00:31 We called in, sat literally in the parking lot

00:33 for an hour and a half waiting.

00:35 Didn't drop name, didn't do anything, just pure pizza game.

00:39 A place like this, you've got to give it a shot.

00:41 Now, it's wood fired, which to me generally

00:43 means we're going to have some flop on it.

00:46 See what we got.

00:47 All the chefs came up.

00:49 This guy's a mad scientist.

00:50 He can cook it.

00:51 But it does look wood fired to me, which isn't always

00:55 my favorite style.

00:56 Let's say wood fired is like a pretty close relative

00:59 to Neapolitan for me, meaning thin, flop.

01:36 For me, it's definitely not my favorite style

01:39 because I knew it wood fired.

01:41 You can't get real great crisp with wood fired.

01:43 Having said that, you can tell the oils, the sauces,

01:50 everything's super fresh, great.

01:52 it is really good.

01:59 Also surprising because wood fire is quick in the oven.

02:23 7.6, which is actually a monster score for this size of pizza.

02:34 For this style, I mean, it probably is high you can get,

02:37 but the taste really is spectacular on it.

02:40 Again, if you can't hear the crunch in Guatemala,

02:44 you're not going to get that high seven, low eight range.

02:47 For me, it's just not.

02:48 So this is really, really good.
