Fried fish is one of the most delicious, simple dinners

you can make for yourself.

And when you're frying it in matzah, even better.

The matzah gets really crispy,

like extra crispy somehow on the outside.

We are gonna use it here as the substitute

for a panko bread crumb.

I really love the matzah for that fine ground,

extra toasty flavor that it brings.

You can fry any thin white fish you like.

I'm using flounder today.

I firmly believe that when you are breading anything,

you should absolutely salt the thing

Another thing that's gonna really help you out

It is long enough and it is heavy-duty enough

And the last thing that you're gonna want to make sure

that you have is a metal sheet pan

with a wire rack sat inside of it right next to the oil

so that once your fish is fried,

it can go right on there to drain.

So we're at 350 degrees right now on the thermometer,

which means we're ready to go.

When you lay it in, you are gonna lay it in away from you

so that if any oil splashes, it goes that way.

We're gonna go for two minutes about on each side

just until it's golden brown underneath.
