What is Glasgow cuisine? We ask people on Argyle Street

We ask the people of Glasgow what their local cuisine means to them.

00:00So we are on our Giles Street today to find out what food reminds people of Glasgow.

00:05Traditionally this may be dishes such as square sausage or haggis or even iron brood

00:10or it could also be a restaurant somewhere they like to go and spend time that reminds them of their city.

00:16Somewhere they would recommend for someone visiting Glasgow to get this full experience.

00:21I like Chinese and things like that so I'd say like the whole Wong or the Regent Brasserie are that.

00:28Oh well, square sausage, potato scones, clotted dumpling, steak pie.

00:35In fact I'm from Tunisia, North Africa. I'm English language teacher.

00:38I'm here in Scotland visiting the country. I appreciate it. I like it. The people are very friendly.

00:44Most of the Italian place in Glasgow are pretty good. Pretty good.

00:48There's a lot of respect. Amazing country. Lovely weather. I'm lucky.

00:53I really don't eat out a lot now because it's so expensive now. So it's just occasional now that we do eat out.

01:00And I can tell Scottish food too is delicious, amazing and you have a variety of food, a variety of choices.

01:09And from here, from Glasgow, hello guys, come and visit Glasgow. It's amazing.

01:15Empire biscuits. I don't know if that's actually Glasgow but Empire biscuits.

01:20Sausage obviously. Sausage rolls for Greggs and things like that.

01:25Fern cakes. Cherry cake. That's not stuff I've made.

01:31I could have lived in Canada for years so I had to make it all over there because you couldn't get it.

01:34Oh really? Aye.

01:35Mince and potatoes. Mince and potatoes.

01:38Fish and chips. Italian food, pizza.

01:43There's a standard sort of way of making mince and tortillas as we call it in Glasgow.

01:48And what does it involve?

01:50Just take the fat off the mince. Make sure there's no fat in it.

01:54Cook it slightly. Put your vegetables in it. Carrots and onions and water.

01:59And simmer it for how long? And salt to taste.

02:03Steak pie. Mince and tortillas. Things like that.

02:07Sausage and mash. Things like that.

02:11You would give fish and chips. That's the kind of thing you've got.

02:14And what was your favourite?

02:15Well my favourite would probably be the fish and chips I would think.

02:18What is it about food that kind of gives it that Glaswegian edge?

02:23There's nothing like it anywhere else.

02:26My family are just doted on dumpling and potato scones.

02:31I had to make them by the dozens at a time.

02:34Like a potato scone, you know, factory.

02:38Going through and freezing them all.

02:40You just can't get them anywhere else.

02:44In the 60s we used to go down to Dorset and camping.

02:49You couldn't get potato scones. You couldn't get iron brew. There's another one.

02:53You couldn't get iron brew. You couldn't get anything.

02:56Especially square sausage, right? That's a Scottish thing.
