North Cotabato is making a joke that she's smiling at them.
00:04
She's really smiling at the sweet sugar that came from the coconut.
00:11
From the coconut?
00:12
Yes.
00:13
And not only the sweetness, but also the way they distribute their products.
00:17
That's the story of Yvonne Aquino.
00:20
The coconut flowers are not just decoration, but also a part of their lives.
00:27
It's being washed every day in North Cotabato.
00:30
And the flowers are being cut to get the juice that will make the sweet sugar.
00:35
Why not coconut?
00:37
Coconut sugar is from the coconut fibers or juice of the coconut flowers.
00:48
In 2020, Marjorie Floresca started the industry in making coconut sugar in their province.
00:54
We thought of this because someone rented our farm.
00:58
Their farm is making coconut sugar.
01:01
But they didn't finish their farm, they dropped it.
01:06
We continued because the people are poor, they didn't leave the farm.
01:13
Marjorie has more than 500 coconut trees.
01:16
That's why they don't seem to run out of sugar every day.
01:21
This is how sap is collected from the trees.
01:24
It should be consistent.
01:26
Sap collectors should collect sap for 3 to 4 hours.
01:30
The time of collecting sap cannot be changed.
01:33
And they should cook it quickly to make sugar because its taste will change.
01:38
The second is heat evaporation.
01:40
It should be cooked for 3 to 4 hours to remove its water.
01:47
Until it becomes syrup.
01:49
The third is syrup.
01:51
It should be brownish or golden yellow.
01:54
The fourth is caramelization.
01:57
It should be sticky and sweet.
02:00
The fifth is granulation.
02:03
The granules should be the caramel or syrup.
02:09
The sixth is sieving.
02:11
You should separate the granules and the powder.
02:19
We bring the powder to the oven for drying.
02:22
The whole process of making sugar is almost done.
02:30
They sell it for 300 to 350 pesos.
02:34
We sell coconut sugar in pastalubong centers.
02:39
We have walk-in buyers and resellers.
02:44
You should know that coconut sugar is made from coconut milk.
02:49
Coconut sugar is a form of sugar sweetened coming from coconut.
02:54
The benefit of coconut sugar is that it's lesser in glycemic index.
02:58
Hence, it's a healthier option as opposed to the white and table sugar.
03:03
Also, it's beneficial for the heart because coconuts are known to have less hypertension.
03:09
But even though it's beneficial for health, it should be consumed slowly.
03:14
The minimum amount is 3 teaspoons.
03:17
Maximum is 6 teaspoons a day.
03:20
Coconut sugar can be used like sugar,
03:24
to sweeten brownies, cookies, cakes, and drinks like coffee.
03:29
Different types of sugar can be used to sweeten and help with our health.
