Focaccia has quickly become one of Australia’s favourite breakfast foods. The savoury Italian dish has become a staple of Ain’t Nonna’s in Wollongong, who say they make one of “the best” focaccia around.

00:00The focaccia has quickly become one of the nation's favourite cafe breakfast menu items.

00:05So what makes a perfect focaccia?

00:07And why are we all so obsessed with this Italian flatbread breakfast staple?

00:11Staff at Wollongong's Aint Nonna's Cafe say they've cracked the secret to baking the best

00:15focaccia in Australia.

00:16So we make the base dough, which is pretty basic, just flour, water, yeast, olive oil.

00:24We knead it together, and then it kind of just rests, and it's a mixture of resting

00:28and folding throughout the 48-hour time period.

00:33So it has time to develop structure, flavour, and obviously that airiness that we all love.

00:41The restaurant takes a laid-back approach to topping their focaccias, deciding what

00:44to do on the day.

00:45I don't know whether it's seasonal.

00:46Oh yeah, that's the biggest thing about Aint Nonna's, like, what's seasonal, and that we

00:50just utilise what's available with markets, what's cheap, affordable, and then we just

00:56go from there.

00:57And Rob just, like, looks at a fridge, okay, we'll use that up.

01:00Yeah, people do love it.

01:02It's been a slow burn, but it's definitely picking up traction, which is great.

01:06I think that culture of having the full breakfast with your poached eggs and all that other

01:11stuff, and we're offering, like, an Italian-style bakery, so just, like, getting that style

01:16of food across has been a little bit of a burn, but once they get it and they love it,

01:20it's like, alright.

01:21Aint Nonna's makes around five topped focaccias a day, and six un-topped for their dinner

01:25services.

01:26So un-topped for our dinner menu, your plunged dinner menu, I'll get, so that's kind of our

01:31operation on there.
