How To Make Samosa | Lucknow Style Samosa | Gupta Ji Samosa

Timing - 4 P.M. To 11 P.M.

Ingredients:

2 cups all-purpose flour
4 tablespoons vegetable oil
1 teaspoon salt
1 cup boiled and mashed potatoes
1/2 cup green peas
1/2 teaspoon cumin seeds
1/2 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon garam masala
Salt to taste
Vegetable oil for deep frying
Instructions:

In a mixing bowl, combine the all-purpose flour, 4 tablespoons of vegetable oil, and 1 teaspoon of salt. Mix well.
Gradually add water and knead the dough until it becomes smooth and firm. Cover the dough and let it rest for 15-20 minutes.
In a separate pan, heat some oil and add cumin seeds. Let them splutter.
Add ginger-garlic paste and sauté for a minute until fragrant.
Add mashed potatoes, green peas, turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for a few minutes. Remove from heat and let the filling cool down.
Divide the dough into small balls and roll each ball into a thin circle.
Cut the circle in half. Take one semicircle and fold it into a cone shape, overlapping the straight edges.
Fill the cone with the potato filling and seal the open edge with a little water to form a triangular pocket.
Repeat the process for the remaining dough and filling.
Heat oil in a deep pan or kadai for frying. Once the oil is hot, carefully drop a few samosas into the oil.
Fry the samosas on medium heat until they turn golden brown and crisp.
Remove the samosas from the oil and drain excess oil on a kitchen paper towel.
Serve the hot samosas with chutney or ketchup.
