04:59seven let's go look at that dining room look how dreary that room is terrible benches chairs
05:08plastic menus oh man that's cheryl the owner my insider told me she sort of grew up inside this
05:16diner i've been working at this restaurant for 40 years i grew up here in fact when i was pregnant
05:22the first time my water broke here on the line and i drove to the hospital myself since 1959 my dad
05:31started working here was able to purchase it and then i started working here when i was 13
05:37and then when i was 18 i took it over myself but like the restaurant is always kind of in limbo
05:47like it was so different way back when there's not enough business around here i've purchased
05:53this building now and i have this big mortgage payment now so am i going to be able to make
05:58those payments how can you keep a restaurant open without customers
06:02an insider told me that cheryl has recently committed to a 1.2 million dollar loan
06:12she's on the verge of bankruptcy and in deep water and she's got to make this work
06:17i feel like it's so much more than family here because we do become so attached to each other
06:36and my kids are growing up now they both live in philadelphia maybe that's why i'm so close with all
06:41the people that work for me because you know i miss my kids davia did you roll no in line the roll
06:49i like to be mommy to everybody i want to help them and i want to make sure they have good lives and

14:07from freshly cooked uh bacon to coffee what does it smell like uh it smells like struggle yeah it
14:14smells like old fryer oil yeah you guys ready uh question what is the uh soup of the day chili
14:22chili homemade uh yeah we'll share a bowl of it and then a mushroom omelet i'll get the steak and eggs
14:29a medium rare okay should be done like 45 seconds being on the line here means that you uh you actually
14:41man the microwave sticking his finger in the middle of that chili to find out whether it's hot or not

20:31but she's not your mom you should be calling her boss i know that it's so many things wrong and i know
20:38that we're not functioning i try to fix what's wrong here but i just don't know i just don't know
20:49any other way kenny reheated foods mice toppings everywhere i tested one of the microwaves last night
20:57anything between 50 to 90 is sort of max you can't really go over 90 something that every restaurant in
21:03the country is getting scrutinized with you guys have broken the record 5718 on that scale are you
21:11proud yeah i do my best every day that's not your best it's not even clean there's mice downstairs dead on

24:47holding on to some form of standards and these kids around like it's some trap i can't fire them

25:00some tough times over the years she's been there for me i get that but do you know how close we are

27:54serious that's right and trust me there's a time to let steam off but it's not in front of your customers
28:01right yes sir right all the people that work here would have to understand how important it is to
28:06follow the rules and to listen do you think that gordon is the muscle to get those points across
28:14yes he's serious business and i feel like they're going to take him very seriously behaving like
28:19children is not good enough so today we're gonna let some steam off gonna get out of our system so
28:25he can go back and be professional in the kitchen yes sir right who'd like to go first me let's go step up
28:33let's go that makes a lot of sense to me we'll wrestle around in the kitchen on a daily basis you
28:39know but that's not the place to do it do the roughhousing at the park not in a restaurant environment
28:45the young kids they're 19 20 years of age and my insider told me they're missing guidance discipline
29:06and direction and fingers crossed this little exercise this morning we'll keep them calm and then
29:11we get back to the real work oh my goodness me they need to let steam off right they do we need one
29:25of those in the basement uh listen one problem that i need to talk to you about is you each member of
29:34staff calls you mum they treat you like a mother you are not their mum you're enabling them yeah
29:46you're the boss they need to call you either cheryl or hey boss it'd be weird for them to call me
29:51cheryl you've got to set the boundaries you have to get away from being chained to that stove i feel
29:57like i feel like i need to be there i don't know i feel like because i feel like nobody's gonna do it
30:03like i do it it's control this control that you have is not beneficial it's almost like the most
30:13important thing in there comes last and that's running the diner they're all getting away with
30:19absolute chaos i know i'm as much to blame as everyone i mean i have a tendency of just kind of
30:25ignoring it because i just want them to stop but sorry i have to be more firm and just stop the the
30:44playing you need to hand the reins over kenny needs the title he deserves it he's one of the most
30:51experience that's your head chef i just have to figure out how i'm going to do that it's not a
30:56demotion okay it's more of a step up and boss and i think customers would love to see you from the
31:03house right it's hard because you love the place you love them and you've given your life for this
31:08yeah it's a hard thing change is hard especially when you've been in doing it the same thing for so
31:14long change is really hard a million dollar debt is not to be played with it's a serious risk right
31:20it's scary debt for in my 50s to take on that debt is terrifying yeah like i'm scared of course
31:28of the unknown but i'm so open-changed and i'm so willing to learn another way i just
31:35i don't even cry it's just it is so real right now and i just

32:11that dark dingy diner has been transformed and the staff they're young they need guidance

32:33it is so fancy got all those dreary dreadful tables from 20 years ago now we have a classic
32:38nod to a 1970s diner look at kenny's face incredible that is crazy this place hasn't been renovated since
32:471990. now we have a new bar top that for single diners is perfect oh my goodness it's got a new line
32:55behind that kitchen a brand new grill coffee machine milkshake mixers beautiful knives boards no longer
33:02my stockings everywhere the place is spotless you see the pictures oh
33:06oh oh me and my babies is this you that's my mom just like you that's my mom that's my mom

33:24i'm very happy where's the boss oh my goodness come here oh goodness me wow this is what you deserve wow
33:32wow it's a beautiful space yeah it's nice to see you in the dining room by the way like a proper b-o-s-s
33:38what does that mean boss not mama the boss okay i want to show you something simple but something
33:46you can speak a volume of diner do you know what that is a great omelet get in here guys yes and i'm
33:52going to do one now with a simple goat's cheese so first off i'm going to put in a little bit of ham
33:58i like a little bit of texture just a little hint of olive oil in there and then with your eggs
34:06i want to make this omelet nice and fat right and they literally take 60 seconds
34:13yeah take it off the heat a little bit of cheddar and then from there i'm going to drop these little
34:18bits of goat's cheese in there and that will melt in the middle i'm going to fold that over now
34:23fluffy and it's still nice and white look just a little touch of butter on there okay it gives a
34:30nice glaze look how fat that is that was in 90 seconds and not one microwave required and by the
34:37way they've gone good because we're real chefs one two three you've got two minutes each to make ken
34:44and i your omelet and your time starts now let's go uh let's sit down my man uh ladies can you come
34:52and sit over here please do you hear how quiet it is in there that's what a professional kitchen
34:58should sound like 20 seconds gone 90 seconds to go so we're going to start off with this small menu
35:04buttermilk pancakes french toast chicken and waffles and the marvel ranch cheeseburger the old menu
35:10lifted into this new era we kept the pricing the same we save on our purchasing we save on our labor
35:16costs and we increase the standard it's amazing incredible 10 seconds to go guys last 10 let's go
35:30uh good job come down amazing it looks fluffy it looks full i love that good job get it go go go go dig in
35:40this is delicious i don't even like omelets i love omelets now never seen an omelet made how you
