Olivia Duffin, owner and creator of Duff's Ice Cream,  which is opening a new shop in the Newcastle suburb of Wickham, answers the 'tough questions' about her business and ice cream.

00:04What do you make? I make handmade artisan premium style ice cream. What is the key ingredient?

00:12Always fresh milk, cream and quality ingredients sprouts that we make always by hand.

00:19How many flavors will you make? We'll do rotational so we'll do seven every season

00:24and we'll also have a bunch of other take-home tubs that might be in different flavors too.

00:28What is your personal favorite? Oh I change all the time but I think at the moment Chinese five

00:34spice with lemon curd swirl has been the favorite that I've made. What's the most popular flavor

00:39with your customers? Sea salt vanilla for sure. Cup or cone? Cone because then you're in the

00:46moment you have to lick it before it melts. What is the best ice cream you've ever tasted?

00:51Recently I went to Italy and I had the most incredible gelato there it was actually a

01:01Duff? I actually named it after my dad he passed away in 2020 just before COVID and he was called

01:07Duff it's also my last name so a bit of a combination of the two. Does your cat eat ice

01:13cream? She loves to lick up the drips of ice cream that I have at home so I have to stop it because

01:18I don't think cats are meant to have milk.
