00:00:00Well, lifestyle and location, two words that sum up what makes a suburb great, especially
00:00:11in a big city.
00:00:12And Sydney's Lowell North Shore is what we're talking about here.
00:00:15I mean, Jo, take a look at this view.
00:00:17Honestly, I wish that we could stand here and soak that up all day, but Pete, you and
00:00:21I are going to be getting our steps up as we actually suss out a suburb that's going
00:00:24through some major changes right now.
00:00:26While also hopefully retaining the history and heritage that make it unique.
00:00:30Yeah, we are checking out the past and the future and plenty more coming up on Better
00:00:34Homes and Gardens as well.
00:00:37Tonight, Dr Harry's carving up the skate park with a gnarly dude.
00:00:43So what has four legs and four wheels?
00:00:45Giotto, the skating king.
00:00:49When your garden's got more concrete than the Acropolis, it's time to call in the A-Team.
00:00:55This is going to be like a perfect outdoor entertaining spot.
00:00:57Is that where we've got to start working now?
00:00:59Colin's pillow-y potato dumpling recipe is more than just a puff piece.
00:01:04Today, I'm going to make you a special gnocchi, which is a green gnocchi with burnt butter
00:01:08and lemon.
00:01:09Visit a fairy-tale garden that's brimming with magic.
00:01:13And this is only the beginning.
00:01:15Plus, we all love a good cuppa with dessert.
00:01:20But what if it is dessert?
00:01:22Matcha, white chocolate and macadamia nuts can't get any better than this.
00:01:28Matcha, white Пines, black and macadamia nuts can get any better than this.
00:01:39Most dogs love to go for a run on grass.
00:01:43But not my next dog.
00:01:44But concrete.
00:01:55Good morning, good morning.
00:01:56How are you, bud?
00:01:57Morning, brother.
00:01:58Good to see you, Greg.
00:01:59Very nice to see you, too.
00:02:01How are you?
00:02:01I'm here to have a look at this wonderful dog of yours.
00:02:04Right?
00:02:04Right.
00:02:05There's so many things this dog can do.
00:02:14He's able to go uphill using his hind feet to push himself.
00:02:24That's a learned skill.
00:02:26It's all him.
00:02:27Yeah, he lifts one leg up to counter the balance.
00:02:29And you'll see him with three paws on the board and one up as he's turning.
00:02:32I mean, he looks like a pro.
00:02:35No, it's all self-taught.
00:02:36He's done it all himself.
00:02:38We don't know why he likes this.
00:02:40We have no idea why he's into skateboarding.
00:02:44He let us know the very first time he saw a skateboard that it was something he was interested in.
00:02:48So what happened?
00:02:49What was that occasion?
00:02:51Well, so he was about three months old and we only sort of just had him about two or three weeks.
00:02:55Yeah.
00:02:55And we went for a walk.
00:02:57A couple of guys came past on skateboards and he just went crazy.
00:03:00My style's over into the famous.
00:03:04They're always complaining, always complaining.
00:03:09If money is such a problem, well, they got matches.
00:03:16Think we should rob them.
00:03:18Well, took off after them.
00:03:20Straight at them, you know, and we were surprised because he was so small, but you could feel the strength in him.
00:03:25We thought he didn't like the noise.
00:03:27That's what our initial reaction was all, he doesn't like the noise and he's aggressive.
00:03:33Quite the opposite.
00:03:34He loves the noise and he's the most unaggressive dog you'll ever come across.
00:03:38Just about every dog in the world wants to go out and chase something.
00:03:43Yeah.
00:03:43Right?
00:03:43Yep.
00:03:44And some are very strong on it and some are very weak on it and, yeah, the odd dog is totally disinterested.
00:03:49But most dogs have this and that's why they want to chase something that moves.
00:04:03He likes company, doesn't he?
00:04:05He loves it.
00:04:06Yeah.
00:04:06Loves kids.
00:04:07Yeah.
00:04:07He's almost a pro in the...
00:04:08He loves children and women.
00:04:10He's a...
00:04:10He actually likes to show off.
00:04:14What does he weigh?
00:04:1630, almost 32 kilos.
00:04:18It's a pretty nuggety sort of doc, isn't it?
00:04:20Yeah, yeah, he's a chunk.
00:04:21And the difference between him and, say, a person on a skateboard is that he's got a much lower centre of gravity...
00:04:27He has.
00:04:28...than a person riding it.
00:04:29So he should have a better sense of balance.
00:04:32And four legs.
00:04:33Exactly.
00:04:33So you built in the skateboard, didn't you?
00:04:37Yes.
00:04:37You made it a bit wider?
00:04:39Yeah, well, I made it to his body.
00:04:40Okay.
00:04:41So his shoulder width is the width of the skateboard.
00:04:43Yep.
00:04:44And the length's one third longer than his body length, so he's got a bit of room to manoeuvre.
00:04:47You're a technical individual, aren't you?
00:04:49Engineer.
00:04:51Well done, mate.
00:04:52Well done.
00:04:53Oh!
00:04:53Oh!
00:05:02What do people think about him, you know?
00:05:06Does he attract attention when he's not skating, when he's just walking around?
00:05:11But a lot of people stop us and they're just like bulldogs.
00:05:14People like bulldogs.
00:05:15What do they ask you about him?
00:05:16Do they ask you how you train him to do all of these things?
00:05:18What do they ask you?
00:05:19Everybody.
00:05:21It's the standard question, how did you get him to do that?
00:05:29Tell me about your social media engagements with him.
00:05:32Probably 16, 20 million views of his videos.
00:05:4220 million?
00:05:43Yeah.
00:05:44I think that's fantastic, you know?
00:05:46And people will talk about Giotto and his skills.
00:05:49And the great thing about it is, mate, that, you know, he taught himself.
00:05:53He's a very inventive dog.
00:05:54Giotto!
00:05:56Giotto!
00:05:58Giotto!
00:05:58Giotto!
00:05:58Giotto!
00:05:58Giotto!
00:05:59Giotto!
00:05:59Giotto!
00:05:59A dog like this fills your life a little bit, you know?
00:06:02That would be the understatement of the century.
00:06:06That really would, because this dog is everything to everybody.
00:06:10You know, he is an amazing dog.
00:06:12He's a one in a million dog.
00:06:14He really is.
00:06:14Have you got a mixture of levels and finishes?
00:06:21Well, I've got an easy solution.
00:06:22Just pave over the top.
00:06:24This is the setting of a storybook garden that shines all year round.
00:06:37This segment is brought to you by Shapescaper,
00:06:40the Australian-made modular steel landscaping system.
00:06:44Oh, Charlie, it's a bit nippy this morning.
00:06:48Man up, mate.
00:06:49Come on, you've been, like, snowmanning and skating through Canada.
00:06:52It's not that bad.
00:06:53Mate, that was hard work, trying to stay upright.
00:06:55But most importantly, we've got a winter backyard makeover.
00:06:58Absolutely, we do.
00:06:59Now, this one's a little bit old school and a little bit quirky,
00:07:01but we can do quirky, right?
00:07:02Oh, I love quirky.
00:07:03It's a nice bit of grass here.
00:07:10Yeah.
00:07:10Bit of buffalo, is it?
00:07:11Yeah.
00:07:13Jackie, Brad, nice to see you guys getting stuck into the work already.
00:07:16Yeah.
00:07:17How are we, guys?
00:07:18What is this?
00:07:18Like a giant sand pit?
00:07:20Yeah.
00:07:20We've got a lot of work ahead of us.
00:07:22Was this little slice of heaven always part of the dream?
00:07:25We kind of overlooked this corner when we were house hunting,
00:07:28and now we've got to the point where we have to figure out what to do with it,
00:07:32and we have no idea.
00:07:34Have you guys got kids?
00:07:35We do.
00:07:35We've got two kids and then another one on the way.
00:07:37Congratulations.
00:07:39Very exciting times.
00:07:40Very busy times.
00:07:42Yes, indeed.
00:07:42Now, I've got to say, I have seen this style of backyard before,
00:07:46having some Italian heritage in me.
00:07:48It is very European, so it's basically,
00:07:50let's concrete the whole block and have a strip of grass.
00:07:53So they've done a fantastic job of that.
00:07:54Well, you'd want your greenhouses up here.
00:07:56Yes.
00:07:56You know, your storage for your pots here.
00:07:58That's right.
00:07:58But you get all these trip hazards,
00:07:59and it's not exactly the safest for a young family, is it?
00:08:02Yeah, a little bit dangerous.
00:08:04So tell us a bit about the shed.
00:08:05Yeah, so it's an old outdoor laundry, as you can see.
00:08:08It's a little bit tired.
00:08:10We're not too sure if it's asbestos or not,
00:08:12and we're trying to work out whether we keep it or if we get rid of it.
00:08:15Yeah, it definitely would be asbestos,
00:08:17but it's actually in pretty good nick,
00:08:19so I reckon you might be able to get more mileage out of it just yet.
00:08:22But we'd have to get the experts in and see what they say.
00:08:25There's a bit going on.
00:08:26There is.
00:08:26We'll put our thinking caps on, eh?
00:08:27Leave it with us.
00:08:28That sounds amazing.
00:08:29I think you've got a big job ahead of you.
00:08:36Oh, Charlie, look, it's even got the old brick barbie here.
00:08:38Yeah, it does. Nice.
00:08:40But I tell you what, my brain hurts after all that thinking.
00:08:42Oh, hello.
00:08:44Where'd you get yours from?
00:08:45Well, your side of the wardrobe.
00:08:46Where'd you get yours from?
00:08:47Your side.
00:08:47Yeah, right.
00:08:48What have we come up with?
00:08:49Okay, so we've got a good bit of grass here for the kids,
00:08:52and I think we can turn this space into an entertaining area.
00:08:55So what do you think about building that for us?
00:08:57Yeah, definitely, yeah.
00:08:58So utilise that area where there's no concrete.
00:09:00We'll add a deck in,
00:09:01but leave a little cutout for a fire pit area.
00:09:03Oh, very nice.
00:09:04Now, because of the kids, I really need to level this out,
00:09:07but I really don't want to take away any of that concrete
00:09:10because it's just going to cost a fortune, right?
00:09:11So I think we come up and we level that with paving.
00:09:14Nice.
00:09:15Then where we've got our lovely shantytown,
00:09:16we can clad there and make that a cooking station.
00:09:18Hide it.
00:09:19Yeah, and then we can have an area for a table and chairs up there
00:09:22and enclose it in lots of lovely planting.
00:09:24Oh, I love it.
00:09:24And then the old laundry,
00:09:26we can turn it into a little bit of a server.
00:09:28Yeah.
00:09:29So then the whole area just flows.
00:09:30Well, that'd be nice.
00:09:31This is going to be like a perfect outdoor entertaining spot.
00:09:34Is that why we've got to start working now?
00:09:35I think so.
00:09:36Well, the sleeves are rolled up already, so...
00:09:37Let's do it.
00:09:38Do I add this back onto the shantytown?
00:09:44Yeah, if you could.
00:09:53Now, lucky for us, Brad has cleared out all this soil,
00:09:57which is perfect for a deck
00:09:58because we need to have clearance of at least 150 underneath our timber.
00:10:02So now that it's done, we're just digging our post holes.
00:10:04We're going down about 600 deep.
00:10:06We'll set them in.
00:10:07We'll be able to put our bearers on our posts
00:10:09and then set our joist at 450 centres.
00:10:12This is pretty easy digging, isn't it, Pete?
00:10:14I'll take this any day.
00:10:26This area up here at the top of the garden
00:10:28is going to be our main entertaining paved space
00:10:30and we are going to have a cooking station over there.
00:10:33But because it's so uneven, I want it to be nice and level.
00:10:35For that, I need to bring it up.
00:10:37And when you bring it up, you need to retain the sub base.
00:10:41For that, I'm using some Shapescaper steel edging.
00:10:44Now, I absolutely love this stuff.
00:10:46You normally see me use it in a garden bed
00:10:47where you just put a stake in the ground and you hook it up.
00:10:49But when you've got concrete, you just can't use the stakes.
00:10:52So I'm just using some angle brackets,
00:10:54which I'll attach to this concrete hob wall
00:10:56to give me a nice secure edge.
00:10:59We're going 150 step up,
00:11:00so it's a nice step up from Adam's deck.
00:11:02But it does come in a huge range of sizes,
00:11:04so it's really versatile and will suit most gardens.
00:11:07With all the holes dug, they're about 600 mil deep,
00:11:32and now we're ready to put the posts in for that.
00:11:34We're just using some H4 treated pine.
00:11:37You want to make sure the main part
00:11:39is you get some concrete underneath the post
00:11:41and obviously all the way around it.
00:11:43That way, it supports the lake.
00:12:00As we wrap around the back of Adam's deck,
00:12:02I'm going to have a planter box.
00:12:04I'm using the same steel but in a higher profile.
00:12:07That means we're going to get more soil in here
00:12:08and better success with our plants.
00:12:10Now, I'm actually using a prefabricated corner,
00:12:13but you can bend it yourself on site if you want.
00:12:15If you don't have a right angle,
00:12:16they can do custom work for you as well.
00:12:18Come on, let me pull you up.
00:12:28All right, all right.
00:12:29Oh, there we go.
00:12:29Look at you, you're utilising these massive muscles of mine, huh?
00:12:32I am.
00:12:33I'm freeing my mind to think about paving
00:12:36whilst you do the hard work.
00:12:37Oh, wow.
00:12:38When did you get so spiritual?
00:12:39Well, when the wheelbarrow turned up.
00:12:41Okay.
00:12:42Pretty clever.
00:12:43Clever, isn't it?
00:12:43This sand is going to cover a multitude of sins, Adam.
00:12:48Well, a cracking start and stick around
00:12:50because a little later,
00:12:51the decking and paving
00:12:52will start bringing the backyard puzzle together.
00:12:57What's important to you
00:12:58when you're looking for your dream suburb?
00:13:00We're getting our steps up
00:13:01on a walking tour to find out.
00:13:05Hot potato, hot potato.
00:13:06Now, this week we are cooking
00:13:07the perfect potato gnocchi.
00:13:17This segment is brought to you by VIEW.
00:13:20See all properties Australia-wide
00:13:22with VIEW.com.au.
00:13:24So Peak Process is turning out
00:13:38to be quite an enviable place
00:13:40for people to live.
00:13:41You've got the city,
00:13:42a stone's throw away.
00:13:43You've got heaps of dining options.
00:13:45You can still get a home
00:13:46in a green, leafy street.
00:13:48But best of all,
00:13:49it actually still has
00:13:50very much a sort of like
00:13:51welcoming community, village-y feel.
00:13:53It's got that vibe, doesn't it?
00:13:54I think it's going through
00:13:55its own little renaissance
00:13:57and that's partly due
00:13:58to the introduction of the Metrolink
00:13:59and look, people are really discovering
00:14:01this part of the North Shore.
00:14:02Well, at that transport hub
00:14:03you're talking about,
00:14:04you've got the Metrolink
00:14:04and the train station down the road.
00:14:06You also have a huge amount
00:14:07of sort of high-density developments
00:14:09that are springing up
00:14:10absolutely everywhere.
00:14:11It's got that vibe of a mini-city
00:14:13which is like Chatswood next door.
00:14:15Yeah, well, I'll tell you what,
00:14:16I feel like I need to head off
00:14:17and do a bit of real estate research
00:14:18for myself
00:14:19and I reckon I can guess
00:14:20the direction you're in.
00:14:21I'm sure you can.
00:14:23If you love history,
00:14:36walking the back streets of Crow's Nest,
00:14:39you can certainly get your historic fix.
00:14:41Now, the suburb first took shape in 1821
00:14:44thanks to a land grant
00:14:46to a bloke by the name of Edward Wilsencraft
00:14:49who built his home
00:14:50and called it Crow's Nest
00:14:52thanks to its commanding view.
00:14:53Since then,
00:14:54the suburb has grown up
00:14:55with a full cross-range
00:14:57of architectural styles
00:14:58from Federation,
00:15:00Queen Anne,
00:15:01with the beautiful timber detailing,
00:15:03the fretwork and ironwork.
00:15:05It's a full cross-range
00:15:07of architectural styles.
00:15:08Combine all that
00:15:09with the luxuries
00:15:10and conveniences
00:15:11of a modern city.
00:15:12I don't think that I like her anymore
00:15:16because they're all the same.
00:15:18All they want to do
00:15:19is break the heart,
00:15:21my heart.
00:15:22I don't think that I like her anymore
00:15:26because we're all the same.
00:15:27Wow, Ewan,
00:15:28this is just a wee bit gorgeous.
00:15:30Now, obviously,
00:15:31we're at the luxurious end
00:15:33of things that we're talking about.
00:15:34We certainly are.
00:15:35You're getting a larger size,
00:15:37definitely a bigger kitchen.
00:15:39You can see with the bench here.
00:15:40Also, you've got the big balcony
00:15:41and I think that's probably
00:15:43one of the big selling features of it
00:15:45is that you've got a lot of space
00:15:47and this is a different style of product
00:15:49than what we maybe have traditionally seen
00:15:51in Croesus in past years.
00:15:53But that's changed over time
00:15:55as more and more apartments
00:15:57have come along
00:15:58and as they build newer and newer buildings,
00:16:00you get a much different standard
00:16:02and the standard's always going up.
00:16:03Can you still get in at an affordable price?
00:16:06Like, give me the range
00:16:07of what you can get in.
00:16:08Well, I mean,
00:16:09we could sell you a little studio,
00:16:11like a studio apartment
00:16:12in the middle of Crow's Nest itself.
00:16:14So, you know,
00:16:15they're very good value,
00:16:17you know,
00:16:17anywhere around that 600 mark.
00:16:18Then you can have one bedroom, 700.
00:16:21What's the top end price, roughly,
00:16:24that you're talking about, Beau?
00:16:25Well, I mean,
00:16:26you could spend 5 million.
00:16:27Are you finding that they're
00:16:28selling the more traditional homes
00:16:30because of the convenience of transport
00:16:33and everything else you're talking about?
00:16:33Yeah, interestingly,
00:16:34I think the transport's made a big difference,
00:16:36even though we've had
00:16:37St. Leonard's station here,
00:16:38obviously, for a long time.
00:16:39But the Crow's Nest Metro
00:16:40has changed the dynamic completely.
00:16:42Crow's Nest into the city,
00:16:44it's like minutes.
00:16:44Yeah.
00:16:45And then what about the future?
00:16:46Where's it going
00:16:47in the direction that it's heading in?
00:16:49To be able to have this scale
00:16:50of redevelopment
00:16:51so close to the CBD,
00:16:53it's...
00:16:54Almost unheard of.
00:16:55Yeah, unheard of,
00:16:55and I think it's almost
00:16:56a once-in-a-lifetime opportunity.
00:16:59Well done, you.
00:16:59You were in the right place
00:17:00at the right time.
00:17:02After 30 years,
00:17:03you'd have something.
00:17:04I can beat this feeling
00:17:05in my heart
00:17:07Something that I can't describe
00:17:09So if you've been listening to Ewan
00:17:12and he's piqued your interest,
00:17:14do yourself a favour
00:17:15and download the view.com.au app.
00:17:18I mean, apart from the fact
00:17:18it has so much detail
00:17:20on any suburb
00:17:21that you're looking at,
00:17:21quite comprehensive, in fact,
00:17:23I reckon with real estate,
00:17:24one of the first things
00:17:25that people ask themselves
00:17:26is how much could I borrow
00:17:27and what will my repayments be?
00:17:29You can just go straight
00:17:30to this little home loans tab
00:17:31and look at that.
00:17:32It says it all.
00:17:33Home loans made simple.
00:17:34It's got a borrowing calculator.
00:17:36You can actually check
00:17:37your borrowing power.
00:17:38You can work out
00:17:38what your repayments will be.
00:17:40There's also these great
00:17:41step-by-step guys.
00:17:42So at no stage
00:17:43throughout the process
00:17:43will you feel overwhelmed.
00:17:45There's just so much information.
00:17:53Mr. Pete?
00:17:56Yeah?
00:17:57But I was talking with Ewan
00:17:58about the future of Crow's Nest.
00:18:00Yeah, well, talking about the future,
00:18:01these guys should mark.
00:18:03Awesome.
00:18:05Hello, Luke.
00:18:06How are you?
00:18:06Nice to see you guys.
00:18:07Welcome to Elevate,
00:18:08Hume Place in Crow's Nest.
00:18:10This is actually such an awesome set-up.
00:18:11So this is it, hey?
00:18:13You bet.
00:18:13We're standing right here
00:18:15and this is known as Hume Place.
00:18:17Elevate is the only build-to-sell
00:18:19component of the development.
00:18:21We're very proud.
00:18:22This element is the only project
00:18:25in the state so far
00:18:26to give housing
00:18:27for keen essential workers
00:18:29in perpetuity
00:18:30for the healthcare network
00:18:31locally here in Crow's Nest.
00:18:33Wow, that's great.
00:18:34And then the last element
00:18:35of Hume Place
00:18:36is our build-to-rent components.
00:18:38Fantastic.
00:18:39That's seriously cool.
00:18:40Yeah.
00:18:40Well, I know a lot of people are excited,
00:18:42so let's go have a look.
00:18:42Cool.
00:18:47Here it is.
00:18:49Oh, my goodness.
00:18:50I mean,
00:18:51if you want to immerse yourself
00:18:52in a space,
00:18:53I don't think I've ever
00:18:53actually seen anything
00:18:54on this scale.
00:18:55Well, look,
00:18:56we believe
00:18:56when you buy something
00:18:57off the plan,
00:18:58it needs to be
00:18:59the best experience possible
00:19:01and this is basically
00:19:02what you're going to get.
00:19:03Now, I've been walking
00:19:04through some of the beautiful,
00:19:06charming heritage streets.
00:19:07How do you balance
00:19:08what you're doing,
00:19:08new development,
00:19:10with the old world charm?
00:19:11Well, you bet.
00:19:12The reason we love
00:19:13this site so much,
00:19:14it's right in the middle
00:19:15of Crow's Nest Village
00:19:16and it's that old
00:19:17architecture combining
00:19:18with this new modern
00:19:20high-rise
00:19:21and I think we've got
00:19:22the balance right.
00:19:23Our podium is wrapped
00:19:24in old bricks
00:19:25that looks beautiful
00:19:26and timeless
00:19:26and now people get to live
00:19:28above the metro,
00:19:29the only site in Sydney
00:19:30in your minutes
00:19:31just to anywhere.
00:19:32To think that we're getting
00:19:33to build a once-in-a-generation
00:19:35project on top of
00:19:37a billion-dollar piece
00:19:38of infrastructure,
00:19:39it's a dream come true
00:19:40for Third Eye
00:19:41and I think the residents
00:19:42are going to love it.
00:19:50Well, Pete,
00:19:51as we've touched on,
00:19:51I think the real appeal
00:19:52of Crow's Nest
00:19:53is that mix of the old
00:19:54and the new.
00:19:55I mean, it really does
00:19:55encapsulate what a lot
00:19:57of suburbs are experiencing
00:19:58in the 21st century.
00:19:59Yep, and it's good
00:20:00to see the old
00:20:01being retained, Grigsy.
00:20:02You're talking about me.
00:20:03No, in the form
00:20:04of gorgeous little
00:20:05herity tones
00:20:06got along the suburban streets
00:20:08off the main track.
00:20:09Although, I don't think
00:20:10we have focused on
00:20:10one of the most
00:20:11important things.
00:20:12I bet.
00:20:12The restaurant.
00:20:13You hungry?
00:20:14Always.
00:20:17Coming up,
00:20:17meet the little balls
00:20:18of potato
00:20:19giving pasta
00:20:20a run for its money.
00:20:22I think that is a gnocchi
00:20:24that even a nona
00:20:26would be proud of.
00:20:28Adam and Tarly
00:20:29will do whatever it takes
00:20:31to bring this
00:20:32entertaining space to life,
00:20:34no matter the consequences.
00:20:36I'll tell you what,
00:20:36this wind is not
00:20:37doing wonders
00:20:37for your hair, is it?
00:20:38I need some manscaping,
00:20:39that's for sure.
00:20:40And their colour
00:20:41may be curious,
00:20:43but these brownies
00:20:44are off the charts great.
00:20:46That whole batter
00:20:48is going to turn
00:20:49bright green.
00:20:57All right, believe it or not,
00:20:59this accent
00:21:00is not Italian.
00:21:02But I can cook gnocchi,
00:21:03and today I'm going to make you
00:21:05a special gnocchi,
00:21:06which is a green gnocchi
00:21:07with burnt butter sauce
00:21:09and baby beets.
00:21:14All right, so basically,
00:21:15gnocchi is potatoes,
00:21:17it's flour,
00:21:18and it's eggs,
00:21:19and you can flavour it
00:21:20with herbs.
00:21:21You want your potato
00:21:22as dry as possible.
00:21:24So what you're going to do
00:21:25is you've got your potatoes.
00:21:27I line the bottom of the tray
00:21:28with some rock salt,
00:21:29just some cheap rock salt.
00:21:31I lay the potatoes
00:21:32on the salt.
00:21:33So it's about 10,
00:21:3411 potatoes,
00:21:35which is 1.2 kilos,
00:21:37in the oven
00:21:38for about 40 minutes
00:21:39to an hour
00:21:40until they're beautiful
00:21:41and soft.
00:21:41I like to flavour
00:21:42the flour with the herbs,
00:21:44so you get all that green
00:21:46running through the gnocchi
00:21:46and you get all the flavour.
00:21:47And the best way to do it
00:21:48is to blend it.
00:21:49I've got about 110 grams
00:21:53of flour,
00:21:54so that goes into my mixer,
00:21:56as messy as I can.
00:21:59A bunch of sage,
00:22:02that goes in.
00:22:05Rosemary,
00:22:07just take it off the stalk.
00:22:12Italian parsley,
00:22:13it's the only Italian bit
00:22:14in the dish.
00:22:16And now,
00:22:17just give it a blend.
00:22:19All right,
00:22:22so have a look at that.
00:22:24Oh, you can smell it.
00:22:31All right,
00:22:31so the potato,
00:22:33soft,
00:22:34salt's done all its job.
00:22:35What we want to do now is,
00:22:36there's no way around this,
00:22:37you've got to do it
00:22:38when it's hot.
00:22:39If the potato gets cold,
00:22:40the starch locks in
00:22:41and you're not going to
00:22:42get a good gnocchi.
00:22:43So you're just going to
00:22:44cut them in half.
00:22:47This also helps
00:22:48dry them out as well.
00:22:49All right,
00:23:00large bowl,
00:23:01potato ricer.
00:23:02If you don't have
00:23:03a potato ricer,
00:23:04you could just mash them
00:23:05up really fine.
00:23:06You're going to scoop out
00:23:07your hot potato
00:23:08into your ricer.
00:23:11Irishman's dream.
00:23:18All right,
00:23:22to the potato.
00:23:23You've got to cheese it up.
00:23:25Parmesan,
00:23:27about 200 grams.
00:23:31All right,
00:23:32we've got our flour
00:23:33we did earlier.
00:23:33All right,
00:23:38there's our flour.
00:23:40So I like to gently
00:23:42fold it through
00:23:43before we put the eggs in
00:23:44just to incorporate
00:23:45all that flour.
00:23:46Now we're going to add
00:23:47three egg yolks
00:23:48just to lock it together.
00:23:51This is what binds it.
00:23:52one.
00:24:00Two.
00:24:05And then the tool
00:24:06I use to bring it together,
00:24:09very kitchen-y,
00:24:10use a paint scraper.
00:24:13Because it helps get in.
00:24:15You don't really want to
00:24:16work it too much
00:24:16with your hands,
00:24:17you want to work it
00:24:17with the steel.
00:24:19So just chop it in.
00:24:25A little bit of our flour
00:24:27just on the bench.
00:24:29So it's all by touch.
00:24:31So just take it out.
00:24:32Obviously,
00:24:32you don't want it wet
00:24:33and gloopy.
00:24:35And all you want to do
00:24:36is you want to bring it together.
00:24:38It's not like bread,
00:24:39you don't want to knead it.
00:24:40You just want to bring it together.
00:24:47All right,
00:25:06just give your gnocchis
00:25:07a little squeeze
00:25:08just for presentation.
00:25:10Lay them on your tray.
00:25:11All right,
00:25:12just give your gnocchis
00:25:15a little squeeze,
00:25:16all right.
00:25:22Now what you do
00:25:23is straight into
00:25:24the boiling water.
00:25:29So,
00:25:29easy way to tell
00:25:30if your gnocchi's cooked.
00:25:31What happens is
00:25:32you drop it into
00:25:32the boiling water,
00:25:33it sinks to the bottom.
00:25:35As it cooks
00:25:35and the egg cooks inside,
00:25:37it rises to the top.
00:25:39That's when you know
00:25:39it's ready.
00:25:40Scoop it out.
00:25:41There we go.
00:25:44Look at that.
00:25:45A little bit more firm,
00:25:47not too firm.
00:25:55All right.
00:25:56Gnocchis,
00:25:56put them in the warm oven.
00:25:57It's turned off.
00:25:58Just leave them there to warm.
00:25:59Good gnocchi
00:26:00needs a good sauce.
00:26:02A good sauce
00:26:02can be a very simple sauce.
00:26:04So about 250,
00:26:06300 grams of butter
00:26:07into a warm pan.
00:26:09It's going to separate
00:26:10and it's going to caramelise.
00:26:11We're going to get
00:26:11a nice brown colour.
00:26:15Get our sage in
00:26:17so you're going to get
00:26:17a nice crack smell.
00:26:18You ready?
00:26:24Cook your sage
00:26:25until it's crisp.
00:26:27Add your capers
00:26:28and your juice.
00:26:29About 100 grams.
00:26:29Give it a stir.
00:26:36Oh yeah.
00:26:38Now I'm going to use
00:26:39the zest for the lemon
00:26:40and the juice.
00:26:51Give that a stir.
00:26:52Give it a stir.
00:26:55Beautiful.
00:26:58Just going to toss
00:26:59them through the sauce.
00:27:04So that's
00:27:04that.
00:27:08Right.
00:27:09So you've got your warm gnocchi.
00:27:10You've got your beautiful
00:27:11butter sauce.
00:27:22A pair of gnocchi
00:27:24with a vegetable
00:27:25that's in season
00:27:25so obviously
00:27:26raw baby beets.
00:27:28So just cut it
00:27:29nice and fine.
00:27:32Toss that in the bowl.
00:27:34A little bit of our dressing.
00:27:38Stir it.
00:27:40Bit of the green.
00:27:41Look at that.
00:27:45And then
00:27:46always,
00:27:48always
00:27:49more cheese.
00:27:52I think that
00:27:56is a gnocchi
00:27:57that even
00:27:57a nonna
00:27:59will be impressed with.
00:28:19Do you remember
00:28:20that great Aussie
00:28:21film classic,
00:28:22Babe?
00:28:22Well,
00:28:23it was set
00:28:23in the green heart
00:28:24of the southern
00:28:25highlands
00:28:26of New South Wales.
00:28:27Right here,
00:28:28in fact,
00:28:29in the rolling hills
00:28:30of Robertson.
00:28:31A rich volcanic soil
00:28:32and an abundance
00:28:33of rain.
00:28:34That has also
00:28:35helped to create
00:28:36some of the finest
00:28:37picture book gardens
00:28:38in the country.
00:28:47The Moorings
00:28:48is a 40 hectare
00:28:50heritage farm.
00:28:51It was established
00:28:52in the 1870s
00:28:54by a naval
00:28:56lieutenant.
00:28:57Now,
00:28:57back then,
00:28:58he bought
00:28:58100 acres
00:29:00for 100 quid.
00:29:02A great deal.
00:29:03Today,
00:29:04the current owners
00:29:05have restored
00:29:05the original homestead
00:29:06and have extended it.
00:29:09But for me,
00:29:09what is really magical,
00:29:11they've also created
00:29:12a two-hectare
00:29:13ornamental landscape
00:29:14with foliage
00:29:16and year-round interest
00:29:17at its heart.
00:29:28Once you come down
00:29:29the driveway
00:29:29into the turning circle
00:29:31here,
00:29:31where the coach
00:29:31and four would have
00:29:32dropped off its passengers
00:29:33to the homestead,
00:29:35it's a very different
00:29:36wintery look
00:29:37with these bare
00:29:38traceria branches
00:29:39going up into
00:29:40a grey sky.
00:29:41They create
00:29:42the skeleton,
00:29:43the bones,
00:29:44the structure
00:29:44of this garden,
00:29:45especially they're
00:29:46visible in winter.
00:29:48But, you know,
00:29:48there's a more
00:29:49permanent look
00:29:50in this garden
00:29:50that's here
00:29:51every single day.
00:29:53It's these clipped hedges
00:29:54of azaleas,
00:29:56of camellias.
00:29:57But the flowers
00:29:57are secondary
00:29:58to the forms
00:30:00and the shapes
00:30:00that they come in.
00:30:02And this is
00:30:02only the beginning.
00:30:13The Conifer Garden
00:30:14has to be
00:30:15the signature piece
00:30:16of this property.
00:30:17In fact,
00:30:18it's probably
00:30:18one of the best
00:30:20in the entire district.
00:30:26Hey, Les.
00:30:27Oh, great.
00:30:28How are you, mate?
00:30:29Yeah, good.
00:30:29Yourself?
00:30:30Good, good.
00:30:30Excellent.
00:30:31Thank you, pal.
00:30:32Wow.
00:30:32Is this your
00:30:33handiwork?
00:30:34It is, yes.
00:30:35Man, how long
00:30:36have you been
00:30:36doing that for?
00:30:37You're the head
00:30:38gardener, so, okay.
00:30:39Tell me how long
00:30:40you've been working
00:30:40on this.
00:30:41About ten years.
00:30:42You know,
00:30:42you've got
00:30:43cypress here.
00:30:44Yes.
00:30:44In fact,
00:30:44you've got
00:30:45copressus,
00:30:46platyclatus,
00:30:47you've got
00:30:47thuyas.
00:30:48In fact,
00:30:49it's a great
00:30:49collection.
00:30:50The owner,
00:30:51Don,
00:30:51really had a
00:30:52fascination with them.
00:30:54Don Dyer
00:30:54absolutely loves
00:30:56conifers,
00:30:56and so,
00:30:58yeah,
00:30:58he just,
00:30:59whatever he could
00:31:00find,
00:31:00he decided to
00:31:01plant.
00:31:02Well,
00:31:02he's gone
00:31:03right to the top.
00:31:04Look at the
00:31:04cryptomeria up there.
00:31:05Yep.
00:31:06It's got that
00:31:06winter colour,
00:31:07doesn't it?
00:31:08Absolutely beautiful.
00:31:09Now,
00:31:09Don,
00:31:10obviously,
00:31:10has,
00:31:11what,
00:31:11has he got a
00:31:12horticultural
00:31:12degree or something?
00:31:13No.
00:31:14Really?
00:31:14He's a
00:31:16nuclear physicist.
00:31:17Oh,
00:31:17really?
00:31:18Wow.
00:31:19Yep.
00:31:19But he really
00:31:20had a passion
00:31:21for plants,
00:31:21obviously.
00:31:22He did.
00:31:31So,
00:31:31Liz,
00:31:32how long does
00:31:32it take you
00:31:32to keep this
00:31:33conif garn
00:31:34looking so neat
00:31:35and tidy?
00:31:36Probably about
00:31:36a day and a half
00:31:37with the whole,
00:31:39all the fine
00:31:41little bits and
00:31:42pieces and
00:31:42having to get in.
00:31:43How often,
00:31:44though?
00:31:44Probably every
00:31:45three months.
00:31:46Oh,
00:31:46once it starts
00:31:47to get a little
00:31:47bit of,
00:31:48a little bit
00:31:49of legginess
00:31:49on it.
00:31:49Yeah,
00:31:50a bit of furry.
00:31:50A bit of furry.
00:31:51I just love
00:31:52this golden
00:31:53hanoki cypress.
00:31:55The interesting
00:31:55thing,
00:31:56it's like it's
00:31:56been sprayed
00:31:57with gold paint
00:31:57because it's
00:31:58all gold on
00:31:59the top
00:31:59but green
00:32:00underneath.
00:32:00Yeah,
00:32:01there's always
00:32:02something to
00:32:02look at in
00:32:03the conifer garden
00:32:04all year round.
00:32:05Just gives
00:32:06that little bit
00:32:06extra.
00:32:06It's a real
00:32:07lift,
00:32:07isn't it?
00:32:16It's at the
00:32:17front of the
00:32:18house where
00:32:18the magic
00:32:19really reaches
00:32:20its peak
00:32:20because you've
00:32:21got this
00:32:22wonderful view
00:32:22and the
00:32:23homestead itself.
00:32:24The tree,
00:32:25the poplar,
00:32:25was most likely
00:32:26planted by the
00:32:27naval lieutenant.
00:32:28It's a really
00:32:29old,
00:32:30old tree,
00:32:31well over
00:32:31100 years
00:32:32of age,
00:32:32like this
00:32:33beautiful
00:32:33brush box.
00:32:35This my
00:32:36excavation
00:32:38to rule.
00:32:40In later
00:32:42years,
00:32:42the garden
00:32:43provided a
00:32:44great opportunity
00:32:45for Don
00:32:45and his
00:32:46wife Barbara
00:32:46to entertain
00:32:47the grandchildren
00:32:48and they
00:32:49just loved
00:32:50the garden.
00:32:51It's really
00:32:52Don's plant
00:32:53selection
00:32:53that has
00:32:54helped Les
00:32:54create these
00:32:55beautiful
00:32:56clipped hedges
00:32:57and domes
00:32:58and shapes
00:32:58like this
00:32:59Eliagnus
00:33:00here.
00:33:00There is a
00:33:01bit of
00:33:01variegation
00:33:02in it but
00:33:02it's nice
00:33:03and tight
00:33:03and compact.
00:33:04The secret
00:33:05when you're
00:33:06wanting to
00:33:06select these
00:33:07plants is
00:33:07small twiggy
00:33:08leaves and
00:33:09twiggy
00:33:09growth.
00:33:10Bigger
00:33:10leaves,
00:33:11you've got
00:33:11too many
00:33:11gaps in
00:33:12the dome.
00:33:13And look
00:33:13at this
00:33:14laurel petalum.
00:33:15Just look
00:33:15across the
00:33:16top there,
00:33:16you can see
00:33:17those pink
00:33:17new growths
00:33:18up against
00:33:18the blue
00:33:19sky.
00:33:19It really
00:33:20is quite
00:33:20stunning.
00:33:21But the
00:33:22scene is
00:33:22set by
00:33:23this beautiful
00:33:24conifer archway.
00:33:26As you go
00:33:26through,
00:33:27don't forget
00:33:27to look up
00:33:28to see the
00:33:29bones,
00:33:29the structure
00:33:30that creates
00:33:31this wonderful
00:33:32archway.
00:33:40view.
00:33:40And the
00:33:47fascinating
00:33:48thing is
00:33:48that every
00:33:49room,
00:33:50including
00:33:50the
00:33:51conservatory,
00:33:53looks out
00:33:53over this
00:33:54spectacular view.
00:33:56Do you know,
00:33:56it doesn't matter
00:33:57what century
00:33:58you're building
00:33:58in,
00:33:59that real
00:34:00estate saying
00:34:01of position,
00:34:02position,
00:34:02position,
00:34:03still holds
00:34:04firm.
00:34:05It's all
00:34:05about this
00:34:06glorious view.
00:34:07And don't
00:34:08worry,
00:34:08there's so
00:34:09much more
00:34:09coming up
00:34:10from the
00:34:10moorings a
00:34:11little bit
00:34:11later in
00:34:12the show.
00:34:20Now that's
00:34:20an eyesore,
00:34:21if ever I saw
00:34:22one.
00:34:22You want to
00:34:23see an easy
00:34:23way to cover
00:34:23it up?
00:34:25Some
00:34:25clutting.
00:34:26I promise
00:34:27you this is
00:34:28not an
00:34:28experiment that
00:34:29went wrong.
00:34:30It's my
00:34:30delicious,
00:34:32sticky,
00:34:33chewy,

00:35:16All right,
00:35:16Charles.
00:35:17Come on,
00:35:17son.
00:35:17So let's get
00:35:18some decking
00:35:18and paving
00:35:18down.
00:35:19Chop,
00:35:19chop.
00:35:20No rest
00:35:21for the
00:35:21wicked.
00:35:21Coming.
00:35:22From a
00:35:28backyard that
00:35:28was a
00:35:29concrete
00:35:29jungle to
00:35:30a beautiful
00:35:30entertainment
00:35:31zone.
00:35:32Well,
00:35:32that's the
00:35:32plan that
00:35:33Charlie and
00:35:33I have
00:35:34anyway.
00:35:38And for
00:35:39our decking
00:35:39boards,
00:35:40we've gone
00:35:40with a
00:35:40nice hardwood.
00:35:41Now,
00:35:41for this
00:35:41one,
00:35:42I have
00:35:42chosen
00:35:42merbu
00:35:43or
00:35:43merbau.
00:35:44Now,
00:35:44these are
00:35:45sustainably
00:35:45sourced.
00:35:46They come
00:35:46in
00:35:46beautiful
00:35:47long
00:35:47lengths.
00:35:48They'll
00:35:48span
00:35:48our
00:35:48whole
00:35:49deck
00:35:49and
00:35:49they're
00:35:50140
00:35:50wide.
00:35:51So they're
00:35:51going to
00:35:51tie in
00:35:51with
00:35:51our
00:35:52fence
00:35:52and
00:35:52this
00:35:53whole
00:35:53entertainment
00:35:53area
00:35:54perfectly.
00:35:54It is
00:36:18well
00:36:18worthwhile
00:36:19putting some
00:36:19time and
00:36:20thought into
00:36:21your paving
00:36:21layout because
00:36:22you do need
00:36:23to consider
00:36:23drainage.
00:36:23Now,
00:36:24think of
00:36:25this as a
00:36:25big umbrella
00:36:26that's going
00:36:27to catch
00:36:27water.
00:36:27You need
00:36:27to direct
00:36:28that
00:36:28somewhere
00:36:28else.
00:36:29You don't
00:36:29want to
00:36:29send it
00:36:30to the
00:36:30neighbours
00:36:30and I
00:36:31want a
00:36:31nice
00:36:31flat line
00:36:32here so
00:36:32when it
00:36:33meets
00:36:33Adam's
00:36:33deck it
00:36:34looks like
00:36:34it's
00:36:35well
00:36:35thought
00:36:35out.
00:36:35So we're
00:36:36draining
00:36:36upwards
00:36:36this way.
00:36:38That also
00:36:38sets my
00:36:38layout for
00:36:39my pavers.
00:36:39I'm using
00:36:40600 by
00:36:40400 because
00:36:41I want
00:36:41that
00:36:41contemporary
00:36:42look but
00:36:42I'm
00:36:43doing a
00:36:43stack
00:36:43bond
00:36:43back just
00:36:44to
00:36:44accentuate
00:36:44the
00:36:45lines
00:36:45of
00:36:45the
00:36:45decking.
00:36:46Now,
00:36:46this is a
00:36:47colour called
00:36:47cypress and
00:36:48I know what
00:36:48you're saying
00:36:48why are you
00:36:49using a
00:36:49light colour
00:36:49like cypress
00:36:50when it
00:36:51comes to
00:36:51an
00:36:51entertaining
00:36:52space?
00:36:52Well,
00:36:53these have
00:36:53been
00:36:53pre-sealed
00:36:53so you
00:36:54can spill
00:36:54as much
00:36:55wine on
00:36:55them as
00:36:55you like.
00:36:55Charlie and
00:37:21the guys
00:37:21have done
00:37:21a fantastic
00:37:22job on
00:37:23this
00:37:23paving.
00:37:24It's
00:37:24looking
00:37:24awesome
00:37:25but
00:37:25now it
00:37:26is
00:37:26time
00:37:26to
00:37:26address
00:37:27this
00:37:27eyesore.
00:37:28For
00:37:29that,
00:37:29we've
00:37:29built
00:37:29a
00:37:30simple
00:37:30frame
00:37:30just
00:37:30using
00:37:31some
00:37:3190
00:37:31by
00:37:3145
00:37:32treated
00:37:32pine
00:37:33and
00:37:33what
00:37:33we're
00:37:34going
00:37:34to
00:37:34do
00:37:34is
00:37:34slide
00:37:35it
00:37:35into
00:37:35place
00:37:35and
00:37:36use
00:37:36this
00:37:36existing
00:37:37fence
00:37:37on
00:37:37each
00:37:38side
00:37:38to
00:37:38fix
00:37:39it
00:37:39off.
00:37:39And
00:37:39then
00:37:39I'm
00:37:40going
00:37:40to
00:37:40get
00:37:40some

00:37:43It's
00:37:44going
00:37:44to
00:37:44look
00:37:44fantastic.
00:37:55Before
00:38:06we can

00:43:03the August issue
00:43:04of the Better
00:43:04Homes and Gardens
00:43:05magazine which
00:43:06is out now
00:43:06I think matcha
00:43:14is the new
00:43:15black
00:43:15from mochis
00:43:17to smoothies
00:43:19and lattes
00:43:20and ice cream
00:43:21it is everywhere
00:43:22and if you are
00:43:24a lover of matcha
00:43:26then this is the
00:43:27recipe for you
00:43:28my white chocolate
00:43:29matcha and
00:43:30macadamia brownie
00:43:32So we're going to
00:43:33start off with
00:43:34melting the white
00:43:34chocolate
00:43:35Here I've got
00:43:36175 grams of
00:43:38white chocolate
00:43:39I'm going to
00:43:40chop them into
00:43:41smaller bits
00:43:42I'm going to
00:43:48melt the white
00:43:49chocolate on a
00:43:50double boiler
00:43:51All you need is
00:43:53a saucepan
00:43:54and a bowl
00:43:55with water
00:43:56underneath it
00:43:57boiling
00:43:57Now to that
00:44:01I'm going to
00:44:01add 195 grams
00:44:03of unsalted
00:44:04butter
00:44:04This will take
00:44:13no time
00:44:13to melt
00:44:14Just keep
00:44:16an eye
00:44:16on that
00:44:17That is done
00:44:26It's nice
00:44:26and smooth
00:44:27I'm going to
00:44:28take it off
00:44:29the saucepan
00:44:29because what I
00:44:30want to do
00:44:31is I want to
00:44:32cool it down
00:44:33before I mix it
00:44:34in with the
00:44:36other ingredients
00:44:36In a separate
00:44:38bowl
00:44:39I'm going to
00:44:39mix 220 grams
00:44:41of white
00:44:42granulated sugar
00:44:44Three eggs
00:44:49So it looks
00:45:04like the sugar
00:45:05has melted
00:45:06I'm going to
00:45:07add about
00:45:08one tablespoon
00:45:09of vanilla
00:45:10essence
00:45:10I'm going to
00:45:15see what
00:45:16the temperature
00:45:17is like
00:45:18with the
00:45:19white chocolate
00:45:20because you
00:45:20don't want
00:45:21to add it
00:45:21while it's
00:45:22still too
00:45:23hot
00:45:24because I
00:45:25don't really
00:45:25want to
00:45:25cook the
00:45:26eggs
00:45:26Add this
00:45:31to my
00:45:32egg and
00:45:33sugar mixture
00:45:34next the
00:45:40dry ingredients
00:45:41sifting
00:45:42145 grams
00:45:44of all-purpose
00:45:46flour
00:45:46I've got
00:45:51two tablespoons
00:45:51of ceremonial
00:45:53grade matcha
00:45:54I suggest
00:45:55to get the
00:45:56ceremonial grade
00:45:57matcha for this
00:45:58recipe
00:45:58Sift that in
00:46:03with the flour
00:46:04got sea salt
00:46:07here
00:46:08got one
00:46:10teaspoon
00:46:12if it's a
00:46:13coarse sea salt
00:46:14try and break
00:46:15the little
00:46:16granules a little
00:46:17bit before you
00:46:18put it in
00:46:19give it a
00:46:23quick stir
00:46:24and now
00:46:30I'm going to
00:46:30add it to
00:46:31the wet
00:46:31ingredients
00:46:32add a couple
00:46:34of tablespoons
00:46:34at a time
00:46:35and just
00:46:36fold it
00:46:37through
00:46:37it's a
00:46:50white chocolate
00:46:51brownie
00:46:51so I've
00:46:52got more
00:46:53white chocolate
00:46:54here I've
00:46:55got 150
00:46:56grams of
00:46:57white chalk
00:46:58chips
00:46:59you can add
00:47:00as little
00:47:00or as much
00:47:01as you want
00:47:02but try to
00:47:04stay away
00:47:05from too much
00:47:06because you
00:47:07don't want it
00:47:07to be too
00:47:07sweet
00:47:08either
00:47:08so just
00:47:09slowly
00:47:09fold that
00:47:10in
00:47:11and then
00:47:14I've got
00:47:15the macadamia
00:47:16nuts
00:47:16I'm going to
00:47:18give it a
00:47:18quick
00:47:19rough
00:47:20chop of
00:47:21the macadamia
00:47:22nuts
00:47:22I've lined
00:47:3520 by
00:47:3620 centimetre
00:47:38pan
00:47:39pan with
00:47:39some baking
00:47:40paper
00:47:40it is going
00:47:43to taste
00:47:43delicious
00:47:45into the
00:47:49oven
00:47:50at 160
00:47:51degrees
00:47:51for about
00:47:5425 minutes
00:47:56this
00:48:05this looks
00:48:05just about
00:48:06done
00:48:06and
00:48:11you can
00:48:12still see
00:48:13a little bit
00:48:14of the batter
00:48:15on it
00:48:15and that's
00:48:16perfect
00:48:17two hours
00:48:21to cool down
00:48:22before we
00:48:23serve it
00:48:24it's going to
00:48:33be easy now
00:48:33to just lift
00:48:35that up
00:48:36and take
00:48:41all of that
00:48:43out
00:48:43and for the
00:48:46topping
00:48:46you can leave it
00:48:47as it is
00:48:48doesn't make a
00:48:49difference
00:48:49but if you
00:48:50want to
00:48:50make it look
00:48:51a little bit
00:48:51prettier
00:48:52just a
00:48:53slight dust
00:48:54of
00:48:55matcha powder
00:48:57I'm going to
00:49:10take the
00:49:10biggest one
00:49:11here
00:49:11out of this
00:49:13slice
00:49:13perfection
00:49:26the white
00:49:28chocolate
00:49:29the gooey
00:49:30green
00:49:31matcha
00:49:32brownie
00:49:33and the
00:49:34beautiful
00:49:35macadamia
00:49:36nuts
00:49:36speech
00:49:45speechless
00:49:45well things
00:49:53might be
00:49:53getting a bit
00:49:54chilly and
00:49:54slowing down
00:49:55in the garden
00:49:56but you're
00:49:56just a few
00:49:57clicks away
00:49:58from turning
00:49:59up the heat
00:49:59because we'd

00:50:30Graham
00:50:31doesn't know
00:50:31where to
00:50:32look first
00:50:33the fascinating
00:50:33thing about
00:50:34this garden
00:50:34the more
00:50:35you explore
00:50:35the more
00:50:36you discover
00:50:36and Adam
00:50:38and Charlie
00:50:39set the stage
00:50:40for this
00:50:40garden's
00:50:41debut
00:50:41I have to
00:50:43say we've
00:50:43done a pretty
00:50:43good job
00:50:44on this
00:50:44one
00:50:44I'm feeling
00:50:45pretty comfortable
00:50:46here
00:50:46it's good
00:50:46it's good
00:50:47it's good
00:50:47well the transformation
00:50:55of our concrete
00:50:56jungle
00:50:57is coming along
00:50:58very nicely
00:50:58yes and how
00:50:59good does this
00:51:00deck look
00:51:00looks fantastic
00:51:01almost as good
00:51:01as my paving
00:51:02and planters
00:51:02but now it is
00:51:03time to get
00:51:03some plants
00:51:04into the round
00:51:04so let's start
00:51:05with these
00:51:05hedges
00:51:05they're beautiful
00:51:06they're huge
00:51:07mate
00:51:07the trees
00:51:19I'm using
00:51:20for my hedge
00:51:20are called
00:51:21iliocarpus
00:51:22reticulatus
00:51:22otherwise known
00:51:23as the blueberry
00:51:23ash
00:51:24now this is
00:51:24a native
00:51:25that I absolutely
00:51:26love
00:51:26it gets covered
00:51:27in sort of
00:51:27a nodding flower
00:51:28which has a fringe
00:51:29on the end
00:51:29which turns into
00:51:30a blueberry
00:51:31which is a perfect
00:51:32food for native
00:51:33birds
00:51:33now this does
00:51:34turn into a tree
00:51:35but it is quite
00:51:36columnar
00:51:36which means
00:51:37it grows upright
00:51:38and you can
00:51:38prune it
00:51:39what I'm imagining
00:51:39here is
00:51:40well
00:51:41I'm going to
00:51:43grow it
00:51:43upright
00:51:45against this fence
00:51:46because it looks
00:51:46fantastic
00:51:47but as it gets
00:51:48bigger
00:51:48keep it quite
00:51:49narrow and pruned
00:51:50you can remove
00:51:51the lower branches
00:51:51which will give you
00:51:52more space below
00:51:53to introduce
00:51:54some more planting
00:51:55look at you
00:52:04placing plants
00:52:05I've got no idea
00:52:06what I'm doing Charles
00:52:07that's alright
00:52:07just make it up
00:52:08maybe do I
00:52:09I've made a career
00:52:09out of it
00:52:09because we're planting
00:52:15this garden up
00:52:16in the middle of winter
00:52:17I'm using a lot
00:52:18of textural plants
00:52:19just to add
00:52:19some interest
00:52:20now we've got
00:52:20some really broad
00:52:21leaves
00:52:21like the
00:52:22ligularia
00:52:22some flying
00:52:23clipped leaves
00:52:24like this
00:52:25wastringer
00:52:25but I'm also
00:52:26using some
00:52:27strappy leaves
00:52:27we've got
00:52:27fine strappy leaves
00:52:28in the common
00:52:29rush
00:52:29the juncus
00:52:30we've got
00:52:31slightly thicker
00:52:31in the lyriope
00:52:32and then sword
00:52:33shape
00:52:33in the sansevieria
00:52:35moonlight
00:52:35it's going to
00:52:36give us a really
00:52:37nice planting scheme
00:52:38which looks good
00:52:39all year round
00:52:39and how much better
00:53:05is our shed looking
00:53:06with the new cladding
00:53:07it's freshly painted
00:53:09it really just lifts
00:53:10this whole area
00:53:11make sure you tune
00:53:12in next week
00:53:13to see how we brought
00:53:14it back to life
00:53:15now we're going to be
00:53:15putting this on the
00:53:17wall here
00:53:17it's going to be
00:53:17storage for the wood
00:53:19for our fire pit
00:53:20but it is pretty heavy
00:53:21and you know who's got
00:53:22the biggest muscles
00:53:23of them all
00:53:23it's only one person
00:53:24Charlie
00:53:25oh mate
00:53:26yes indeed
00:53:26we were going to
00:53:27use your muscles mate
00:53:28but um
00:53:29too much power
00:53:29it is a bit dangerous
00:53:30yeah so Pete and I
00:53:31will lift and you can
00:53:32fix
00:53:32okay
00:53:33yes
00:53:39there it is
00:53:41there you go
00:53:44all right
00:53:45beautiful mate
00:53:47lovely man
00:53:47eh
00:53:48that wasn't hard
00:53:49was it
00:53:49perfect little wood stack
00:53:51nice bit of garden art
00:53:52at the same time
00:53:52it is absolutely gorgeous
00:53:54yeah I love it
00:53:55worked well
00:53:56all right keep planting
00:53:56all right you're going to
00:53:57put your little bee wings on
00:53:58and sit in there as well
00:53:59oh what's going on here
00:54:15Charles
00:54:15well I know how you've
00:54:16got yourself a logi and
00:54:17all Adam
00:54:18I just thought I'd create
00:54:20you a nice little green
00:54:21room up here
00:54:21oh yes that's what I'm
00:54:23talking about
00:54:24a nice hedge
00:54:25I love it
00:54:25and actually
00:54:26these plants look very
00:54:28familiar mate
00:54:29oh yeah
00:54:29amaze me
00:54:31yeah well
00:54:31I reckon I've seen them
00:54:32in Nonna and Nonna's
00:54:34backyard
00:54:34I used to go there
00:54:35and pick the olives off
00:54:36and have a bit of
00:54:37am I correct
00:54:38you're correct
00:54:39now this is a variety
00:54:40called Bambolina
00:54:40it's a dwarf variety
00:54:42and it's a really dense
00:54:43variety so it's perfect
00:54:44for hedging
00:54:44you can see all this
00:54:45foliage down here
00:54:46so you're just going to
00:54:47have a whole wall
00:54:47where I can just pick
00:54:48olives from everywhere
00:54:49uh you grow this one
00:54:51for the foliage
00:54:51not for the fruit
00:54:52yes
00:54:53you're a little bit
00:54:54crazy aren't you
00:54:55no but it all makes
00:54:56sense I love it Charlie
00:54:57they do look beautiful
00:54:58that's going to blend in
00:54:59with this area because
00:55:00we do have a pizza oven
00:55:01going in
00:55:02very nice
00:55:02but you've just got to
00:55:03remember to bring your
00:55:04own olives
00:55:04and marinate them first
00:55:05yeah

00:56:32really different
00:56:33and you've got the
00:56:34fire pit there too
00:56:35which looks great
00:56:35absolutely
00:56:36surrounded by gravel
00:56:37so it's nice and safe
00:56:37for the deck
00:56:38adds a little bit of a
00:56:39feature to the deck
00:56:40as well
00:56:40that's right
00:56:41and that deck gives you
00:56:41a nice level platform
00:56:43where you can obviously
00:56:43set up these lounges
00:56:45so you can kick back

00:59:27out now
00:59:28in the colder months of the year
00:59:46there are some landscapes
00:59:48that really stand out and create a beautiful serenity
00:59:52here at the moorings garden
00:59:54in the southern islands of new south wales
00:59:56is one such garden
00:59:58it is just so beautiful at this time of the year
01:00:01the weeping willow reflected in the pond
01:00:04and of course the silver birch
01:00:06even the trunks covered with a little bit of lichen
01:00:09the japanese maples
01:00:10bear and stark
01:00:12and then of course
01:00:14with seasons sort of rotating
01:00:16getting mixed up
01:00:17we're so lucky to see these beautiful
01:00:20red hot pokers
01:00:21the nyphophia
01:00:22this variety is tall and elegant
01:00:24with its great spires
01:00:26these flames of orange and red
01:00:28it's a real standout here
01:00:30looking across the landscape
01:00:32and the pond
01:00:33looks even more mysterious
01:00:35the brilliance of the owner
01:00:48to create these intimate enclosed spaces
01:00:51garden rooms if you like
01:00:53we've seen so much of
01:00:55but here he's thrown the garden design book out
01:00:59and created something completely different
01:01:01this is the sculpture garden
01:01:03but he's allowed the trees to tell their story
01:01:14whether it's conical
01:01:15weeping
01:01:16vase shape
01:01:17whatever the trees are
01:01:18they're looking natural
01:01:19but instead of enclosing
01:01:21he's pulled the curtains back
01:01:23in a maybe Japanese borrowed landscape style
01:01:26and what a landscape it is
01:01:28this is the Yarua brush
01:01:29the last remnant cool climate rainforest
01:01:32in the area
01:01:33highly protected
01:01:35and what a vista
01:01:36the fascinating thing about this garden
01:01:48the more you explore
01:01:49the more you discover
01:01:50and this area here
01:01:51could be no more of a contrast
01:01:53than the one that we've just been in
01:01:55here it reminds me
01:02:03that so many people ask me
01:02:05oh what happens when I grow these beautiful trees
01:02:07and it creates a totally different environment
01:02:10shade
01:02:11moist soil
01:02:12and all your roses and azaleas
01:02:14and things tend to disappear
01:02:15well why not go for Australian
01:02:17beautiful ferns
01:02:19we've got a fantastic collection of ferns
01:02:21that grow in these sorts of locations
01:02:23the tree ferns
01:02:24these beautiful bird's nest ferns
01:02:26I just love them
01:02:27they're so dramatic
01:02:28and sculptural
01:02:29architectural in the garden
01:02:31rasp fern
01:02:32talk about architecture
01:02:33as a ground cover
01:02:34and then of course
01:02:35yep
01:02:36good old bracken fern
01:02:37we're always poisoning it
01:02:38to get rid of it
01:02:39no let it go wild
01:02:40and here you've got a beautiful scene
01:02:43an evergreen
01:02:44every day of the year
01:02:46looking beautiful
01:02:47you know it never cease to amaze me
01:03:00how these grand
01:03:01extensive gardens
01:03:02in the country
01:03:03are filled with great ideas
01:03:05that we can borrow
01:03:06maybe it's a case of just
01:03:08setting up a theme
01:03:09or possibly selecting some plants
01:03:11that will really
01:03:12you can clip and train
01:03:14or looking at some of the conifers
01:03:16that were always good
01:03:18and still are
01:03:18and lots of permanent
01:03:20annual colour
01:03:21in our gardens
01:03:22and we have the owners
01:03:24to thank for creating
01:03:25something so special
01:03:26and sharing it with us
01:03:27but you know
01:03:28that's what the gardeners do
01:03:29the problem with curtains like this
01:03:38is that when you use them
01:03:39for privacy during the day
01:03:40you're also blocking out
01:03:42all of that natural sunlight
01:03:44but I have a great trick
01:03:45for your curtains
01:03:46that's not only practical
01:03:47it also looks amazing
01:03:48I'm using a double rod
01:04:07and that will allow me
01:04:08to put a block out blind
01:04:09closest to the window
01:04:10and then a lovely soft sheer
01:04:13on the inside
01:04:13and I've also put in
01:04:15this timber pelmet
01:04:17from the ceiling
01:04:18and that's going to give it
01:04:18a much more elevated
01:04:20high-end look
01:04:20because it will hide
01:04:22all of that hardware
01:04:23custom-made curtains
01:04:35can be really expensive
01:04:37but this is a brilliant way
01:04:39to get the same look
01:04:40using ready-made curtains
01:04:42traditionally
01:04:43with a double rod
01:04:44the curtains would be hung
01:04:45in the opposite way
01:04:46so the sheer would be
01:04:47closest to the window
01:04:48but this way is much more
01:04:49contemporary
01:04:50and makes a whole lot
01:04:51more sense to me
01:04:52because having the block out
01:04:53closest to the light source
01:04:55means that you're blocking out
01:04:56more light
01:04:57and then this lovely soft layer
01:04:59on the inside of the room
01:05:00adds another detail
01:05:01to the design
01:05:03now that we've added in
01:05:06some more texture
01:05:07and detail to this bedroom
01:05:08you can see how these
01:05:09gorgeous soft curtains
01:05:11really elevate the space
01:05:12one of the key features
01:05:16of hanging your curtains
01:05:17like this
01:05:17is that you can control
01:05:19the level of privacy
01:05:20and also
01:05:21the amount of light
01:05:22coming into the room
01:05:23and another trick
01:05:24is to hang your curtains
01:05:25wall to wall
01:05:27and from the ceiling
01:05:28that way you get
01:05:29that really luxurious look
01:05:30the pelmet helps
01:05:32with that as well
01:05:33and I think you'll agree
01:05:34for off-the-shelf curtains
01:05:35these ones
01:05:36look pretty high-end
01:05:37so you've heard
01:05:55Pete and I talk about
01:05:56all the various
01:05:57dining options
01:05:57in Crow's Nest
01:05:58so we thought
01:05:58we'd better try it out
01:05:59for ourselves
01:06:00one with a lot
01:06:00oh my gosh
01:06:01that's not what
01:06:02I was expecting
01:06:03but I am excited
01:06:04I like Pete

01:06:07in all my years
