00:10 And today I have with me Julia, our executive pastry chef.
00:14 Hello.
00:15 We're going to focus today on troubleshooting some of the key problems in baking cupcakes
00:20 and cakes.
00:22 And the first problem that we're going to troubleshoot is my cake sticks to my pan when
00:28 I'm ready to de-pan it.
00:31 So to prevent sticking from your pan for your cakes, you're going to actually do two things.
00:39 And most recipes will only tell you one.
00:42 They'll tell you either to spray the pan with some kind of non-stick spray, or sometimes
00:48 they do say to line it with parchment paper.
00:51 But what we found is the perfect way to de-pan your baked cakes is to do both.
00:58 So we are going to first start with the parchment paper to line the bottom of your cake pan.
01:05 To do that, we're going to use a pencil and circle around the bottom of your cake pan.
01:13 And then Julia is going to go ahead and cut a perfect cylinder there that will fit right
01:17 in the center.
01:18 Excellent.
01:19 Okay.
01:20 And when we are done with placing the circle in the bottom, we're going to add the non-stick
01:31 spray to just the sides of the baking pan.
01:35 So again, this is for baking your cakes, lining with parchment paper, and spraying with the
01:42 non-stick spray.
01:43 This goes right inside.
01:44 It should fit perfectly.
01:45 This technique will work with any shape of a cake pan, like a hard square, flower, anything.
01:50 Once it's in, you just take this and right at the angle, spray along the sides like that.

02:02 So that looks perfect then for pouring our batter into.
02:05 Perfect indeed.
02:06 So let's show then, Julia, the difference of if we didn't do both of those steps.
02:11 So what's the first example you have?
02:13 This here is spray only.
02:15 Okay.
02:16 So there's nothing on the bottom.
02:17 We only sprayed the pan.
02:19 It might come out okay.
02:22 Some batters won't, but this one you can see it's really stuck to the bottom.
02:27 I'm using my spatula to pretty forcefully pull it out.
02:31 And here it comes.
02:32 Okay.
02:33 Likely we'll have some cake left on the bottom of the pan, right?
02:36 Yeah, still intact, but still not ideal.
02:38 Okay.
02:39 Not for the kind of cakes you would want.
02:41 So let's look at parchment paper only.
02:44 Okay.
02:45 So here's an example of parchment paper.
02:47 It's definitely stuck to the sides.
02:49 It's baked on.
02:51 So in order to remove it, I'm going to put my spatula around the edge, but this also
02:56 is not ideal.
02:57 Like you don't want to have to do this consistently because you're working with metal, could get
03:03 shards in there.
03:04 It's just less desirable.
03:06 It does come right out from the bottom.
03:08 Okay.
03:09 So the bottom is perfect.
03:10 You don't want the sides then that start crumbly.
03:12 Yeah.
03:13 You don't want this extra.
03:15 All right.
03:16 And then now let's take a look at an example with no paper and no spray.
03:21 Yeah.
03:22 Can we even get that cake out of there, Joya?
03:23 Let's take a try.
03:24 Okay.
03:25 I am going to try and run this around the edge.
03:27 I can tell it's super baked on there.
03:29 Okay.
03:30 Now keep in mind when you are applying the spray to the sides of the pan, you're going
03:33 to spray all the way up because as the cake bakes, it's going to rise.
03:37 So you don't want to have just the lower part of your pan sprayed and not the upper portion.
03:42 All right.
03:43 Well, we can go ahead and take a look at this.
03:46 And oh my goodness, we even broke it trying to get it out of there.
03:48 Yeah.
03:49 And I've de-panned a lot of cakes.
03:50 So you can tell it is torn in the bottom.
03:53 I know my mom would put a little frosting in there and push it together.
03:57 But not ideal.
03:58 Overall, it's just a lower quality of cake than what's desirable.
04:02 This is fully caked on.
04:04 You have a ton of dishes.
04:05 No bueno.
04:06 Okay.
04:07 So now the perfect cake.
04:08 Let's take a look at the parchment paper and the spray combination.
04:12 Right.
04:13 And you still want to run your spatula around the side, but this is, I'm not even undoing
04:18 anything.
04:19 It's just floating around like perfect.
04:20 Okay.
04:21 I don't have to do anything.
04:22 You're not cutting into the cake?
04:23 No, not at all.
04:24 It just comes right out.
04:25 Oh, look at the sides of that.
04:27 And look at that pan.
04:28 A little soap and water.
04:30 You're done.
