00:02:50Well, so he was about three months old and we only sort of just had him about two or three weeks.

00:02:56And we went for a walk.
00:02:57A couple of guys came past on skateboards and he just went crazy.

00:03:21And we were surprised because he was so small but you could feel the strength in him.

00:03:29He doesn't like the noise and he's aggressive.

00:03:34He loves the noise and he's the most unaggressive dog you'll ever come across.

00:09:57which is perfect for a deck,
00:09:58because we need to have clearance of at least 150 underneath our timber.
00:10:02So now that is done, we're just digging our post holes.
00:10:04We're going down about 600 deep.
00:10:06We'll set them in.
00:10:07We'll be able to put our bearers on our posts
00:10:09and then set our joist at 450 centres.
00:10:12This is pretty easy digging, isn't it, Pete?
00:10:14I'll take this any day.
00:10:16This area up here, the top of the garden,
00:10:28is going to be our main entertaining paved space.
00:10:30And we are going to have a cooking station over there.
00:10:33But because it's so uneven, I want it to be nice and level.
00:10:35For that, I need to bring it up.
00:10:37And when you bring it up, you need to retain the sub base.
00:10:41For that, I'm using some Shapescaper steel edging.
00:10:44Now, I absolutely love this stuff.
00:10:45You normally see me use it in a garden bed,
00:10:47where you just put a stake in the ground and you hook it up.
00:10:49But when you've got concrete, you just can't use the stakes.
00:10:51So I'm just using some angle brackets,
00:10:53which I'll attach to this concrete hob wall
00:10:56to give me a nice secure edge.
00:10:58We're going 150 step up,
00:11:00so it's a nice step up from Adam's deck.
00:11:02But it does come in a huge range of sizes,
00:11:04so it's really versatile and will suit most gardens.
00:11:15With all the holes dug, they're about 600 mil deep,
00:11:32and now we're ready to put the posts in for that.
00:11:34We're just using some H4 treated pine.
00:11:36You want to make sure the main part
00:11:38is you get some concrete underneath the post,
00:11:40and obviously all the way around it.
00:11:42That way it supports the light.
00:11:44As we wrap around the back of Adam's deck,
00:12:02I'm going to have a planter box.
00:12:04I'm using the same steel but in a higher profile.
00:12:06That means we're going to get more soil in here
00:12:08and better success with our plants.
00:12:10Now, I'm actually using a prefabricated corner,
00:12:13but you can bend it yourself on site if you want.
00:12:15If you don't have a right angle,
00:12:16they can do custom work for you as well.

00:13:41You've got the city, a stone's throw away.
00:13:43You've got heaps of dining options.
00:13:45You can still get a home in a green leafy street.
00:13:48But best of all, it actually still has very much a sort of like welcoming community village-y feel.

00:13:57and that's partly due to the introduction of the Metrolink,
00:13:59and look, people are really discovering this part of the North Shore.
00:14:02Well, at that transport hub you're talking about, you've got the Metrolink
00:14:04and the train station down the road.
00:14:06You also have a huge amount of sort of high-density developments
00:14:09that are springing up absolutely everywhere.
00:14:11It's got that vibe of a mini-city, which is like Chatswood next door.
00:14:15Yeah, well, I'll tell you what.
00:14:16I feel like I need to head off and do a bit of real estate research for myself,
00:14:19and I reckon I can guess the direction you want.
00:14:21I'm sure you can.
00:14:35If you love history, walking the back streets of Crow's Nest,
00:14:38you can certainly get your historic fix.
00:14:41Now, the suburb first took shape in 1821,
00:14:44thanks to a land grant to a bloke by the name of Edward Wilsencraft,
00:14:49who built his home and called it Crow's Nest,
00:14:51thanks to its commanding view.
00:14:53Since then, the suburb has grown up
00:14:55with a full cross-range of architectural styles,
00:14:58from Federation, Queen Anne, with the beautiful timber detailing,
00:15:03the fretwork and ironwork.
00:15:05It's a full cross-range of architectural styles.
00:15:08Combine all that with the luxuries and conveniences of a modern city.

00:16:10like a studio apartment in the middle of Crow's Nest itself.

00:16:21What's the top end price, roughly, that you're talking about, though?
00:16:25Well, I mean, you could spend five million.
00:16:27Are you finding that they're selling the more traditional homes

00:16:33Yeah, interestingly, I think the transport's made a big difference.

00:20:17Coming up, meet the little balls of potato
00:20:19giving pasta a run for its money.
00:20:22I think that is a gnocchi
00:20:24that even a nona would be proud of.
00:20:29Adam and Charlie will do whatever it takes
00:20:31to bring this entertaining space to life,
00:20:33no matter the consequences.
00:20:35I tell you what,
00:20:36this wind is not doing wonders for your hair, is it?
00:20:38I need some manscaping, that's for sure.
00:20:40And their colour may be curious,
00:20:43but these brownies are off the charts great.
00:20:46That whole batter is going to turn bright green.
00:20:51All right, believe it or not, this accent is not Italian.
00:21:01But I can cook gnocchi, and today I'm going to make you a special gnocchi,
00:21:06which is a green gnocchi with burnt butter sauce and baby beets.
00:21:10All right, so basically gnocchi is potatoes, it's flour and it's eggs,
00:21:19and you can flavour it with herbs.
00:21:20You want your potato as dry as possible.
00:21:23So what you're going to do is, you've got your potatoes.
00:21:26I line the bottom of the tray with some rock salt, just some cheap rock salt.
00:21:30I lay the potatoes on the salt, so it's about 10, 11 potatoes,
00:21:35which is 1.2 kilos in the oven for about 40 minutes to an hour,
00:21:39until they're beautiful and soft.
00:21:41I like to flavour the flour with the herbs,
00:21:44so you get all that green running through the gnocchi and you get all the flavour.
00:21:47And the best way to do it is to blend it.
00:21:51I got about 110 grams of flour, so that goes into my mixer as messy as I can.
00:21:59Bunch of sage, that goes in.
00:22:05Rosemary, just take it off the stalk.
00:22:11Italian parsley, it's the only Italian bit in the dish.
00:22:16And now, just give it a blend.
00:22:21All right, so have a look at that.
00:22:24Oh, you can smell it.
00:22:30All right, so the potato, soft, salt's done all its job.
00:22:35What we want to do now is, there's no way around this,
00:22:37you've got to do it when it's hot.
00:22:38If the potato gets cold, the starch locks in and you're not going to get a good gnocchi.
00:22:43So you're just going to cut them in half.
00:22:47This also helps dry them out as well.
00:22:49All right, large bowl, potato ricer.
00:23:02If you don't have a potato ricer, you could just mash them up really fine.
00:23:05You're going to scoop out your hot potato into your ricer.
00:23:10Irishman's dream.
00:23:22All right, to the potato.
00:23:23You've got to cheese it up.
00:23:25Parmesan.
00:23:27About 200 grams.
00:23:28All right, we've got our flour we did earlier.
00:23:37All right, there's our flour.
00:23:40So I like to gently fold it through before we put the eggs in,
00:23:44just to incorporate all that flour.
00:23:46Now we're going to add three egg yolks, just to lock it together.
00:23:51This is what binds it.
00:23:55One.
00:24:00Two.
00:24:01And then the tool I use to bring it together.
00:24:09Very kitchen-y.
00:24:11Use a paint scraper.
00:24:13Because it helps get in.
00:24:15You don't really want to work it too much with your hands.
00:24:16You want to work it with the steel.
00:24:19So just chop it in.
00:24:25A little bit of our flour, just on the bench.
00:24:28So it's all by touch.

00:25:25so easy way to tell if your gnocchi's cooked what happens is you drop it into the boiling water
00:25:33it sinks to the bottom as it cooks and the egg cooks inside it rises to the top that's when
00:25:39you know it's ready scoop it out there we go look at that a little bit more firm not too firm
00:25:47all right gnocchis put them in the warm oven it's turned off just leave them in there to warm good
00:26:00gnocchi needs a good sauce a good sauce can be a very simple sauce so about 250 300 grams of butter
00:26:07into a warm pan it's going to separate and it's going to caramelize we're going to get a nice
00:26:12brown color get a sage in so you're going to get a nice crack smell you ready
00:26:19cook your sage until it's crisp add your capers and your juice about 100 grams
00:26:29give it a stir oh yeah now i'm going to use the zest for the lemon and the juice
00:26:41give that a stir beautiful just going to toss them through the sauce
00:26:59right so you got your warm gnocchi you got your beautiful butter sauce
00:27:12pair your gnocchi with a vegetable that's in season so obviously raw baby beets
00:27:27so just cut it nice and fine toss that in the bowl a little bit of our dressing
00:27:35stir it a bit of the green look at that
00:27:42and then always always more cheese
00:27:50i think that is a gnocchi that even a nonna will be impressed with
00:28:00do you remember that great aussie film classic babe well it was set in the green heart of the
00:28:25southern highlands of new south wales right here in fact in the rolling hills of robertson a rich
00:28:31volcanic soil and an abundance of rain that has also helped to create some of the finest
00:28:37picture book gardens in the country
00:28:46the moorings is a 40 hectare heritage farm it was established in the 1870s by a naval lieutenant
00:28:56now back then he bought 100 acres for 100 quid a great deal today the current owners have restored
00:29:05the original homestead and they've extended it but for me what is really magical they've also created
00:29:12a two hectare ornamental landscape with foliage and year-round interest at its heart
00:29:18once you come down the driveway into the turning circle here where the coach and four would have
00:29:32dropped off its passengers to the homestead it's a very different wintry look with these bare traceria
00:29:38branches going up into a grey sky they create the skeleton the bones the structure of this garden
00:29:45especially they're visible in winter but you know there's a more permanent look in this garden
00:29:50that's here every single day it's these clipped hedges of azaleas of camellias but the flowers are
00:29:57secondary to the the forms and the shapes that they come in and this is only the beginning
00:30:03the conifer garden has to be the signature piece of this property
00:30:16in fact it's probably one of the best in the entire district
00:30:21none of the gossip nothing can stop us

00:31:10what he got a horticultural degree or something uh no really he's a uh he's a nuclear physicist
00:31:16oh wow yep but he really had a passion for plants obviously he did
00:31:22so les how long does it take you to keep this
00:31:33conif gun looking so neat and tidy probably about a day and a half at uh with the whole
00:31:39all the fine little bits and pieces and having to get in and how often though uh probably every
00:31:45three months oh once it starts to get a little bit of a little bit of legginess on it yeah a bit
00:31:50of furry bit of furry i just love this golden hanoki cypress the interesting thing it's like it's
00:31:56been sprayed with gold paint because it's all gold on the top but green underneath yeah they're
00:32:01there's always something to look at in the conifer garden all year round just gives that little bit
00:32:06extra it's a real lift isn't it
00:32:08it's at the front of the house where the magic really reaches its peak because you've got this
00:32:22wonderful view and the homestead itself the tree the poplar was most likely planted by the naval
00:32:27lieutenant it's a really old old tree well over a hundred years of age like these beautiful

00:32:38in later years the garden provided a great opportunity for don and his wife barbara to
00:32:47entertain the grandchildren and they just love the garden it's really don's plant selection that
00:32:53has helped les create these beautiful clipped hedges and domes and shapes like this elliagnis
00:33:00here there is a bit of variegation in it but it's nice and tight and compact the secret when you're
00:33:05wanting to select these plants is small twiggy leaves and twiggy growth bigger leaves you've got
00:33:11too many gaps in the dome and look at this laura petalum you just look across the top there you can
00:33:16see those pink new growths up against a blue sky it really is quite stunning but the scene is set
00:33:23by this beautiful conifer archway as you go through don't forget to look up to see the bones the
00:33:29structure that creates this wonderful archway
00:33:36the fascinating thing is that every room including the conservatory looks out over this spectacular view
00:33:55you know it doesn't matter what century you're building in that real estate saying of position
00:34:02position position still holds firm it's all about this glorious view and don't worry there's so much

00:35:22from a backyard that was a concrete jungle to a beautiful entertainment zone well that's the plan that charlie and i have
00:35:31anyway
00:35:37and for our decking boards we've gone with a nice hardwood now for this one i have chosen merbu or merbau
00:35:43now these are sustainably sourced they come in beautiful long lengths they'll span our whole deck and they're 140 wide
00:35:49so they're going to tie in with our fence and this whole entertainment area perfectly
00:35:53it is well worthwhile putting some time and thought into your paving layout because you do need to consider drainage
00:36:11now think of this as a big umbrella that's going to catch water you need to direct that somewhere else
00:36:17you don't want to send it to the neighbors and i want a nice flat line here so when it meets adam's deck it looks like it's well thought out so we're draining upwards this way
00:36:23that also sets my layout for my pavers i'm using 600 by 400 because i want that contemporary look
00:36:29but i'm doing a stack bond back just to accentuate the lines of the decking now this is a color called cypress and i know what you're saying
00:36:35why are you using a light color like cypress when it comes to an entertaining space
00:36:47well these have been pre-sealed so you can spill as much wine on them as you like

00:37:25it is time to address this eyesore for that we've built a simple frame just using some 90 by 45

00:37:37each side to fix it off and then I'm going to get some shiplap cladding out of the cement sheet
00:37:42and we'll clad it it's going to look fantastic
00:37:44before we can move on with the rest of the garden we have to address the asbestos on the shed
00:38:11so we brought in the professionals to sort that out
00:38:16now backyard is coming together but what about our old laundry shed well the asbestos guys have been and
00:38:36gone and we've got our safety certificate the team is hard at work and they've started with fixing up
00:38:41this framework for our new servery now because so many Aussie backyards have old sheds just like this
00:38:48one there's a heap of information we want to share with you about the safe testing and removal of
00:38:53asbestos so keep an eye out for this shed story on next week's show

00:43:12i think matcha is the new black from mochis to smoothies and lattes and ice cream it is everywhere
00:43:23and if you are a lover of matcha then this is the recipe for you my white chocolate matcha and macadamia
00:43:31brownie so we're going to start off with melting the white chocolate here i've got 175 grams of white
00:43:38chocolate i'm going to chop them into smaller bits i'm going to melt the white chocolate on a double boiler
00:43:51all you need is a saucepan and a bowl with water underneath it boiling
00:43:57now to that i'm going to add 195 grams of unsalted butter
00:44:11this will take no time to melt just keep an eye on that
00:44:17that is done it's nice and smooth i'm going to take it off the saucepan because what i want to do
00:44:31is i want to cool it down before i mix it in with the other ingredients
00:44:36in a separate bowl i'm going to mix 220 grams of white granulated sugar
00:44:48three eggs
00:44:50so it looks like the sugar has melted i'm going to add about one tablespoon of vanilla essence
00:45:10i'm going to see what the temperature is like with the white chocolate because you don't want to add it
00:45:22while it's still too hot because i don't really want to cook the eggs
00:45:30add this to my egg and sugar mixture
00:45:33next the dry ingredients sifting 145 grams of all-purpose flour
00:45:50i've got two tablespoons of ceremonial grade matcha
00:45:54i suggest to get the ceremonial grade matcha for this recipe
00:45:58water with the cornstarch
00:46:02sift that in with the flour
00:46:06got sea salt here
00:46:09got one teaspoon
00:46:12if it's a coarse sea salt try and break the little granules a little bit before you put it in
00:46:23give it a quick stir
00:46:29And now I'm going to add it to the wet ingredients.
00:46:32Add a couple of tablespoons at a time and just fold it through.
00:46:49It's a white chocolate brownie, so I've got more white chocolate.
00:46:53Here I've got 150 grams of white chalk chips.
00:46:59You can add as little or as much as you want.
00:47:03But try to stay away from too much because you don't want it to be too sweet either.
00:47:08So just slowly fold that in.
00:47:13And then I've got the macadamia nuts.
00:47:17I'm going to give it a quick rough chop of the macadamia nuts.
00:47:23I've lined 20 by 20 centimetre pan with some baking paper.
00:47:41It is going to taste delicious.
00:47:48Into the oven at 160 degrees.
00:47:53For about 25 minutes.
00:48:04This looks just about done.
00:48:06And you can still see a little bit of the batter on it.
00:48:15And that's perfect.
00:48:20Two hours to cool down before we serve it.
00:48:24It's going to be easy now to just lift that up.
00:48:36And take all of that out.
00:48:44And for the topping, you can leave it as it is.
00:48:48It doesn't make a difference.
00:48:49But if you want to make it look a little bit prettier, just a slight dust of matcha powder.
00:48:57I'm going to take the biggest one here out of this slice.

00:51:02But now it is time to get some plants into the round, so let's start with these hedges.
00:51:05They're beautiful.
00:51:06They're huge, mate.
00:51:07The trees I'm using for my hedge are called Iliocarpus reticulatus, otherwise known as the blueberry ash.
00:51:24Now, this is a native that I absolutely love.
00:51:26It gets covered in sort of a nodding flower, which has a fringe on the end, which turns into a blueberry, which is a perfect food for native birds.
00:51:33Now, this does turn into a tree, but it is quite columnar, which means it grows upright, and you can prune it.
00:51:39What I'm imagining here is, well, I'm going to grow it upright against this fence, because it looks fantastic.
00:51:47But as it gets bigger, keep it quite narrow and pruned.
00:51:50You can remove the lower branches, which will give you more space below to introduce some more planting.
00:52:03Look at you placing plants.
00:52:05I've got no idea what I'm doing, Charles.
00:52:07That's all right.
00:52:07Just make it up.

00:52:08I've made a career out of it.
00:52:15Because we're planting this garden up in the middle of winter, I'm using a lot of textural plants just to add some interest.
00:52:20Now, we've got some really broad leaves, like the Ligularia, some flying clipped leaves, like this Wastringer, but I'm also using some strappy leaves.
00:52:27We've got fine strappy leaves in the Common Rush, the Juncus, we've got slightly thicker in the Lyriope, and then Sword Shape in the Sansevieria Moonlight.
00:52:35It's going to give us a really nice planting scheme, which looks good all year round.
00:52:57And how much better is our shed looking?
00:53:06With the new cladding that's freshly painted, it really just lifts this whole area.

00:59:28In the colder months of the year, there are some landscapes that really stand out and create
00:59:50a beautiful serenity.
00:59:52Here at the Moorings Garden, in the Southern Highlands of New South Wales, is one such garden.
00:59:58It is just so beautiful at this time of the year.
01:00:01The weeping willow reflected in the pond, and of course, the silver birch.
01:00:06Even the trunks covered with a little bit of lichen.
01:00:09The Japanese maples, bear and stark.
01:00:12And then, of course, with seasons sort of rotating, getting mixed up, we're so lucky to see these beautiful
01:00:20red-hot pokers, the nyphophia.
01:00:22This variety is tall and elegant, with its great spires, these flames of orange and red.
01:00:28It's a real standout here, looking across the landscape.
01:00:32And the pond looks even more mysterious.
01:00:42The brilliance of the owner to create these intimate, enclosed spaces, garden rooms, if
01:00:52you like, we've seen so much of.
01:00:55But here, he's thrown the garden design book out and created something completely different.
01:01:01This is the sculpture garden.
01:01:02But he's allowed the trees to tell their story, whether it's conical, weeping, vase-shaped,
01:01:17whatever the trees are, they're looking natural.
01:01:19But instead of enclosing, he's pulled the curtains back, you know, maybe Japanese-borrowed landscape
01:01:26style, and what a landscape it is.
01:01:28This is the Yarrawa brush, the last remnant cool climate rainforest in the area, highly
01:01:34protected.
01:01:35And what a vista.
01:01:37Anywhere the wind blows, it doesn't really matter, because it all just ends the same.
01:01:46The fascinating thing about this garden, the more you explore, the more you discover.
01:01:50And this area here could be no more of a contrast than the one that we've just been in.
01:01:58Here, it reminds me that so many people ask me, oh, what happens when I grow these beautiful
01:02:07trees?
01:02:07And it creates a totally different environment.
01:02:10Shade, moist soil, and all your roses and azaleas and things tend to disappear.
01:02:15Well, why not go for Australian?
01:02:17Beautiful ferns.
01:02:19We've got a fantastic collection of ferns that grow in these sorts of locations.
01:02:23The tree ferns, these beautiful bird's nest ferns, I just love them, they're so dramatic
01:02:28and sculptural, architectural in the garden.
01:02:31Rasp fern, talk about architecture as a ground cover.
01:02:34And then, of course, yep, good old bracken fern, we're always poisoning it to get rid of
01:02:38it.
01:02:39No, let it go wild.
01:02:40And here you've got a beautiful scene, an evergreen, every day of the year, looking beautiful.
01:02:47You know, it never ceased to amaze me how these grand, extensive gardens in the country are
01:03:04filled with great ideas that we can borrow.
01:03:07Maybe it's a case of just setting up a theme, or possibly selecting some plants that will
01:03:12really, you can clip and train, or looking at some of the conifers that were always good
01:03:18and still are, and lots of permanent annual colour in our gardens.
01:03:22And we have the owners to thank for creating something so special and sharing it with us.
01:03:27But you know, that's what gardeners do.
01:03:29The problem with curtains like this is that when you use them for privacy during the day,
01:03:40you're also blocking out all of that natural sunlight.
01:03:44But I have a great trick for your curtains that's not only practical, it also looks amazing.
01:03:49Now, I feel like I'm running in place, feel like I'm running in place, I've been familiar
01:03:53I'm using a double rod, and that will allow me to put a block out blind closest to the
01:04:10window, and then a lovely soft sheer on the inside.
01:04:14And I've also put in this timber pelmet from the ceiling, and that's going to give it a
01:04:19much more elevated, high-end look, because it will hide all of that hardware.
01:04:35Custom-made curtains can be really expensive, but this is a brilliant way to get the same
01:04:40look using ready-made curtains.
01:04:42Traditionally, with a double rod, the curtains would be hung in the opposite way, so the
01:04:46she would be closest to the window, but this way is much more contemporary and makes a
01:04:50whole lot more sense to me, because having the block out closest to the light source means
01:04:55that you're blocking out more light, and then this lovely soft layer on the inside of the
01:05:00room adds another detail to the design.
01:05:05Now that we've added in some more texture and detail to this bedroom, you can see how these
01:05:09gorgeous soft curtains really elevate the space.
01:05:12One of the key features of hanging your curtains like this is that you can control the level
01:05:19of privacy and also the amount of light coming into the room, and another trick is to hang
01:05:25your curtains wall-to-wall and from the ceiling.
01:05:28That way you get that really luxurious look.
01:05:31The pelmet helps with that as well, and I think you'll agree, for off-the-shelf curtains,
01:05:36these ones look pretty high-end.
01:05:43So you've heard Pete and I talk about all the various dining options in Crow's Nest so we thought
01:05:58you'd better try it out for ourselves.
