I'm the owner of Fish Bar in Glasgow.

It trades out of the Dockyard Social in Finnistan.

Who did it all start?

I grew up in a seaside town and seafood was sort of everywhere.

And I sort of thought of it as the norm that everyone eats a lot of seafood.

But it's not really like that.

A lot of people aren't that used to it.

So it's an interesting way to think about food is where it comes from, really.

I wanted to move abroad.

I wanted to move to Canada.

So for that, I needed a job that would allow me to travel as much as possible.

So everywhere does food.

So if you learn to cook, it's very easy to travel.

And also restaurants will take you for three or four months,

just like a short season, and it won't be an issue.

So it's a great job for people who want to travel.

So did you go to Canada?

I did, yeah.

Four years, yeah.

So what brought you back?

My visa expired.

So I had to come back.

I would love to go back one day and I probably will.

So the Dockyard Social is a street food venue

that also has a bar and does events and weddings and things.

It's a startup that likes to help other startups.

All the food in here is independently owned.

And it's independent traders doing small businesses starting up.

So it's a great place for people who would have no chance of

building a business and being successful outside of here, really.

A food truck costs 20 grand and I haven't got 20 grand,

but I can pay my rent here at the Dockyard, no problem.

People who want to do things their own way

and don't want to bother with investors and wouldn't be able to get investors

because it's not an easy time to have a food business right now.

It's very scary.

Food is an expression of joy and an expression of love to people that you don't know.

Everyone has to eat, but you don't have to eat well.

You make the choice to eat well if you're going to do that day.

So it's a good line of the practical, the logical,

the organization, but also the creative in that,

yes, you can have something simple, something uninteresting,

but you can choose to eat really well that day

and that's a decision that will have impacts on your whole day and maybe the next day as well.
