00:02:44He let us know the very first time he saw a skateboard that it was something he was interested in.

00:02:51Well, so he was about three months old and we only sort of just had him about two or three weeks.

00:02:55And we went for a walk.
00:02:57A couple of guys came past on skateboards and he just went crazy.
00:03:00My style's over into the famous.
00:03:04They're always complaining, always complaining.
00:03:09If money is such a problem, well, they got matches.
00:03:16Think we should rob them.

00:03:19Took off after him?
00:03:20Straight at them, you know.
00:03:21And we were surprised because he was so small, but you could feel the strength in him.
00:03:25We thought he didn't like the noise.
00:03:27That's what our initial reaction was all.
00:03:29He doesn't like the noise and he's aggressive.
00:03:33Quite the opposite.
00:03:34He loves the noise and he's the most unaggressive dog you'll ever come across.
00:03:38Just about every dog in the world wants to go out and chase something.

00:03:44And some are very strong on it and some are very weak on it.
00:03:47Yeah, the odd dog is totally disinterested.
00:03:49But most dogs have this and that's why they want to chase something that moves.

00:08:10We're not too sure if it's asbestos or not,

00:08:15Yeah, it definitely would be asbestos,
00:08:17but it's actually in pretty good nick,
00:08:19so I reckon you might be able to get more mileage out of it just yet.
00:08:22But we'd have to get the experts in and see what they say.

00:09:11So I think we come up and we level that with paving.

00:09:16we can clad there and make that a cooking station.

00:09:19Yeah, and then we can have an area for a table and chairs up there
00:09:22and enclose it in lots of lovely planting.

00:09:24And then the old laundry, we can turn it into a little bit of a server.

00:09:53Now, lucky for us, Brad has cleared out all this soil,
00:09:57which is perfect for a deck
00:09:58because we need to have clearance of at least 150 underneath our timber.
00:10:02So now that it's done, we're just digging our post holes.
00:10:04We're going down about 600 deep.
00:10:06We'll set them in.
00:10:07We'll be able to put our bearers on our posts
00:10:09and then set our joist at 450 centres.
00:10:12This is pretty easy digging, isn't it, Pete?
00:10:14I'll take this any day.
00:10:26This area up here at the top of the garden
00:10:28is going to be our main entertaining paved space
00:10:30and we are going to have a cooking station over there.
00:10:33But because it's so uneven, I want it to be nice and level.
00:10:35For that, I need to bring it up
00:10:36and when you bring it up, you need to retain the sub base.
00:10:41For that, I'm using some Shapescaper steel edging.
00:10:44Now, I absolutely love this stuff.
00:10:46You normally see me use it in a garden bed
00:10:47where you just put a stake in the ground and you hook it up.
00:10:49But when you've got concrete, you just can't use the stakes.
00:10:52So I'm just using some angle brackets,
00:10:54which I'll attach to this concrete hob wall
00:10:56to give me a nice, secure edge.
00:10:59We're going 150 step up,
00:11:00so it's a nice step up from Adam's deck.
00:11:02But it does come in a huge range of sizes,
00:11:04so it's really versatile and will suit most gardens.
00:11:07With all the holes dug, they're about 600 mil deep,
00:11:32and now we're ready to put the posts in.
00:11:34For that, we're just using some H4 treated pine.
00:11:37You want to make sure the main part
00:11:39is you get some concrete underneath the post
00:11:41and obviously all the way around it.
00:11:43That way, it supports the lake.
00:11:44As we wrap around the back of Adam's deck,
00:12:02I'm going to have a planter box.
00:12:04I'm using the same steel, but in a higher profile.
00:12:07That means we're going to get more soil in here
00:12:08and better success with our plants.
00:12:10Now, I'm actually using a prefabricated corner,
00:12:13but you can bend it yourself on-site if you want.
00:12:15If you don't have a right angle,
00:12:16they can do custom work for you as well.
00:12:27Come on, let me pull you up.

00:14:07of sort of high-density developments
00:14:09that are springing up
00:14:10absolutely everywhere.
00:14:11It's got that vibe of a mini-city,
00:14:13which is like Chatswood next door.
00:14:15Yeah, well, I'll tell you what,
00:14:16I feel like I need to head off
00:14:17and do a bit of real estate research
00:14:18for myself,
00:14:19and I reckon I can guess
00:14:20the direction you're in.
00:14:21I'm sure you can.
00:14:35If you love history,
00:14:36walking the back streets
00:14:37of Crow's Nest,
00:14:39you can certainly get
00:14:39your historic fix.
00:14:41Now, the suburb first took shape
00:14:43in 1821,

00:14:54the suburb has grown up

00:14:58from Federation,
00:15:00Queen Anne,
00:15:01with a beautiful timber detailing,
00:15:03the fretwork and ironwork.
00:15:05It's a full cross-range
00:15:07of architectural styles.
00:15:08Combine all that
00:15:09with the luxuries
00:15:10and conveniences
00:15:11of a modern city.

00:22:42get a good gnocchi.

00:22:44cut them in half.
00:22:47This also helps dry them out

00:25:37it rises to the top.
00:25:39That's when you know it's ready
00:25:39scoop it out.
00:25:41There we go.

00:25:56Gnocchis
00:25:56put them in the warm oven
00:25:57it's turned off
00:25:58just leave them there to warm.

00:26:07of butter

00:26:17a nice crack smell.

00:26:25until it's crisp.
00:26:27Add your capers
00:26:28and your juice
00:26:28about 100 grams.

00:26:40and the juice.
00:26:43Give that a start.

00:27:32Toss that in the bowl.
00:27:34A little bit of our dressing.
00:27:38Stir it.
00:27:40A bit of the green.

00:27:55I think that is a gnocchi

00:27:59will be impressed with.
00:28:00Do you remember that great Aussie film classic, babe?
00:28:22Well, it was set in the green heart of the southern highlands of New South Wales.
00:28:27Right here, in fact, in the rolling hills of Robertson.
00:28:30A rich volcanic soil and an abundance of rain.
00:28:34That has also helped to create some of the finest picture book gardens in the country.
00:28:39The Moorings is a 40 hectare heritage farm.
00:28:51It was established in the 1870s by a naval lieutenant.
00:28:56Now, back then, he bought 100 acres for 100 quid.
00:29:02A great deal.
00:29:03Today, the current owners have restored the original homestead and have extended it.
00:29:08But for me, what is really magical, they've also created a two-hectare ornamental landscape with foliage and year-round interest at its heart.
00:29:18Once you come down the driveway into the turning circle here, where the coach and fall would have dropped off its passengers to the homestead,
00:29:35it's a very different wintry look with these bare traceria branches going up into a grey sky.
00:29:41They create the skeleton, the bones, the structure of this garden, especially they're visible in winter.
00:29:48But, you know, there's a more permanent look in this garden that's here every single day.
00:29:53It's these clipped hedges of azaleas, of camellias.
00:29:57But the flowers are secondary to the forms and the shapes that they come in.
00:30:02And this is only the beginning.
00:30:13The Conifer Garden has to be the signature piece of this property.
00:30:17In fact, it's probably one of the best in the entire district.

00:31:06It's got that winter colour, doesn't it?
00:31:08Absolutely beautiful.
00:31:09Now, Don, obviously, has, what, has he got a horticultural degree or something?

00:31:18Wow.

00:31:19But he really had a passion for plants, obviously.

00:31:31So, Liz, how long does it take you to keep this conif garn looking so neat and tidy?
00:31:36Probably about a day and a half with the whole, all the fine little bits and pieces and having
00:31:42to get in.
00:31:43How often, though?
00:31:44Uh, probably every three months.
00:31:46Oh.
00:31:46Once it starts to get a little bit of, a little bit of legginess on it.
00:31:49Yeah, a bit of furry.
00:31:50A bit of furry.
00:31:51I just love this golden hanoki cypress.
00:31:55The interesting thing, it's like it's been sprayed with gold paint, because it's all gold
00:31:59on the top, but green underneath.
00:32:00Underneath.
00:32:00Yeah, there's always something to look at in the conifer garden all year round.
00:32:05It just gives that little bit extra.
00:32:06It's a real lift, isn't it?
00:32:08It's at the front of the house where the magic really reaches its peak, because you've got
00:32:21this wonderful view and the homestead itself.
00:32:24The tree, the poplar, was most likely planted by the naval lieutenant.
00:32:28It's a really old, old tree, well over a hundred years of age, like these beautiful brush box.
00:32:35This my excavation tool.
00:32:39In later years, the garden provided a great opportunity for Don and his wife Barbara to
00:32:47entertain the grandchildren, and they just loved the garden.
00:32:51It's really Don's plant selection that has helped Les create these beautiful clipped hedges
00:32:57and domes and shapes, like this Eliagnus here.
00:33:00There is a bit of variegation in it, but it's nice and tight and compact.
00:33:04The secret when you're wanting to select these plants is small, twiggy leaves and twiggy growth.
00:33:10Bigger leaves, you've got too many gaps in the dome.
00:33:13And look at this Laura Petalum.
00:33:15Just look across the top there, you can see those pink new growths up against a blue sky.
00:33:19It really is quite stunning.
00:33:21But the scene is set by this beautiful conifer archway.
00:33:26As you go through, don't forget to look up to see the bones, the structure that creates
00:33:31this wonderful archway.
00:33:34The fascinating thing is that every room, including the conservatory, looks out over
00:33:54this spectacular view.
00:33:56Do you know, it doesn't matter what century you're building in, that real estate saying
00:34:01of position, position, position, still holds firm.
00:34:05It's all about this glorious view.

00:35:22From a backyard that was a concrete jungle to a beautiful entertainment zone.
00:35:32Well, that's the plan that Charlie and I have anyway.
00:35:38And for our decking boards, we've gone with a nice hardwood.
00:35:41Now, for this one, I have chosen Merbu or Merbau.
00:35:44Now, these are sustainably sourced.
00:35:46They come in beautiful long lengths.
00:35:48They'll span our whole deck and they're 140 wide.
00:35:50So, they're going to tie in with our fence and this whole entertainment area perfectly.
00:35:54It is well worthwhile putting some time and thought into your paving layout
00:36:22because you do need to consider drainage.
00:36:24Now, think of this as a big umbrella that's going to catch water.
00:36:27You need to direct that somewhere else.
00:36:29You don't want to send it to the neighbours.
00:36:30And I want a nice flat line here so when it meets Adam's deck, it looks like it's well thought out.
00:36:35So, we're draining upwards this way.
00:36:38That also sets my layout for my pavers.
00:36:39I'm using 600 by 400 because I want that contemporary look.
00:36:42But I'm doing a stack bond back just to accentuate the lines of the decking.
00:36:46Now, this is a colour called cypress.
00:36:47And I know what you're saying.
00:36:48Why are you using a light colour like cypress when it comes to an entertaining space?
00:36:52Well, these have been pre-sealed so you can spill as much wine on them as you like.
00:36:55It's just like paradise standing in the light

00:37:33And what we're going to do is slide it into place
00:37:35and use this existing fence on each side to fix it off.
00:37:39And then I'm going to get some shiplap cladding out of the cement sheet
00:37:42and we'll clad it. It's going to look fantastic.
00:37:54Before we can move on with the rest of the garden
00:38:08we have to address the asbestos on the shed
00:38:11So, we've brought in the professionals to sort that out.

00:38:48there's a heap of information we want to share with you
00:38:51about the safe testing and removal of asbestos.

00:43:23And if you are a lover of matcha, then this is the recipe for you.
00:43:28My white chocolate matcha and macadamia brownie.
00:43:31So we're going to start off with melting the white chocolate.
00:43:35Here I've got 175 grams of white chocolate.
00:43:39I'm going to chop them into smaller bits.
00:43:47I'm going to melt the white chocolate on a double boiler.
00:43:51All you need is a saucepan and a bowl with water underneath it boiling.
00:43:59Now to that, I'm going to add 195 grams of unsalted butter.
00:44:11This will take no time to melt.
00:44:15Just keep an eye on that.
00:44:21That is done.
00:44:26It's nice and smooth.
00:44:28I'm going to take it off the saucepan
00:44:29because what I want to do is I want to cool it down
00:44:33before I mix it in with the other ingredients.
00:44:37In a separate bowl,
00:44:39I'm going to mix 220 grams of white granulated sugar.
00:44:48Three eggs.
00:44:51So it looks like the sugar has melted.
00:45:06I'm going to add about one tablespoon of vanilla essence.
00:45:14I'm going to see what the temperature is like
00:45:18with the white chocolate
00:45:20because you don't want to add it
00:45:21while it's still too hot
00:45:24because I don't really want to cook the eggs.
00:45:30Add this to my egg and sugar mixture.
00:45:39Next, the dry ingredients.
00:45:41Sifting 145 grams of all-purpose flour.
00:45:50I've got two tablespoons of ceremonial-grade matcha.
00:45:54I suggest to get the ceremonial-grade matcha for this recipe.
00:46:02Sift that in with the flour.
00:46:04Sift that in with the flour.
00:46:05I've got sea salt here.
00:46:09Got one teaspoon.
00:46:13If it's a coarse sea salt,
00:46:14try and break the little granules a little bit
00:46:18before you put it in.
00:46:20Okay.
00:46:21give it a quick stir
00:46:24and now I'm going to add it to the wet ingredients
00:46:32add a couple of tablespoons at a time
00:46:35and just fold it through
00:46:37it's a white chocolate brownie
00:46:51so I've got more white chocolate
00:46:54here I've got 150 grams of white chalk chips
00:46:59you can add as little or as much as you want
00:47:02but try to stay away from too much
00:47:06because you don't want it to be too sweet either
00:47:08so just slowly fold that in
00:47:11and then I've got the macadamia nuts
00:47:16I'm going to give it a quick rough chop of the macadamia nuts
00:47:22I've lined 20 by 20 centimetre pan
00:47:39with some baking paper
00:47:40it is going to taste delicious
00:47:45into the oven at 160 degrees
00:47:51for about 25 minutes
00:47:56this looks just about done
00:48:07and you can still see a little bit of the batter on it
00:48:15and that's perfect
00:48:17two hours to cool down
00:48:22before we serve it
00:48:24it's going to be easy now to just lift that up
00:48:36and take all of that out
00:48:43and for the topping
00:48:46you can leave it as it is
00:48:48doesn't make a difference
00:48:49but if you want to make it look a little bit prettier
00:48:52just a slight dust of matcha powder
00:48:57I'm going to take the biggest one here

00:52:32and then Sword Shape
00:52:33in this Sansevieria Moonlight
00:52:35it's going to give us
00:52:36a really nice planting scheme

01:00:17we're so lucky to see these beautiful red hot pokers

01:00:22this variety is tall and elegant
01:00:24with these great spires
01:00:26these flames of orange and red
01:00:28it's a real standout here
01:00:30looking across the landscape
01:00:32and the pond
01:00:33looks even more mysterious
01:00:35the brilliance of the owner
01:00:48to create these intimate enclosed spaces
01:00:51garden rooms if you like
01:00:53we've seen so much of
01:00:55but here
01:00:56he's thrown the garden design book out
01:00:59and created something completely different
01:01:01this is the sculpture garden
01:01:03but he's allowed the trees to tell their story
01:01:14whether it's conical
01:01:15weeping
01:01:16vase shape
01:01:17whatever the trees are
01:01:18they're looking natural
01:01:19but instead of enclosing
01:01:21he's pulled the curtains back
01:01:23in a maybe Japanese borrowed landscape style
01:01:26and what a landscape it is
01:01:28this is the Yarrawa brush
01:01:29the last remnant cool climate rainforest in the area
01:01:33highly protected
01:01:35and what a vista
01:01:36the fascinating thing about this garden
01:01:48the more you explore
01:01:49the more you discover
01:01:50and this area here
01:01:51could be no more of a contrast
01:01:53than the one that we've just been in
01:01:55here it reminds me
01:02:03that so many people ask me
01:02:05oh what happens when I grow these beautiful trees
01:02:07and it creates a totally different environment
01:02:10shade
01:02:11moist soil
01:02:12and all your roses and azaleas
01:02:14and things tend to disappear
01:02:15well why not go for Australian
01:02:17beautiful ferns
01:02:19we've got a fantastic collection of ferns
01:02:21that grow in these sorts of locations
01:02:23the tree ferns
01:02:24these beautiful bird's nest ferns
01:02:26I just love them
01:02:27they're so dramatic
01:02:28and sculptural
01:02:29architectural in a garden
01:02:31rasp fern
01:02:32talk about architecture
01:02:33as a ground cover
01:02:34and then of course
01:02:35yep
01:02:36good old bracken fern
01:02:37we're always poisoning it
01:02:38to get rid of it
01:02:39no let it go wild
01:02:40and here you've got a beautiful scene
01:02:43an evergreen
01:02:44every day of the year
01:02:46looking beautiful
01:02:47you know it never ceased to amaze me
01:03:00how these grand
01:03:01extensive gardens
01:03:02in the country
01:03:03are filled with great ideas
01:03:05that we can borrow
01:03:06maybe it's a case of just
01:03:08setting up a theme
01:03:09or possibly selecting some plants
01:03:11that will really
01:03:12you can clip and train
01:03:14or looking at some of the
01:03:16conifers that were always good
01:03:18and still are
01:03:18and lots of permanent
01:03:20annual colour
01:03:21in our gardens
01:03:22and we have the owners
01:03:24to thank for creating
01:03:25something so special
01:03:26and sharing it with us
01:03:27but you know
01:03:28that's what the gardeners do
01:03:29the problem with curtains like this
01:03:38is that when you use them
01:03:39for privacy during the day
01:03:40you're also blocking out
01:03:42all of that natural sunlight
01:03:44but I have a great trick
01:03:45for your curtains
01:03:46that's not only practical
01:03:47it also looks amazing
01:03:48I'm using a double rod
01:04:07and that will allow me
01:04:08to put a block out blind
01:04:09closest to the window
01:04:10and then a lovely soft
01:04:12sheer on the inside
01:04:13and I've also put in
01:04:15this timber helmet
01:04:17from the ceiling
01:04:18and that's going to give it
01:04:18a much more elevated
01:04:20high-end look
01:04:20because it will hide
01:04:22all of that hardware
01:04:23custom-made curtains
01:04:35can be really expensive
01:04:37but this is a brilliant way
01:04:39to get the same look
01:04:40using ready-made curtains
01:04:42traditionally
01:04:43with a double rod
01:04:44the curtains would be hung
01:04:45in the opposite way
01:04:46so the sheer would be
01:04:47closest to the window
01:04:48but this way
01:04:48is much more contemporary
01:04:50and makes a whole lot
01:04:51more sense to me
01:04:52because having the block out
01:04:53closest to the light source
01:04:55means that you're blocking out
01:04:56more light
01:04:57and then this lovely soft layer
01:04:59on the inside of the room
01:05:00adds another detail
01:05:01to the design
01:05:03now that we've added in
01:05:06some more texture
01:05:07and detail to this bedroom
01:05:08you can see how these
01:05:09gorgeous soft curtains
01:05:11really elevate the space
01:05:12one of the key features
01:05:16of hanging your curtains
01:05:17like this
01:05:17is that you can control
01:05:19the level of privacy
01:05:20and also the amount of light
01:05:22coming into the room
01:05:23and another trick
01:05:24is to hang your curtains
01:05:25wall-to-wall
01:05:27and from the ceiling
01:05:28that way you get
01:05:29that really luxurious look
01:05:30the pelmet helps with that as well
01:05:33and I think you'll agree
01:05:34for off-the-shelf curtains
01:05:35these ones look pretty high-end
