00:00I feel like I'm lost for words. It's so beautiful.
00:06Alley, alley!
00:11Oh, here we go.
00:13This is the Great Outdoors!
00:23They call it the greatest snow on Earth.
00:30I feel anything but comfortable.
00:36This is America's biggest winter playground.
00:40If you've got the right stuff for carving up the white stuff,
00:43it's pure, powdery heaven.
00:46Whoa!
00:47Between you and me...
00:48How come I'm going sideways?
00:50I've never skied before.
00:51Something that really gets your ego
00:53when you see little ones that are barely higher than your knee
00:56flying down the slopes.
00:58And I feel like I was born this morning.
01:02Whoa, whoa, whoa.
01:08Park City.
01:09A storybook town
01:11straddled by the ski fields of Park City Mountain and Deer Valley.
01:15Now, this is much more my jam.
01:19I don't want to boast, but I'm feeling pretty confident.
01:22Just grab an inner tube and glide.
01:25Like a famous ice queen once said, let it go!
01:29Snow tubing is for all ages, and you can do it day and night.
01:34Wrong way! Wrong way!
01:35Whoo!
01:38One down.
01:4048 to go.
01:42More speed on that downhill run?
01:45You got it.
01:46Park City hosted the 2002 Winter Olympics
01:50and will again in 2034.
01:53But you can sign up anytime for a thrill that's gold.
01:57Feel the rhythm.
01:58Feel the rhyme.
01:59These Aussie kids ready for a bobsled time.
02:03Now, I've seen cool runnings and that didn't end so well.
02:07So, I'm going to be fine.
02:08You promise me?
02:09Yes, no.
02:10You will be just fine.
02:12We've had everyone from 13 years old up to 85 years old do bobsled.
02:19Sliding down the original track in 2002, upwards of, you know, 4 to 5 Gs,
02:24going upwards of 75 miles per hour.
02:35That was one of the most unbelievable things I've ever done in my life.
02:39It's going to take me a while to come down from that.
02:41That was unbelievable.
02:45Before Olympic gold, Park City Mountain was mined for silver.
02:49History you feel with every step through the old town.
02:54Home to the world's only ski in saloon high-west distillery.
03:00Sliced through snow, straight to home-cooked comfort.
03:04And award-winning whiskey.
03:06Oh, just slips down, doesn't it?
03:10At No Name Saloon, a cave of Americana.
03:14They take their liquor a little differently.
03:17Well, welcome to the time-honoured tradition of the Park City Shot Ski.
03:21This is mandatory for anybody that comes to our mountain ski town.
03:26So there's a few key rules that I'd like to go over before we embark together.
03:31This is a team effort, okay? We're all in this together.
03:34Solidarity means success.
03:35So we are going to count down.
03:38Three, two, one.
03:42Woo!
03:44Woo!
03:45This has been, I've been initiated and I'm a part-time.
03:47You're official!
03:49Almost as intoxicating, the gondola ride to Jordanel Lookout.
03:58And the world-class ski runs of Deer Valley.
04:02Stay a while in this snowy Eden at Stein Eriksen Lodge.
04:06You know what it feels like in here?
04:09A warm, comforting and a very exclusive hug.
04:13With a view.
04:16Chill out beside a blazing hearth.
04:19Or go a whole other way.
04:21Look at these.
04:23They remind me of those souvenir snow globes.
04:25You know the ones that you shake and inside it snows?
04:27Alpen globes are the coolest way to lunch at the lodge.
04:32And Jonathan is a chef who knows the way to a woman's heart.
04:37Yeah, you can't go wrong with our Stein's Burger.
04:39It's kind of tradition to come here and get a burger and ski all day.
04:43How many of these have you sold this season, do you think?
04:46This season, probably say five grand.
04:50I did hear a whisper that you've got a bit of a nickname around here
04:53called Chef McDreamy.
04:54Uh, no.
04:58I'll take that response as a yes.
05:01Well.
05:02Yeah, I get that one a lot.
05:04Of course he does.
05:05Bad or hot chef.
05:07Is this the most enchanting thing to do in Park City?
05:11Put that on ice for a sec.
05:15One sleigh, two steeds, thousands of fluttering snowflakes.
05:21It's so ethereal, it's like I'm on a movie set.
05:24Is it real?
05:25It's nothing better.
05:26It sounds so much better.
05:27It's nothing better.
05:29Jake is at the reins of this snowed-in sleigh ride.
05:33This is the way that they traveled in the 1800s, 1700s.
05:39It's very reminiscent.
05:40I have some pioneer ancestry, you know, crossing the plains to come settle the West.
05:45You know, it kills me with a little sense of pride that I get to come and do this and then sharing that heritage with my ancestors, for sure.
05:54Oh, Jake, what a backyard you live in.
05:57Pretty special place, the mountains.
06:00Isn't it just spectacular?
06:02It is straight out of a fairy town.
06:03Yeah.
06:06That's it.
06:07Nice.
06:08Okay.
06:09A natural.
06:10Well, you know, it's all in the wrist as they say.
06:14It could easily be a crowd in here, just feeding off all of that.
06:28That's pretty shallow too, isn't it?
06:31It's not as shallow as you think.
06:33Okay.
06:34Geez, I've already failed.
06:35It's a really magnificent stream, which is actually the start of the Derwent River, which flows all the way down to Hobart.
06:47Renowned as a world-class fishery.
06:50Tasmania's iconic River Derwent begins its journey from the equally iconic Lake Sinclair, Australia's deepest fresh water lake.
06:58The aim is place a fly up river and it will come towards us.
07:08Drift down.
07:09Yep.
07:11See the fly?
07:12Yep.
07:13Right.
07:14That's rule number one.
07:15Rule number two is to do it again.
07:18And let me guess.
07:19Rule number three, four, five, repeat.
07:21Yeah.
07:23Lift up off the water, cast behind.
07:24That's it.
07:26Let it go.
07:27Strike, strike.
07:28Yep.
07:29So you've got a lift.
07:30Bad luck.
07:31That might have been a fish.
07:32I was slow on the reaction, wasn't I?
07:35This is my day job.
07:36Trying to catch that elusive brown trout.
07:38You're currently in my office, standing in the river like this.
07:41You've got these sounds around you.
07:44Generally, where trout are found, your phone doesn't work.
07:49It's magical.
07:51Tasmania's central highlands may be magical.
07:54I don't know what hand I had to be honest.
07:56You're told, can ya?
07:57But unfortunately, no amount of wishful thinking is gonna land me a fish.
08:03Thanks, Jason.
08:05Supernaturally stunning Lake Sinclair is at the southern end of Cradle Mountain, Lake Sinclair National Park.
08:13Surrounded by world-renowned alpine walks.
08:15Ranging from steep, challenging multi-day treks to more level terrain.
08:21This has to be the grandest and longest entry to any hotel I have ever stayed in.
08:27A boutique hotel in the middle of a glacial lake?
08:31Pure Tassie.
08:34Connected only by a 250-metre-long concrete flume, this ex-hydro station boasts nine very stylish rooms.
08:42Feels like it's sleeping on water.
08:48Let's call it the deluxe edition of the classic waterbed.
08:52But if you don't find the sound of water lapping beside your bedroom window soothing, there are land-based options.
09:00This one, a little further of a walk.
09:07Oh, and this is why.
09:10Tucked away beside the lake, a very private two-storey cabin surrounded by ancient myrtle forest.
09:17This is what a sophisticated, secluded wilderness retreat looks like, folks.
09:22I'd call this understated indulgence, which also applies to the food.
09:27The produce is 100% Tasmanian and it has to pass the pub test of being local.
09:33For our chefs, it's more about what not to put on.
09:36They've got so much to choose from.
09:38The communal dining area serves breakfast and dinner daily.
09:42As for lunch...
09:44Our larder offering, again, 100% Tasmanian produce.
09:47Have it in your room, have it by the fire, put it in the picnic and off you go.
09:52It's the sort of place where you can do as little or as much as you want to do.
09:57It's no secret, I'm a do-as-much-as-you-want kind of guy.
10:01And the e-bikes are free, so you'd be mad not to.
10:05Oh, here we go.
10:07Look at those colours.
10:09Of course, your itinerary doesn't have to be set in stone.
10:13I can't believe the level of detail in this artwork, even to the point where you can see the veins in this man's hand.
10:20Even that chain.
10:21But it can be etched in wood.
10:24Wall in the wilderness is just up the road from Pump House Point.
10:28An incredible hand sculpted history of the Tasmanian highlands.
10:33It's 100 metres in total.
10:35It consists of 101 panels covering a range of different stories.
10:39One man's tribute to Australia's pioneering past carved into Tasmanian timber.
10:46Mostly Huon Pint.
10:48Mostly Huon Pint. Is that an easy wood to carve?
10:50It is a soft wood, but that doesn't actually mean it's an easy wood to carve.
10:54It's a stable timber, so it won't crack and it won't move and resistant to rot.
10:59And it's also native.
11:01Endemic to Tassie.
11:03I really want to open that door.
11:04Yeah.
11:10I could do this all day.
11:24So beautiful.
11:29Definitely makes you feel very small.
11:32It's a unique place.
11:34For one thing, it's the largest sand island in the world.
11:37It's the only sand island in the world to have rainforest growing on it.
11:42Driving on the 75 mile beach takes people's breath away.
11:47You've got lazy rivers you can float down.
11:51Massive, vast sand dunes you can explore.
11:54It's got everything.
11:56And a lot of the unique features come from the fact that it is so old.
11:59It takes a long time for this to form.
12:01Good things take time, I guess.
12:03Gari in Queensland.
12:07Millions of years in the making.
12:09The name literally translates to paradise.
12:13I love this forest.
12:14This is one of my favourite places on the island.
12:15People like Pete take you to the best spots.
12:19From the forest to the beautiful beaches.
12:22And embedded in the sand on 75 mile beach is the rusty remains of SS Mohino.
12:28Shipwrecked here almost 100 years ago.
12:32I mean, if I was going to get stranded, this wouldn't be the worst spot.
12:35How good.
12:36We're at Eli Creek.
12:38I could do this all day.
12:46But my personal favourite.
12:50Whoa.
12:52Oh my gosh.
12:53Is Lake Mackenzie.
12:55It's so blue.
12:57A perched dune lake, which means...
13:00The only way it gets water is through rainfall.
13:02The only way it loses it is through evaporation.
13:04They're quite a unique type of lake.
13:06And to give you an idea, there are about 100 lakes on the island.
13:10But this is certainly the jewel.
13:12This is the special one.
13:13Yeah.
13:15Kaleidoscope love.
13:17Kaleidoscope love.
13:19Gari, you are full of surprises.
13:25Gari is a quick detour off Queensland's Pacific Coastway.
13:29The ultimate coastal drive that takes you from rainforest, to reef, to this.
13:36We're heading into the coloured sands now, Rainbow Beach.
13:39Depending on which book you read, there's between 6 and 72 different colours of sand.
13:45And I think the guy who got 72 got a little bit carried away.
13:48I reckon he bought a Dulux colour chart and went off-white, off-white, dark white, champagne, beige.
13:54And this dunal system here runs all the way back down towards Noosa.
13:59It's so special because it's the oldest intact dunal system left on the planet.
14:03It goes back over 800,000 years, unchanged, untouched.
14:06The Dunes Tower, 80 metres over this stretch of Rainbow Beach.
14:11Suitably named the Coloured Sands, you can walk or drive this stunning stretch of coastline.
14:18I really enjoy bringing people here.
14:21And this particular area is one of the most beautiful on the beach at the moment.
14:24Oh my gosh, I love the pink.
14:26This is glorious, isn't it?
14:28Glorious indeed, Craig.
14:29Matches my outfit.
14:31But for a view with a bit more blue, steer south to Double Island Point Headland, where the lighthouse has been guiding sailors since 1884.
14:47And I think this is one of my favourite views yet.
14:52And back on the Pacific Coastway, I'm guided by my primal drive to eat.
14:57Yum.
14:58Being seaside calls for a surf club lunch, obviously.
15:08Refuelling is top priority today because tomorrow's adventure is going to be epic.
15:14And Queensland's weather gods are smiling this morning as we head a little further south to Double Island Point.
15:27I feel like I'm lost for words. It's so beautiful out here.
15:31It really is breathtaking.
15:32What I love most about Double Island Point is just the serene beauty.
15:42Just being away from the hustle and bustle of town and enjoying nature in its finest.
15:47Best enjoyed on an epic ocean adventures kayak.
15:53Yeah, turtle, turtle, turtle, turtle.
15:57Call in a turtle.
15:58Yeah, does it work?
15:59Yeah, turtle, turtle, turtle.
16:02Turtle?
16:04Over here!
16:05Oh my gosh, it worked!
16:07Oh my god, it did!
16:09Oh my god, it did!
16:12Oh my god.
16:14Oh.
16:15You won't.
16:16Hey!
16:18Hey!
16:19Hey!
16:22Hey.
16:23Hey, he's so great!
16:24Hey!
16:25Hey!
16:26Hey, hey!
16:27Hey!
16:29Hey!
16:31Oh my god!
16:32Hey!
16:33How that's to fi?
16:34There's nothing, no truth.
16:39Just considering the race of the winter contact behind you,
16:42In the wintertime, the Gelo is turned on at 10 o'clock.
16:45It's really spectacular.
16:47It feels like this is Geneva's equivalent
16:49of the keys to the city.
16:51Yes, it is.
16:52Three, two, one.
16:56Here it goes.
17:03The height of the Gelo is 140 meters.
17:06One of the most famous things in Switzerland.
17:09Ah, that is impressive.
17:12Yes, it's beautiful, isn't it?
17:13A giant waterspout in the middle of Switzerland's largest lake,
17:18listed among the great fountains of the world.
17:21For many, their first glimpse of Geneva.
17:25You must be able to see that Geneva over.
17:28But here's the surprising thing.
17:30The best vantage point isn't from this splash zone.
17:35It's from here, in France.
17:39Specifically, from Mos Salève, a mountain in the French Pre-Alps known as the Balcony of Geneva.
17:45Have a look at this view.
17:49The French Alps, over the other side are the Swiss Alps, and there, the Italian Alps.
17:55Sharing magical mountains and cuisine, this is the ultimate symbiotic relationship, European style.
18:02And in a continent renowned for its food, Geneva takes the unofficial title of gourmet capital of Switzerland.
18:10Dotted with Michelin-star restaurants, even Europe's first Ottolenghi.
18:14Bold, delicious flavors that pack a punch, much like their wines.
18:19Cheers.
18:24Santé.
18:25We don't get very much Swiss wine in Australia.
18:29No, most of the production is drink in Switzerland.
18:33Less than 30% exportation.
18:34It's so good you're not giving it to the rest of the world.
18:36Yes, yes, yes.
18:37So, when in Geneva, sample some delicious Swiss drops for yourself, whether on the country's longest vineyard walk, or in a wine cave.
18:49Oh, it's almost making me want a fondue.
18:52Mm.
18:57And, of course, where there's wine, there's cheese.
19:01They say stir, so the last bite is just as good as the first.
19:07Have a look at that.
19:09Could there be a better setting?
19:11Lake Geneva, fondue on a tuk-tuk.
19:18C'est bon, c'est magnifique.
19:21Yep, tucker on a tuk-tuk.
19:24This gives cheese wheels a whole new meaning.
19:27And, like most things here, I like it.
19:30I think sometimes they break them up into smaller pieces.
19:32A lot.
19:35And guides like Carlos only help elevate any Genevan experience.
19:40A lot of people like Geneva because Geneva, it's an international city.
19:46It's an international city.
19:47No.
19:48No.
19:49No.
19:50No.
19:51I don't regret anything.
19:53I don't regret anything.
19:57We are in the French speaking part of Switzerland.
19:59Edith Pierre feels like the right choice.
20:01It sounds like the right choice.
20:03No regretter.
20:06No, je ne regrette rien.
20:11Geneva may be the French-speaking city of Switzerland...
20:15Bonjour! Merci!
20:17..but they're the world's city of time.
20:24We always work with this.
20:26I thought you'd never ask.
20:28Alright, what's next?
20:30You're going to put the movement on the case?
20:34Yes.
20:37It's a piece of mechanic made by hand.
20:40All the brands come from here.
20:42I feel naked if I don't have a watch in my hand.
20:46I haven't actually needed the monocle yet.
20:49I like it as a fashion item.
20:51Initium is one of the few places
20:53where you can create your own watch from go to woe.
20:57Voila.
20:58Voila.
20:59Team.
21:01And we're at home the same day.
21:03Wow, have a look at that.
21:05That is beautiful.
21:06And you know what that is?
21:08It's time to go.
21:09Sorry.
21:10I love this watch.
21:13Me too.
21:14Something special to take home from Switzerland.
21:16From the finest quality watchmaking materials
21:19to edible options.
21:20Quite unexpected, just like Geneva.
21:23Mmm.
21:24Mmm.
21:25So many options of places to eat, drink, and ways to discover the city.
21:30Stay at Hotel Bristol.
21:33Their spa, the creme de la creme.
21:36And to top that, sun shining, zero degrees Celsius.
21:40There's only one thing left to do.
21:42Let's immerse ourselves.
21:43Like Geneva!
