Modou Diagne, known for his innovative approach and success at 111 by Modou, is set to open his second Glasgow restaurant this summer.

The new venture, Trust by Modou, will open its doors in Finnieston at 1132 Argyle Street this July, Trust represents a confident evolution in Modou’s culinary journey — a concept rooted in creativity, spontaneity, and deep connection between kitchen and guest.

There will be no set menu. Instead, diners will be treated to an ever-changing 5 course menu will be priced at £30pp - designed to encourage repeat visits.

Chef Modou Diagne said: “This is the restaurant I’ve always dreamed of. Trust is about more than just great food — it’s about connection, surprise, and giving people a reason to come back not just for a dish, but for a feeling. I want people to walk through the door, let go of control, and simply enjoy what we've cooked and prepared for them in that moment."

00:00Trash by Modu will open very soon here on Argyll Street, joining the exciting culinary scene in Finiston.
00:08Modu, can you tell me a bit about what you've got planned for this new restaurant?
00:14Trash is one of the things that we've been working on for the last 3-4 years.
00:21Myself and Nico and some of the guys behind the scene.
00:24We've tried it quite different places and then take it to one-on-one and just run it there for about 3-4 years, since 2016.
00:32And then since then we just kind of decided if you want to open a place like that, we just kind of keep doing it with one-on-one.
00:39Some days trust, some days 10 courses.
00:41But yeah, then we feel like it's time now, we're going to just kind of come here and open it.
00:49Usually when I go to a restaurant, anywhere in the world, I will look for the menu online and I will try and decide what I want to do.
00:57So coming in here, it was a new experience to try and properly give, you know, trust the kitchen.
01:04But I enjoyed it and enjoyed it.
01:06Have you found that people, once they relax-
01:08Like that's the whole idea, though.
01:09We're trying to get people in without seeing our menus.
01:11We want them to trust us and then just kind of trust our instant.
01:13And then we just kind of just come in and then have to be an experience.
01:16Like usually people just go into the menu, go to the website and look at the menu before they're going in.
01:20And before the menu, they cannot actually go get some food.
01:23I did that myself.
01:24Yeah.
01:25But like we're just trying to change everybody's mentality, just kind of go into a place, get some food and look at the menu and trust ourselves.
01:30It's good.
01:31So yeah.
01:32What about Glasgow?
01:33In terms of places that you've found here, places that you enjoy, what keeps you excited about living here?
01:40What's it all about?
01:41What's Mo Do's Glasgow?
01:42Mo Do's Glasgow is not excited, if I'm being honest.
01:45Because like I'm mostly in work or if I'm not in work, I'm in home with my friends and that.
01:49I don't actually go out, eat a lot.
01:51I'm like literally staying home with the boys and then just cooking all that stuff.
01:55But yeah, I'm not like an old guy getting some food and stuff.
01:57Yeah.
01:58I don't know once in a while.
01:59The city itself.
02:00The city itself, I mean, it's amazing.
02:02Glasgow's like home, second home for me.
02:03Yeah.
02:04Like I've been here for 10 years now.
02:05So yeah, like I get used to it.
02:07I love the people, I love the environment, all that stuff.
02:10So like, it's good.
