00:01Every was in Asia.
00:03Every one of those little markets
00:04was filled with smells of delicious food
00:06that all centered around an Asian staple, noodles.
00:09Learn to cook those properly,
00:11and you'll be surprised how quick and easy it is
00:13to knock off a delicious dinner.
00:18First off, we're going to soak our noodles.
00:21Now, these are rice noodles.
00:23Into a bowl and just pour a hot water
00:27over the rice noodles.
00:29Soak and rehydrate.
00:3212 to 15 minutes to soften up.
00:34If you've got a wok, perfect.
00:36If not, just a normal sized frying pan
00:38with big sloping sides.
00:40Pan on.
00:42Get it really nice and hot.
00:44Chicken breast, very lean, hardly any fat.
00:47On there, you've got this little fillet.
00:49Just slice that off.
00:51Now, the secret to getting it really nice and thin
00:54and to cut it into strips.
00:56Take your knife,
00:57keep it nice and flat on the board
01:00and sort of slice it in half
01:02like a sort of scallop.
01:05Like that.
01:06We call this butterfly in the chicken.
01:08Take a rolling pin
01:12and nice and gently roll over the chicken.
01:14What it does, it sort of flattens it,
01:16allows you to slice it even thinner.
01:21And the thinner the slice of the chicken,
01:23the sort of crisper it gets,
01:24the quicker it cooks.
01:26Slice it in half.
01:28Start slicing these nice thin slices.
01:33And the good news is,
01:34one chicken breast can serve two or three easily.
01:37Next, wash your knife and finely slice garlic.
01:42The thinner the garlic, the crispier.
01:46This is a young, tender broccoli.
01:50Just slice them down.
01:52I want a bite to the broccoli.
01:54And normally you sort of paste the dish with one-third noodles,
01:59one-third vegetables,
02:00and one-third of your protein or chicken.
02:04With a dish that takes literally minutes to put together,
02:07it's really important to get everything organised.
02:09Everything needs to be at your fingertips.
02:11A touch of olive oil.
02:14Get that pan really nice and ready.
02:17Just starting to smoke.
02:19Drop the chicken in first.
02:23A touch of salt and pepper.
02:28Open up those little strands of chicken.
02:33Nice.
02:36Once you've started to sear off the chicken,
02:38get the garlic in.
02:40Now, let that get really nice and crispy.
02:43And the way to do it is to sort of spread
02:45all the chicken, the garlic,
02:47up the side of the pan.
02:50You see why it's so important to cut the chicken thin strips,
02:53because it colours and cooks at the same time as well.
02:55Really, really crucial.
02:59Now that garlic's getting really nice and crispy.
03:02Broccoli in.
03:05Feels strange putting raw broccoli in like that.
03:08Normally, we blanch it in boiling water, dry it out,
03:11but you want that crunch.
03:14Now, soy sauce.
03:15That helps to season it, but also stains beautifully.

03:20Exactly what I want.
03:21Now, take that out.
03:22Give your pan a little wipe out.
03:23A little teaspoon of olive oil.
03:24Look at that.
03:25Whack.
03:26Really nicely oiled again.
03:27Drain your noodles.
03:28They're beautiful.
03:29This is a really exciting way of finishing this quick stir fry.

05:09stunning there's a great way of using up leftover baked potatoes you can make gnocchi just with flour
05:20and eggs however the potato gives it a nice light sort of creamy fluffy texture just cut them in half
05:26take a spoon and scoop the inside of those potatoes I'm using leftover baked potatoes but this really
05:34works as well with leftover ball potatoes two choices you can get a fork and sort of mash the
