Making bitter orange blossom jam has many points to consider; try to do all the steps carefully. Point 1: After boiling the bitter orange blossoms, drain them and let them bitterness disappears. Point 2: Keep one cup of the drained water to mix with sugar and water. Point 3: Once the sugar has dissolved, add the cooked bitter orange blossoms and let the jam simmer very gently for five hours. Point 4: Five minutes before turning off the heat, add lemon juice to prevent crystallization. Point 5: When you remove the jam from the heat, let it rest with the pot lid closed until tomorrow so that its color darkens.
