00:00So, Tam, we're down here at Ember. You guys have just made it into the Good Food Guide.
00:04An incredible accolade, isn't it?
00:06Yes, we're super, super thrilled.
00:08It just goes to show the hard work and dedication of the team over the last year,
00:13and also the support of all of the customers in Sunderland who really got behind us
00:17and really supported us this whole year, so we're super, super thankful.
00:20And you're just coming up to your first year, the Cheap Falls. How's it been?
00:24It's been crazy, to be honest. It's kind of evolved because we always knew what kind of food we wanted to do.
00:29We wanted to cook over charcoal, but this kind of theme of exploring kind of happened organically.
00:35So I guess we're finding ourselves again with our custom, and it's an awesome ride to be on.
00:43And you do obviously different countries, different cities each month, don't you?
00:47And that works well for you?
00:49It works really well, to be honest. I think it gives something to look forward to.
00:53It allows us to change our menu every month.
00:55We're, as a team, developing our skills, developing our flavours, exploring different dishes,
01:01and it makes it super exciting.
01:03You know, the worst thing in kitchens is doing the same menu for the whole year,
01:07and you get super bored.
01:09Here we're really able to explore new skills, new flavours, and make it exciting for us and the customers.
01:17And Sunderland's culinary scene as a whole is really changing. It's coming on in leaps and bounds, isn't it?
01:23Yeah, to be honest, I see Sunderland being like, you know, in 10 years from now, like the Manchester kind of vibe,
01:29where you've got so many different independent restaurants coming in and doing their own stamp on the city.
01:36And I think Sunderland's the perfect city to do that in, just because of our own personality we have as Maccams,
01:42and they're willing to embrace different foods and different styles.
01:47And the hard working nature, you know, we're a working class city.
01:51There's a lot of people, especially the younger generation coming up now,
01:55who are super eager to get jobs where they work in this field.
01:59And that's been really, really great to be part of that.
02:02And obviously, you're in a great location here. You've got your right in the shadow of the new bridge,
02:06which will be opening soon. You must be excited about that kind of increasing the links to the other side of the city.
02:11Yes, it's unbelievable because we're in the infancy of like really the redevelopment of Sunderland.
02:17You know, you can see the city centre kind of expanding for the first time probably in 50 or 60 years.
02:24You can see with that bridge, it kind of is culmination of the city centre just developing around the whole area.
02:31And the view. The view is probably my second favourite view in all of Sunderland.
02:36I mean, I love seaburn and roadside. I love being near the water.
02:40But the view we have here, it's just a luxury. I wish I could live here.
