This comforting zucchini dish is bound to make it into your weekly dinner rotation. In this video, Chloe makes the perfect vegetarian meal with this baked recipe for zucchini “ravioli”. A rich tomato sauce and fennel seeds give the zucchini ravioli a meaty taste without the meat.

00:00These zucchini ravioli are the perfect end of summer meal I'll be making well into fall.
00:04You start by zhuzhing up some store-bought tomato sauce with garlic, fennel seeds, and crushed red
00:08pepper. Let all those flavors meld, add a little balsamic at the end, and then reserve some sauce
00:13for later. Peel zucchini into ribbons. Then the ravioli filling is mainly spinach, ricotta, basil,
00:18lots of lemon zest, fresh garlic, and parm. It's so bright and creamy. Then these little
00:22raviolis fill up like perfect pockets and they get nestled into the tomato sauce.
00:26Spoon that saved sauce on top and add some parm. Then put this in the oven to get all hot and
00:31melted. When it comes out, add a little salt and some fresh basil on top. That lemon ricotta
00:36filling is perfect and these are so fun to eat. It's a perfect dinner. This is delicious.
