01And what are we in for, Toby, between you and I, financially?
22:07How far back up are we?
22:09Like $170,000.
22:10And what would it mean to close this place?
22:19I don't know.
22:25Come on.
22:26That's why I just tried to keep it going.
22:28Because I definitely didn't want it.
22:30So, like, I worked so hard, I didn't just give it up.
22:33I don't know.
22:44When I started this, I loved to cook.
22:47I loved cooking.
22:48And then I feel like the business side of things took away my love for being created.
22:59I would rather just set them up for the day and leave and go home and cook my own food at home.
23:05In my own kitchen, in my house, where I feel more comfortable and I feel happy.
23:08For me, I only keep it open for the few people I feel like they don't have nowhere else to go.
23:16Tom, that's not the way to run a business.
23:18I know.
23:19But you're not a charity.
23:21You're the one that's sinking.
23:25All the money that I spent, how could I allow this to happen to my own business?
23:30Like, I worked so hard to have this.
23:33You know, I made a lot of bad decisions, but it ruined, it just ruined my love.
23:37It ruined me.
23:38But when your team see you giving up, you know, when you should be the leader,
23:44how do you expect them to stand strong?
23:47Because they're just going to follow suit.
23:48They're seeing you serve food on chipped plates with plastic silverware.
23:54And so, in their minds, they're done.
23:56The business is done.
23:57So we're just going through the motions and you're paying for it.
23:59We need to find how this thing starts and get back to that.
24:03We're in the ****, my darling.
24:05We are on our knees.
24:08Right now, I just, I just don't know if it can happen.
24:11Like, I don't know.
24:12Like, me on my own, yes.
24:15But if they're not willing to jump in and be professional and just do the **** the right
24:19way, then it's just going to be a waste of time.
24:23Oh, my goodness.
24:25This is so upsetting.
24:27You know, when you see great ideas disappear like this and it's their own self-doing, it's
24:35so painful.
24:36The insider's right.
24:37These guys have lost their way.
24:39And more importantly, they very clearly have given up.
24:42You okay?
24:43Yeah, I'll be okay.
24:44But I'm not saying that y'all don't care or y'all don't appreciate or got the job or like
24:48the job.
24:48But I just kind of feel like I can't do it by myself.
24:51And ****, they ain't care.
24:52****, they ain't want to be here.
24:53But I'm only as good as my team.
24:55And it's like, if they not really going to do what we need to do, then what's the point?
24:58Then get rid of your **** team and get another one.
25:00Don't get rid of me because I'm going to do what I need to do.
25:02Don't nobody else like Ronnie.
25:04Everybody that you hire don't like Ronnie.
25:06You can't get rid of me.
25:07You didn't.
25:07You made the muscles.
25:09You didn't check them.
25:10You want to know why?
25:11Because y'all always ****, ****, ****, do your **** job.
25:14I'm blaming you for this one.
25:15Why?
25:15What did I say?
25:16I said, we do not have muscles.
25:18Yes, we do.
25:18Back there, Hatch Hulls, do them like y'all.
25:20And I didn't want him to do them.
25:21What are they doing?
25:35Everybody that you hire don't like Ronnie.
25:37You can't get rid of me.
25:38I said, we do not have muscles.
25:39Yes, we do.
25:40Back there, Hatch Hulls, do them.
25:41And I didn't want him to do them.
25:43That's what you said.
25:43Ladies, come over, please.
25:46The insider is right.
25:47You have lost your way.
25:49If I look at the years of experience, oh, my goodness me.
25:55I've seen you bitching.
25:56I've seen you cussing each other out.
25:57I've seen you arguing in front of customers.
26:01That needs to go.
26:03We need some team spirit in here.
26:05Yes.
26:06In unity.
26:07Yes.
26:08So, first thing tomorrow morning, I want to see one, two, three, four of you outside of here together with me.
26:16I'll see you in the morning.
26:17All right.
26:17The Pretty Girls Cook staff argue as soon as they step into the restaurant.
26:21So, I need to remind them that they are a team.
26:23My insider told me Dom relaxes and resets with yoga.
26:26So, today, we are building teamwork outside of the kitchen.
26:29Welcome.
26:30Thank you so much.
26:31This is incredible.
26:32Ideal for the situation we've got.
26:34Pretty Girls Cook, it's like a pressure cooker.
26:36And it's about to implode.
26:38And they don't understand the importance of getting realigned, reconnecting, and sort of trying to rediscover that passion.
26:46Yeah.
26:46Yoga is great for that.
26:47My idea of relaxing is doing triathlates.
26:51And so, I'll be honest, I've been to a yoga studio twice, and that's to pick up my daughter.
26:54Okay.
26:55Well, we'll keep it very beginner-friendly.
26:58Hey, ladies.
26:59Good morning.
27:00Good morning.
27:01Shoes off.
27:01Come over.
27:02Let's do Dom and Diamond come over here, please.
27:05Ronnie and Mina there.
27:08We're going to start in a seated position.
27:10So, whatever position you'd like, we're going to set one small intention.
27:15And we're actually going to share these out loud.
27:18What is your intention?
27:19To be more positive with my approach.
27:23Beautiful.
27:24Just being happy.
27:25Yeah.
27:26Self-discipline.
27:27Do you have one?
27:28Multiple.
27:29I'll start off with one.
27:30For Pretty Girl's Coat, be aligned.
27:34Aligned.
27:34Together.
27:36You're going to come onto hands and knees here.
27:38Rise that knee.
27:39You're in a low lunge here.
27:41Inhale, reach the arms all the way up.
27:43You're going to actually grab the hand of the person next to you.
27:46Yeah, you've got to trust the person next to you to hold you.
27:48On that exhale, lift that knee all the way up into the chest without letting it touch the floor.
27:53Breathe in.
27:54I think doing yoga is going to be good for the rest of the round because we were both helping each other a lot.
27:59Like, I haven't seen Ronnie smile this much in 365 days.
28:03Sit low into that chair.
28:06It helps if you smile, too, I promise.
28:08How you doing, Gordon?
28:10Yeah.
28:12On that inhale, tilt your chest forward.
28:15Chest goes down, leg goes high.
28:18Let your heart rate settle.
28:20Hands come to the side.
28:22Turn to the person next to you.
28:23Say thank you for being here.
28:25Thank you for your energy.
28:25Thank you for being here.
28:28That's amazing, Victoria.
28:30Honestly, that was incredible.
28:32Good to see you two working together.
28:35Dom, I had a really good catch up with you yesterday, one-on-one.
28:38Will you grab a coffee?
28:39Mm-hmm.
28:39And I just want to spend five minutes for the girls.
28:41Yes.
28:42If you mind, and I'll see you in a bit.
28:43Yes.
28:43Yeah?
28:43Absolutely.
28:44Excellent.
28:44I'm calm now, you know?
28:46I feel centered.
28:47I feel peaceful.
28:48I feel happy.
28:48I'm grateful because of our team building, like, our getting back as one.
28:53Mina, the relationship between you and Ronnie is so crucial.
28:57You've got customers literally inches away from you.
29:00Watching the way you work, it's like you're running two separate kitchens.
29:04Today, you were literally leaning on each other.
29:06It's the opposite to what I saw you in terms of performance in that kitchen and the strength
29:09of both of you together.
29:10And it's so crazy because in 2019, we were the closest out of everyone else.
29:15So we have to find that, getting reconnected, getting realigned.
29:19Yes.
29:20There's a lot going on.
29:21We're in a deep hole.
29:22Are you fully aware of the financial implications in terms of how far behind we are?
29:27My insider told me that she goes into her own pocket to pay you.
29:30She would probably give you the clothes off her back.
29:32Mm-hmm.
29:33In the middle of service, I think I spilled something on my shirt, and she took it off and
29:36said, here, just put this on.
29:37I have another shirt on.
29:38Mm-hmm.
29:38She's just always been that way, selfless, always wanting to help.
29:42You all need to be communicating better and then pick up the slack for one another.
29:46So we want to see that change in both of you and have you realigned.
29:51And two of you together in harmony will be fantastic.
29:55Change people's lives for the better.
29:57Yeah.
29:58Yeah.
29:58I 1,000% believe that Gordon can help us get back to where we were.
30:03A load was taken off.
30:04I couldn't stop smiling.
30:05I just, I was ready.
30:08Oh, man.
30:09Anyone stiff?
30:10Yeah.
30:12That's the longest I've ever sat still in my entire life, by the way.
30:15Here she is.
30:16Come back.
30:17Feeling good?
30:18Yes.
30:18Thank you for a great morning.
30:20Let's have a group hug.
30:21Come on, Dom.
30:22Charge it up.
30:22Let's go.
30:23Oh, my goodness me.
30:26That was my first and my last yoga class, okay?
30:29Dom's lost her passion for cooking, so we are making Pretty Girls Cook a place she can
30:38be passionate about.
30:39A beautiful dining room and a kitchen that's been deep cleaned, all to inspire Dom to get
30:44back to what she loves, cooking.
30:50PGC 2.0, Pretty Girls Cook.
30:53We've lined it with brand new equipment and fresh produce.
30:57Here we go.
30:58I'm so excited.
30:59It's a big one for me.
31:02Oh, my God.
31:07Man, those girls are happy.
31:08So nice to see them smiley.
31:11This is sexy.
31:12It is.
31:13Now we've transformed it into a proper, intimate restaurant.
31:18Nobody's about to complain about these chairs.
31:22Oh, my God.
31:23Oh, my God.
31:24It's a pack.
31:25I absolutely love this.
31:29Oh, this is nice.
31:30Money butter toast.
31:32You're still looking at the menu.
31:33Yes, I am, because I'm excited about this.
31:35Wow.
31:36It's so nice to elevate the menu because their skill set is already high.
31:41The most important thing for me is that the girls are cooking fresh food.
31:45I'm going to go in there and get them tasting their new menu.
31:48May I?
31:53Yes!
31:53Oh, my God.
31:56Oh, my God.
31:56Thank you so much.
31:58Come on.
31:58He hit all the markers.
32:00The food, the beautiful presentations, the plating.
32:03It's everything we need.
32:05Chef.
32:06Come here.
32:06Oh, my God.
32:07Oh, my goodness me.
32:08I love this.
32:09New chopping boards, new plates, new knife and fork, hex pad pots and pans.
32:14Look at the menu together.
32:16Price points are down, but profitability is going to be up because we should be turning
32:21these tables.
32:21Right.
32:22I've designed a smaller menu that really shows off your skill set.
32:26I think grandma would love it.
32:28Grab a plate each.
32:29Dig in.
32:30Try those little croquettes.
32:31They're good.
32:32Oh, my God.
32:33That's amazing, actually.
32:34Aren't they lovely?
32:35Beautiful.
32:35The sweet potato fries.
32:37Oh, my God.
32:38Mmm.
32:39There you go.
32:39Oh, my God.
32:40Looking at the strength of this restaurant, it's kitchen-led.
32:44My latest opening.
32:45There's only 12 seats at the counter.
32:47Okay.
32:48And the chefs are serving the food.
32:49And that's what I want to see you do tonight.
32:52The only big difference is my chefs aren't as pretty as you guys.
32:55Okay?
32:56We feeling aligned?
32:58Yes.
32:58Are we feeling together?
32:59Yes.
33:00Let's get pretty girls cooked back on the map.
33:03Yes.
33:04Let's go.
33:04I'm ready.
33:05I'm ready.
33:06With unity restored and the restaurant upgrade complete, it's time to get their leader back
33:11in the kitchen.
33:12Don, come over, please.
33:15Grandma was a big influence, right?
33:16Mm-hmm.
33:17What's the dish that you always think back to that ignited that flame?
33:21Um, I think the first time I've ever made, like, my fried red snapper Escovich, once I made
33:26it my first time, I was like, oh, I don't really know how to cook.
33:28When was the last time you cooked it?
33:31Girls, stay there.
33:33Stay there.
33:33Two seconds.
33:34Let's re-light that fire, yes?
33:43Yes.
33:43Yes.
33:43Okay, let's go, girl.
33:45Absolutely.
33:47I'll be honest, Dom, you're the only person I haven't seen cook yet since I've been here.
33:52I know, I was thinking that.
33:54Peppers, onions in, right?
33:56It's important to cook these with no color, right?
33:58Because we're going to put the marinade in there.
33:59Yes.
34:00Just let that sweat for a little bit.
34:01Cooking with Gordon definitely ignited my passion.
34:05I was happy being in my kitchen again.
34:07Yeah.
34:07Is that up?
34:08Yeah, there you go.
34:09Do you want to put the marinade in there now?
34:10Yes, it looks amazing.
34:14So you've got the sweet, the sour there.
34:16Oh, this is really good, yes.
34:18All right, let's get that.
34:18I'll hold the tray, slide that on there.
34:20Okay.
34:21Yes.
34:21A little bit of salt on there.
34:23Yes.
34:23My insider told me you had this passion.
34:26It's just so nice to see you using it, yes?
34:28Yes.
34:29Literally.
34:29Oh, my gosh, it looks so good.
34:32That's you on a plate, right?
34:34Yes, that looks amazing.
34:35I know it looks good, tastes better.
34:37It's so good to see that reignited passion.
34:39Sometimes you need somebody to light a fire under your ass.
34:42Thank you so much.
34:44Now I'm like, I want to cook.
34:45I'm like, get out the kitchen.
34:46I want y'all to all get out.
34:47Like, I want to get in here by myself.
34:48Like, I'm just so happy again.
34:50Right, let me get the girls out.
34:52Ladies!
34:53Y'all ready to go?
34:54Yes.
34:54Dom, come around.
34:55That's not always delicious, by the way.
34:57Someone's got their mojo back.
34:59Okay, there's one more thing I need to talk to you about.
35:02There's someone that was incredibly honest with me,
35:05someone that told me everything that was going on,
35:07someone that was struggling to be open and honest
35:11because of the love they have for the owner and this place.
35:16And they were worried that Dom would feel betrayed.
35:23Everyone's just looking around.
35:24No one knows whose it is.
35:25I think it could be Diamond because she was newest on the team.
35:32Would you like to meet the insider?
35:35Sure.
35:36I definitely don't think it was one of my chefs
35:39because you being the insider is like you telling on yourself.
35:43Is the insider here?
35:44Oh, gosh.
35:45Would you like to meet the insider?
36:01Sure.
36:02Would the insider reveal themselves?
36:11The queen has arrived.
36:13Oh, my goodness.
36:16What?
36:16Like, you, like...
36:19Oh, my gosh.
36:21The insider was Mina the whole time.
36:23The queen has arrived.
36:24Does she like to say?
36:25Mina, I know how hard that was.
36:28Yes.
36:28And I heard you loud and clear.
36:31Does Dom know how desperate the restaurant's become?
36:33It's been times that we've came in a restaurant early
36:35and we caught Dom crying in her car.
36:37So she sees it.
36:38She just really won't admit it to herself.
36:40Has she given up?
36:41She's lost her passion for cooking.
36:43I love you so much.
36:44So it definitely was hard
36:46because I felt like I was kind of betraying you.
36:48It's okay.
36:49You know we don't do that.
36:50But I just had to.
36:52We need help.
36:53I think they're shocked.
36:54They didn't think it was me.
36:55No one thought it was me.
36:56And whilst it was so hard for you to open up,
36:59it was because of the love.
37:01Yeah.
37:01And the want for you to be successful.
37:03I appreciate it.
37:04I thank you.
37:08I love you.
37:09I love you, too.
37:10I would have never had expected for her to be the insider.
37:14Oh, my God.
37:16I didn't think that she was as invested.
37:18So for her to do something like that for me,
37:20it's very special.
37:22Pretty girls can hug.
37:23Yes.
37:24Pretty girls can get on the same page.
37:25Yes.
37:26And pretty girls can run a restaurant.
37:28Yes.
37:29Come on.
37:30Let's go.
37:30Let's go.
37:31Hey.
37:31Let's go.
37:32Let's go.
37:34Let's go.
37:35If you guys can follow me.
37:39Thank you guys so much for coming in.
37:41Are you still on saute?
37:42I'll start off with the X.
37:44I'll double down for the grill as well.
37:46Love that.
37:46The fact that Mina and Ronnie are talking and communicating.
37:48It's a great time.
37:50Pretty girls cooking house.
37:51Is this the same kitchen?
37:53Mina and Ronnie dancing together like that.
37:56Bread cakes and strengtels.
37:57It feels amazing to be aligned with Mina.
38:02It was time to buckle down and lean on each other
38:04and just work with each other.
38:05We were communicating and moving back and forth.
38:08It just was amazing.
38:11You're welcome.
38:12Is she serving?
38:13Yes, she is.
38:15Hi.
38:15So we have your shrimp toast and your crab cakes?
38:17Love that.
38:19Enjoy, ladies.
38:21I am extremely proud to be working in this new restaurant.
38:24I never enjoy being at work as I do now with the new menu.
38:29Oh my goodness me.
38:30That seafood looks delicious.
38:32Fresh mussels, incredibly juicy and 100% fresh.
38:36But just look how clean the girls are working.
38:38They're cooking, they're cleaning, they're wiping.
38:40Their practices are back to where they belong.
38:43Nice to see the food not coming out with that store-bought,
38:47squeezy-bottled crap in there.
38:49Now we've got proper food.
38:51Two orders.
38:51I'm going to start these two right here.
38:53And now the team are communicating properly.
38:55We'll never see rotten seafood served here again.
38:58Where can I help y'all at?
38:59Y'all need somebody else to export.
39:01I could stay in and do the grill in the middle.
39:03Okay, that's cool.
39:05Dom is going back behind the line.
39:07Customers can see just how hands-on she is.
39:09Guess I'm just freestyling.
39:11Killing it.
39:12I'm going to be in this kitchen with y'all now.
39:14Your bitch is bad.
39:15Excuse me.
39:15I can't curse.
39:16I'm sorry.
39:18She's bad.
39:19So nice to see Dom smiling again.
39:21This is too good to miss.
39:23Dom is a whole new person now.
39:26I know that this means the world to her.
39:28She has a new restaurant.
39:29It's like a fresh start for her.
39:31It's good to have my friend back.
39:33It's really amazing.
39:36Good evening.
39:37Hello.
39:38How you doing?
39:38Oh my goodness me.
39:40We're on a different level.
39:41Yeah, you can taste some love in that.
39:42Yeah.
39:43You can taste some love.
39:44Something's going on with the grill.
39:46The grill's not working.
39:48No, look.
39:49There's no flame.
39:51You guys?
39:51You okay?
39:52The grill down.
39:53Damn, it's gone down.
39:54How long has it been down?
39:55It just popped off.
39:56I went back there and checked it.
39:58Okay.
39:59Popped.
40:00But I turned the line off.
40:01Gotcha.
40:01The damn hose on my gas line fell out.
40:05Now I'm like, what am I going to do about the oysters?
40:07Like they get charbroiled.
40:08What we do now is just literally, we'll get them done in a pan.
40:12That's fine.
40:13And the oysters, do you have a grill?
40:15Mesh.
40:15Gordon walks in and he helps save me.
40:18It's an easy fix.
40:19So stick that on there like that.
40:21He throws the steaks in a pan.
40:24Just put the oysters right on the flame.
40:26This pan is amazing.
40:27That's some real cooking.
40:28I've improvised, but not like that before.
40:30That was different.
40:31There's always a solution, my darling.
40:32I see.
40:33Every night there's something that goes wrong in my kitchen.
40:35You know that?
40:35Yes.
40:35Always.
40:41That's good.
40:42Yeah.

40:53I support things that communicate you.
40:54Right.

40:55How are you feeling?
40:56It was good.

41:36My cooking is very sloppy.
41:37Oh, no.
41:39Wash your bloody hands.
41:40This place is a sorry state of affairs.
41:43That's your opinion.
41:43Oh, my God.
41:45Listen carefully.
41:47I've never seen anything so disorganized in my entire life.
41:51Shh.
41:51Wait, we don't curse.
41:52Shh.
41:53If you saw what I saw, you'd do more than cursing.
41:55Trust me.
